Ingredients
  1. 1 Package of Simply Potatoes Diced Potatoes with Onion
  2. 1/2 a Lemon, juiced
  3. 4 tbsp. Olive Oil
  4. 1/2 tbsp. Dried Oregano
  5. Salt & Pepper to taste
Instructions
  1. In a bowl whisk together the lemon juice, olive oil, oregano, salt & pepper.
  2. Pour the liquids into a 12" skillet and turn the heat to medium.
  3. Pour the entire package of Simply Potatoes Diced Potatoes with Onion into the skillet.
  4. Stir to coat the potatoes with the liquid and cover with a lid.
  5. Stir/flip the potatoes every 3-4 minutes.
  6. Cook 12-15 minutes.

Being diagnosed as Diabetic earlier this year has sent me into a bit of a tailspin. As someone who loves sweets and baking I’ve been sort of at a loss. Before my diagnosis, I had tried low carb and cutting sugar from my diet. I always struggled staying on those types of diets for a few reasons. First, I hate being told I can’t have something. Childish, maybe. No willpower or self-control, possibly. It’s just that once I see a huge list of things I can’t eat those seem to be the things I crave the most. Second, I’m a girl who LOVES baking! That also means I’m tasting and trying a lot of sweets when developing recipes or just plain old eating sweets with friends and family. I have never found sweeteners that I could use instead of sugar that didn’t leave a funky aftertaste in my mouth. That has all changed for me now though. Recently, I was contacted by Steviva, a company specializing in sugar-free sweetener options. I’m not going to lie. I was very skeptical because hello, gross aftertaste. Then I started using some of the products they sent me and sauces tasted right and sweet treats tasted like, well sweet treats. My new fall favorite recipe I can enjoy with the Steviva products is my Sugar-Free Pumpkin Spice Frosted Blondies.

It even boasted a taste guarantee on the back. This had me intrigued. I decided to test the taste by making these Sugar-Free Pumpkin Spice Frosted Blondies. While pumpkin spice is a bold flavor combination even it can’t hide nasty sweeteners. I have to say I was amazed at how well the Fructevia delivered on it’s taste! These blondie sand the frosting were sweet without being overly sugary and had no nasty aftertaste.

To make these blondies I started out with fall favorites ingredients for the cookie bar base.

The dough for these blondies is thick and sticky. It also doesn’t spread out like most doughs do. To get it nicely in the pan I sprayed a large offset spatula with baking spray to get it spread out in the pan.

This frosting was a bit of challenge for me. Originally I had planned on doing an icing but in my first attempts at this recipe it did not turn out well. I then tested out this recipe for a more traditional frosting and it worked surprisingly well.

I chilled the frosted blondies to get the frosting to set nicely. I was then able to cute them into squares and enjoy.

For the Sugar-Free Pumpkin Spice Blondies
  1. 2 1/2 c. All Purpose Flour
  2. 1 tsp. Baking Soda
  3. 1/2 tsp. Baking Powder
  4. 1 1/2 tsp. Pumpkin Pie Spice
  5. 1/2 c. Salted Butter, softened
  6. 8 oz. Cream Cheese, softened
  7. 3/4 c. Fructevia
  8. 1 c. Pumpkin, canned
  9. 1 Egg
For the Sugar-Free Pumpkin Spice Frosting
  1. 1 c. Milk (I used whole milk.)
  2. 2 tbsp. All Purpose Flour
  3. 1/4 tsp. Corn Starch
  4. 1 c. Butter, softened
  5. 1 tsp. Vanilla Extract
  6. 1/2 tsp. Pumpkin Pie Spice
For the Sugar-Free Pumpkin Spice Blondies
  1. Preheat oven to 350° and grease a 9"x13" pan.
  2. Place the flour, baking soda, baking powder and pumpkin pie spice into a bowl and stir to combine.
  3. Cream together the butter and cream cheese in a large bowl with a mixer.
  4. Add in the Fructevia and mix to combine.
  5. Mix in the canned pumpkin.
  6. Stir in the egg.
  7. Scrape down the sides of the bowl.
  8. In small batches mix in the dry ingredients until combined.
  9. Spread the dough into the prepared pan.
  10. Bake for 20-25 minutes.
  11. Remove from oven and let cool completely.
For the Sugar-Free Pumpkin Spice Frosting
  1. Place the flour and cornstarch into a small saucepan.
  2. Over medium heat whisk the milk into the flour and corn starch.
  3. Heat until the mixture begins to boil while stirring.
  4. Lower the temperature some and continue whisking until the mixture thickens. It should be the consistency of paste.
  5. Pour the mixture into a bowl and let cool. You can cool it in the refrigerator for an hour or two if you don't want to wait but it must be completely cooled.
  6. In the bowl of a stand mixer fitted with the whisk attachment cream together the butter, sugar and vanilla on medium-high speed.
  7. Scrape down the sides and bottom of the bowl and then add in the cooled flour mixture.
  8. Beat on medium-high speed for 7-10 minutes. The longer you beat the mixture the creamier and fluffier it will become.
  9. Frost the cooled blondies.
Notes
  1. This dough is very thick and sticky. To spread it evenly in the pan you will want to use a greased spatula.

