I always think that during the summer I’m going to have so much more time to make spectacular dinners. It always fails to happen though. I sometimes think that it’s actually worse than during the school year. Since I work from home you think it’d be a snap but we are always doing something during the day. Whether it’s hanging at the pool, beach, park, or some other fun place with the kids trying to burn off some of their energy I’m always worn out when we’re done. That means dinner is the last thing I want to have to face. Luckily for me, I can hit one of the two Jewel-Osco stores in town and grab a chicken signature meal deal with a Coca-Cola™ product from the deli. Even better, you can currently complete the meal with a 64 oz. Gold Peak® Tea. After a hot day out with the kids an easy meal like my 30 minute Chicken Parmesan Sliders and some ice-cold Gold Peak Tea is the perfect way to refuel my family.

30 Minute Chicken Parmesan Sliders

Jewel-Osco offers up a variety of chicken signature meal deals. They make an easy and inexpensive meal to feed the whole crew. They also make great shortcuts to creating other meals at home.

30 Minute Chicken Parmesan Sliders

Being a tea drinker I am so happy that I can now add a 64 oz. Gold Peak Tea to my chicken meal. On a hot and humid day a nice cold iced tea hits the spot like nothing else in my opinion.

30 Minute Chicken Parmesan Sliders

My favorite Jewel-Osco chicken signature meal deal to get is the family one with the rotisserie chicken. You get two sides, a four pack of rolls, a rotisserie chicken and a Coca-Cola product. Shred the chicken and you can turn it into so many easy meals. Meals like these 30 Minute Chicken Parmesan Sliders.

30 Minute Chicken Parmesan Sliders

With just a few extra ingredients you can have a delicious meal that’s quick, easy and most of all delicious and flavorful.

30 Minute Chicken Parmesan Sliders

To make the sliders you just slice the dinner rolls in half.

30 Minute Chicken Parmesan Sliders

Top with the shredded chicken.

30 Minute Chicken Parmesan Sliders

Spoon your favorite marinara sauce on the chicken.

30 Minute Chicken Parmesan Sliders

Sprinkle with mozzarella cheese for some gooey goodness.

30 Minute Chicken Parmesan Sliders

Place the top of the dinner rolls back on.

30 Minute Chicken Parmesan Sliders

Whisk together your flavored butter goodness.

30 Minute Chicken Parmesan Sliders

Top the dinner rolls with the buttery concoction. You can just pour it over or brush it on if your neurotic like me.

30 Minute Chicken Parmesan Sliders

Finally, you just cover with foil, let sit, bake, eat and enjoy your not so hard work.

Savory Sun Dried Tomato Scones

by Jennifer Wieland
Savory Sun Dried Tomato Scones

I am a self-proclaimed anglophile. I have great dreams of visiting the U.K. for an extended period at some point in my life. I love the culture, the style, the history and the great details they place on food and entertaining. I think tea time is something that should be embraced here in the United States. The whole idea of taking some time out of your day to visit and enjoy a nice cuppa  with some biscuits, scones and finger sandwiches is utterly delightful to me! As such, I am a huge tea drinker and scone fan. I’ll pop into places to grab a tea and scone but I generally only find sweet scones near my house. Surprise, surprise, I’m not always in the mood for something sweet. Sometimes, I have a hankering for the savory side of foods instead. That’s why these Savory Sun Dried Tomato Scones are an absolute favorite of mine.

Savory Sun Dried Tomato Scones

My Savory Sun Dried Tomato Scones are a true treat when served warm and slathered with some Irish butter. While the sun-dried tomatoes to provide a bit of sweetness the addition of garlic powder, onion powder, chives and parmesan cheese into the dough definitely make these into a delicious, savory treat.

Savory Sun Dried Tomato Scones

The dough for these scones comes together very easily. It’s so easy in fact, that you’ll wonder why you haven’t been making scones for years.

Savory Sun Dried Tomato Scones

I personally don’t own a scone pan. I find it easy to just form the dough into a circle that I’ve patted flat using my hands.

Savory Sun Dried Tomato Scones

Once you have the dough circle you can just take a sharp knife and cut the circle into eighths. Just like you would cut a pie, cake or pizza.

Savory Sun Dried Tomato Scones

After that you just need to place the sliced scones on a prepared pan and let them set for 20-30 minutes.