I am one of those people that loves her slow cooker. It just makes life so much easier. It’s a great way to throw some ingredients together and forget about it until it’s time to eat. It’s also a great way to make huge amounts of food for parties, holidays or sporting events. Since I was diagnosed as diabetic I have been watching my sugar and carb intake, trying to get a handle on my wildly out of control blood sugar levels. It’s amazing once you start focusing on labels while shopping. You realize that sugar is in almost everything in some way, shape or form. Sauces and dressings are a huge culprit of this. You quickly learn that many things need to go or you need to look into alternatives. Alternatives like making your own with alternatives to sugar. That’s just what I did with these slow cooker, sugar-free, pulled sesame teriyaki chicken sliders. I created my own sesame teriyaki sauce and soy ginger dressing to create this delicious meal.

To make both the teriyaki sauce and the soy ginger dressing I used a sugar alternative from the Steviva company as a replacement to honey. Steviva’s Nectevia Original blend is a great liquid sweetener that infuses organic blue agave nectar with premium 100% pure stevia extract. This combination creates a decadent, indulgent taste experience with only 1/4 the calories, carbs and sugars of regular agave, or table sugar.

To get this recipe going I first made some sugar-free sesame teriyaki sauce.

If you’ve never made your own teriyaki sauce it is unbelievably simple to do. It comes together in minutes and it’s also easy to customize with your own flavor choices.

Sometimes I forget to put a meal together for the slow cooker first thing in the morning. This recipe is perfect for those times. Since you are using boneless, skinless chicken breasts they cook much faster than a large piece of meat. On high, this cooks in a couple of hours.

Once the meat is fork tender you can take it out and shred it with two forks or use your stand mixer with the paddle attachment for some hands free shredding.

Toss the meat back into the slow cooker with the teriyaki sauce and stir to get the meat nice and saucy. Lower the slow cooker to the keep warm setting and eat when ready.

To make the sliders even more delicious I made a quick Asian slaw. It took only a few minutes to make a sugar-free ginger soy dressing. I once again used Steviva’s Nectevia Original in this recipe. I then tossed it with some coleslaw mix, shredded carrots, red pepper and green onion.

Let it hangout in the refrigerator for 10-15 minutes for the veggies to really grab up all the flavor of the dressing.

To give these sliders some heat I mixed mayonnaise and sriracha to make a sriracha mayo. You can easily make this as hot or as mild as you want. That bit of heat was a perfect pairing for the sweet and salty of the teriyaki and dressing.

Once everything was loaded onto some small rolls it was time to eat. All of the textures and flavors made this dish not only eye-catching but delicious as well.