Savory Sun Dried Tomato Scones

Once the scones have sat you just need to bake them to a beautiful, golden perfection.

Savory Sun Dried Tomato Scones
Serves 8
These savory scones make for a delicious treat to enjoy for breakfast, at your next brunch or with a cup of tea.

Margarita Cupcakes – a Sweet Treat Inspired by a Tasty Drink

by Jennifer Wieland
Margarita Cupcakes - Cupcakes meet a classic cocktail

Cinco de Mayo is a heading our way fast! This year you can take your Cinco de Mayo dinner, party or celebration to the ultimate level with Margarita Cupcakes. My Margarita Cupcakes recipe is inspired by my favorite Mexican drink, the Margarita. Each cupcake is packed full of the Margarita flavors you love without the worry of spilling or getting tipsy.

Margarita Cupcakes - Cupcakes meet a classic cocktail

The Best Type of Margarita…

I think it’s safe to say tat I m not the only person who loves going out with her friends or spouse and enjoying a delicious Margarita or two. I’m always a frozen Margarita kind of girl. The potential for brain freeze is a great way to keep me from drinking to quickly. My best friend is the complete opposite of me and likes her Margaritas on the rocks instead. One thing both of us always agree on is eating my Margarita Cupcakes.

Margarita Cupcakes - Cupcakes meet a classic cocktail

Make These Margarita Cupcakes as Unique as You …

Margarita Cupcakes take the boring everyday cake mix and make it extraordinary with the sweet taste of Margarita mix in both the cake batter and frosting. The finishing touch that really knocks these cupcakes out of the park is the sprinkling of sea salt and lime zest.

To make the cupcakes and frosting you can use your favorite homemade or store-bought Margarita mix. You can have it with or without the tequila too. It’s totally up to you but the liquor will bake out in the cake. Take the cupcakes to the next level by adding in a fruit extract to the frosting or chopped up fruit to the cake batter.

by Jennifer Wieland
Ginger Bark is a simple 2 ingredient candy treat that is utterly delicious and giftable! #candy #holidays #Christmas #recipe #ediblegift #quickandeasy

While baking for my family Christmas party this the other day I decided to make something new. Everyone knows all about Peppermint Bark. Chocolate and crushed up candy canes combined to make a cool, creamy holiday treat. The problem I have with that though is that it’s been done to death and you don’t want to show up somewhere that already has 5 variations of the stuff. so if you’re over peppermint or it isn’t your holiday flavor of choice and if you’re the one always eating the gingerbread cookies at holiday parties then I have got the perfect holiday treat to make for you! This treat is going to have you standing out in the edible, homemade gift giving department this year! When I made it my daughter and I kept munching on it and when I brought it to my family Christmas party it received rave reviews from everyone. The white chocolate and the crispy ginger cookies are such a perfect pairing.

Wayfair Battle of the Pies – No Bake Caramel Apple Mini Pies

by Jennifer Wieland
Wayfair Battle of the Pies - No Bake Caramel Apple Mini Pies

Wayfair Battle of the Pies - No Bake Caramel Apple Mini Pies

I love the smells and tastes of fall and nothing brings those flavors and smells together like Thanksgiving. With all of the prep and cooking that goes into the perfect Thanksgiving meal it’s nice to have some things that don’t need to take up valuable oven space. It’s also nice when you can get all hands on deck and have the kids help with making some of the food. That’s what makes my entry into the second annual Wayfair Battle of the Pies entry perfect! My No Bake Caramel Apple Mini Pies are an easy dessert that can be made ahead of time and simple enough for the kids to make with supervision.

Wayfair Battle of the Pies - No Bake Caramel Apple Mini Pies

These No Bake Caramel Apple Mini Pies are fun, tasty and so much lighter than some more traditional Thanksgiving pies. After such a large meal it’s nice to have a lighter dessert choice.

Wayfair Battle of the Pies - No Bake Caramel Apple Mini Pies

This recipe is easy to put together especially if you get store-bought mini graham cracker pie crusts in tins. If you wanted to make your own graham cracker crusts you could and just use these Mini Pie Dishes that you can find on the Wayfair.com website.