For the Sugar-Free Sesame Teriyaki Sauce
  1. 1/2 c. Recued Sodium Soy Sauce
  2. 1/2 c. Water
  3. 2 tbsp. Nectevia Original
  4. 4 tbsp. Rice Vinegar
  5. 2 tbsp. Corn Starch
  6. 1 tbsp. Sesame Seeds
  7. 1/4 tsp. Ground Ginger
  8. 2 cloves Minced Garlic
  9. For the Sugar-Free Ginger Soy Dressing
  10. 1/4 c. Nectevia Original
  11. 1/4 c. Vegetable Oil
  12. 1/4 c. Rice Vinegar (I used unseasoned.)
  13. 1 tbsp. Reduced Sodium Soy Sauce
  14. 1 tsp. Sesame Oil
  15. 1/2 tsp. Sriracha Sauce
  16. 1/4 tsp. Ground Ginger
  17. 1 clove Minced Garlic
For the Asian Slaw
  1. 4 c. Bagged Coleslaw Blend
  2. 1 c. Shredded Carrots
  3. 1 Red Bell Pepper, sliced into very thin 2" long pieces.
  4. 2 green onions, finely sliced
  5. 3/4 c. Sugar-Free Ginger Soy Dressing
For the Sriracha Mayonnaise
  1. 1 c. Mayonnaise
  2. 1-2 tbsp. Sriracha Sauce (Use more or less for your heat preference.)
For the Slow Cooker, Sugar-Free Pulled Sesame Teriyaki Chicken Sliders
  1. 2 lbs. Boneless, Skinless Chicken Breasts
  2. 1/4 tsp. Black Pepper
  3. 1 - 11/4 c. Sugar-Free Sesame Teriyaki Sauce
  4. 2-3 tbsp. Water
  5. 12 Slider Buns or Dinner Rolls
  6. Asian Slaw
  7. Sriracha Mayonnaise
For the Sugar-Free Sesame Teriyaki Sauce
  1. Whisk all of the ingredients together into a saucepan.
  2. Heat over medium-high heat until the edges start to bubble.
  3. Lower the heat to medium and continue to whisk until sauce thickens.
  4. If the sauce gets to thick add some water to thin out.
For the Sugar-Free Ginger Soy Dressing
  1. Place all of the ingredients into a bowl and whisk together to combine. You can also place all of the ingredients into a jar with a lid and shake to combine.
For the Asian Slaw
  1. Place the coleslaw mix, shredded carrots, red bell pepper and green onions into a large bowl. Pour the sugar-free ginger soy dressing onto the vegetables and toss to coat.
  2. Chill in the refrigerator for 10-15 minutes to let the veggies absorb all of the flavor from the dressing.
For the Sriracha Mayonnaise
  1. In a bowl stir together the mayonnaise and Sriracha sauce.
For the Slow Cooker, Sugar-Free Pulled Sesame Teriyaki Chicken Sliders
  1. Place the chicken in the slow cooker.
  2. Season the chicken with black pepper and top with the sugar-free sesame teriyaki sauce and water if needed.
  3. Cover and cook on low for 4-5 hours or on high for 2-3 hours or until starting to fall apart when picked up with fork or tongs.
  4. Remove only the chicken from the slow cooker.
  5. Shred the chicken with two forks or in the bowl of your stand mixer fitted with the paddle attachment.
  6. Put the chicken back into the slow cooker with the sauce and stir to coat the meat.
  7. Lower the slow cooker to the warm setting.
  8. To assemble the sandwiches, slice rolls or open the slider buns and top each with some of the chicken and sauce. Next place some of the Asian slaw onto the meat. Spread the Sriracha mayonnaise onto the inside of the top of the bun. Place the top of the bun on the sandwich and enjoy.

I always think that during the summer I’m going to have so much more time to make spectacular dinners. It always fails to happen though.   3. Top the bottom the rolls with the shredded chicken, marinara sauce and shredded mozzarella cheese.
  4. Place the top of the rolls back on.
  5. Whisk together the olive oil, melted butter, parsley and garlic powder.
  6. Pour or brush the butter mixture over the top of the rolls in the pan.
  7. Cover the pan with foil and let sit for ten minutes.
  8. Place the pan in the preheated oven and bake for ten minutes or until the cheese is melted.

I am a self-proclaimed anglophile. I have great dreams of visiting the U.K. for an extended period at some point in my life. I love the culture, the style, the history and the great details they place on food and entertaining. I think tea time is something that should be embraced here in the United States. The whole idea of taking some time out of your day to visit and enjoy a nice cuppa  with some biscuits, scones and finger sandwiches is utterly delightful to me! As such, I am a huge tea drinker and scone fan. I’ll pop into places to grab a tea and scone but I generally only find sweet scones near my house. Surprise, surprise, I’m not always in the mood for something sweet. Sometimes, I have a hankering for the savory side of foods instead. That’s why these Savory Sun Dried Tomato Scones are an absolute favorite of mine.

My Savory Sun Dried Tomato Scones are a true treat when served warm and slathered with some Irish butter. While the sun-dried tomatoes to provide a bit of sweetness the addition of garlic powder, onion powder, chives and parmesan cheese into the dough definitely make these into a delicious, savory treat.

The dough for these scones comes together very easily. It’s so easy in fact, that you’ll wonder why you haven’t been making scones for years.

I personally don’t own a scone pan click to find out more. I find it easy to just form the dough into a circle that I’ve patted flat using my hands.

Once you have the dough circle you can just take a sharp knife and cut the circle into eighths. Just like you would cut a pie, cake or pizza.

After that you just need to place the sliced scones on a prepared pan and let them set for 20-30 minutes.