Wayfair Battle of the Pies - No Bake Caramel Apple Mini Pies

Since my  two youngest kids are all about helping me bake and cook in the kitchen I like coming up with recipes that they can do the bulk or all of the work. They love being able to tell people they made something! They really like recipes where they get to whisk. I guess there’s just something fun and exciting about going as fast as you can with a mixing bowl, some ingredients and a tool that looks like a balloon. I’ve found over the years that getting my kids mini or kid sized tools makes it easier for little hands to help.

Wayfair Battle of the Pies - No Bake Caramel Apple Mini Pies

To take my No Bake Caramel Apple Mini Pies to a whole other level of fun and to give the kids yet another fun project to work on, I purchased some disposable appetizer forks. I then picked up some Washi Tape in a fall color. We then wrapped the handles of the forks in the Washi Tape and then put the forks into the center of the No Bake Caramel Apple Pies so that they look like sticks. This really plays up the whole caramel apple take on these mini pies.

by Jennifer Wieland
Hamilton Beach Rice & Hot Cereal Cooker in Stainless Steel - Slow Cooker Mexican Rice Recipe
Thank you to Hamilton Beach for sponsoring today’s post! All thoughts and opinions are 100% my own.

Just a handful of weeks ago I couldn’t wait for the kids to be back in school! I had been counting down the days until I had some peace and quiet around the house to get work done and to just have some quiet me time. Now though activities are kicking in as well as homework for the kids and the tons of travel I have done in the last five weeks with the family (Hello, three out of five weeks of living in close quarters.) and I just have been struggling to get back into the school year routine. That means I have been on the hunt to find things to make dinner time easier on me because scrambling for a good breakfast, ordering in or picking up carry out is just cutting way to into the budget and causing too much stress. As a Hamilton Beach ambassador I was so happy to receive the Hamilton Beach Rice & Hot Cereal Cooker in stainless steel. It’s been a lifesaver for breakfast and dinner! One of the favorite things I’ve been making is my Rice Cooker Mexican Rice recipe.

Hamilton Beach Rice & Hot Cereal Cooker in Stainless Steel

Prior to this I have never owned a rice cooker but I had been looking to buy one. I had no idea what I had been missing out on!  The Hamilton Beach Rice & Hot Cereal Cooker is so unbelievably versatile a good rice cooker could be. The Hamilton Beach Rice & Hot Cereal Cooker allows me to have hot cereals ready for breakfast when the family gets up. I’m also able to make a variety of rice, pasta and grains. What truly sets this rice cooker apart though is that it comes with a steamer basket. So while your cooking your rice, pasta or grains you can also steam vegetables, seafood and chicken. To take this rice and hot cereal cooker to the next level Hamilton Beach made sure to include both a delay start and warmer feature.

Super Simple Apple Cinnamon Roll Cake

by Jennifer Wieland
Super Simple Apple Cinnamon Roll Cake

I always have these ambitious ideas for the weekends. I’ll wake up early, clean house before everyone wakes up, make a grand breakfast and follow all of that up with some fun family time. The reality is though I wake up thanks to my internal alarm clock and I may or may not clean house a bit. Breakfast falls short and is usually just a quick trip to the donut shop for some sugar laden treats and usually after that I decide after spending all week with the kids that I need at least one afternoon for a break and stretch out errands to an ungodly amount of time. Don’t judge me! You know you have roamed the grocery or discount store for hours just to enjoy the alone time. This past Sunday though I did wake up early, clean some house, make a yummy breakfast and spend the afternoon with the family. My yummy breakfast ended up being much easier than I thought with this super simple apple cinnamon roll cake.

Super Simple Apple Cinnamon Roll Cake

While I do love elaborate baking I’m just like anyone else and I sometimes like to take shortcuts to create recipes. This Apple Cinnamon Roll Cake was so easy to make! All I needed was one tube of cinnamon rolls with icing and a can of apple pie filling.

Super Simple Apple Cinnamon Roll Cake

This is one of those awesome things to make that tastes great and is ready to pop in the oven in just minutes.

Once it’s out of the oven and cools for a minute or two you can ice it and enjoy it warm. I bet this would even make a great dessert if you topped it with some ice cream.

Super Simple Apple Cinnamon Roll Cake

This is the perfect breakfast for someone with a sweet tooth! It’s like cinnamon rolls meets apple pie meets a cake. Just what you need for those times you want something sweet but can’t decide between a few different things.