Ingredients
  1. 2 1/2 c. All-purpose flour
  2. 1 tbsp. Sugar
  3. 2 1/2 tsp. Baking powder
  4. 1/4 tsp. Garlic powder
  5. 1/2 c. Butter, cold and cubed
  6. 1 tbsp. Chives, chopped
  7. 1/4 c. Sun-dried tomatoes, finely diced
  8. 3/4 c. Milk
  9. 1 lg. Egg
  10. 1 tbsp. Olive oil
Instructions
  1. Preheat oven to 400ᴼ and line a baking sheet with parchment paper or a silicone liner.
  2. Place the flour, sugar, baking powder, onion powder and garlic powder in a large bowl and stir together.
  3. Cut the cold butter into the dry ingredients using a pastry blender until the ingredients start to look like coarse crumbs and there are no longer large chunks of butter.
  4. Stir in the chives, sun-dried tomatoes and cheese.
  5. Whisk together the milk, egg and olive oil and then add to the dry mix. Stir until it starts to come together and then using your hands if necessary finish mixing the ingredients together.
  6. Shape the dough into a flattened circle and then cut into eight wedges. Place each of the wedges on the lined baking sheet leaving a few inches in between each one.
  7. Let the scones rest for 20-30 minutes before baking.
  8. Bake in the oven for 20-25 minutes. Carefully remove the scones from the pan and place them on a cooling rack.
  9. Serve the scones while they are still warm with butter.
Notes
  1. You can also blend the ingredients in a food processor if that is easier for you just be sure not to over blend.

I think it’s safe to say tat I m not the only person who loves going out with her friends or spouse and enjoying a delicious Margarita or two. I’m always a frozen Margarita kind of girl. The potential for brain freeze is a great way to keep me from drinking to quickly. My best friend is the complete opposite of me and likes her Margaritas on the rocks instead. One thing both of us always agree on is eating my Margarita Cupcakes.

Make These Margarita Cupcakes as Unique as You …

Margarita Cupcakes take the boring everyday cake mix and make it extraordinary with the sweet taste of Margarita mix in both the cake batter and frosting. The finishing touch that really knocks these cupcakes out of the park is the sprinkling of sea salt and lime zest.

To make the cupcakes and frosting you can use your favorite homemade or store-bought Margarita mix. You can have it with or without the tequila too. It’s totally up to you but the liquor will bake out in the cake. Take the cupcakes to the next level by adding in a fruit extract to the frosting or chopped up fruit to the cake batter.

For the Cupcakes
  1. 1 15.25 oz. white cake mix
  2. 1/3 c. butter, melted
  3. 1 c. margarita mix
  4. 3 large egg whites
  5. Zest of half a lime
For the Margarita Buttercream Frosting
  1. 1 c. butter, softened
  2. Zest of half a lime
  3. 4 c. confectioner's sugar
  4. 2 tbps. margarita mix
  5. 1-2 tbps. heavy whipping cream
For the Margarita Cupcakes
  1. Preheat oven to 350°.
  2. Line cupcake pan with liners.
  3. In a large mixing bowl mix all of the cupcake ingredients together with a mixer for 30 seconds, or until just combined. Increase the speed to medium and mix the batter for two minutes.
  4. Scoop the mix into the cupcake liners in the prepared pans until 2/3 of the way filled.
  5. Bake the cupcakes for 18 to 23 minutes or until done.
  6. Let the cupcakes cool completely before frosting.
For the Margarita Buttercream Frosting
  1. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and lime zest until light and fluffy.
  2. Slowly add the confectioner's sugar in several batches. Mix each batch on low until just combined.Scraping down the sides of the bowl after each addition of confectioner's sugar.
  3. Add 2 tablespoons of margarita mix and 1 tablespoon heavy whipping cream. Turn the mixer on low.
  4. Once the liquid is incorporated, turn the mixer to medium-high. Continue to mix for 10 minutes until the frosting is nice and fluffy. If the frosting seems too stiff, add the remaining tablespoon of heavy whipping cream and mix for a few more minutes.​
Notes
  1. Once the cupcakes are frosted, sprinkle the tops with a pinch of sea salt and lime zest for the perfect finishing touch.

While baking for my family Christmas party this the other day I decided to make something new. Everyone knows all about Peppermint Bark. Chocolate and crushed up candy canes combined to make a cool, creamy holiday treat. The problem I have with that though is that it’s been done to death and you don’t want to show up somewhere that already has 5 variations of the stuff. so if you’re over peppermint or it isn’t your holiday flavor of choice and if you’re the one always eating the gingerbread cookies at holiday parties then I have got the perfect holiday treat to make for you! This treat is going to have you standing out in the edible, homemade gift giving department this year! Ginger Bark is going to become one of your favorite go-to holiday treats to make!

I know exactly what you’re thinking, Ginger Bark, what on Earth us that? Ginger Bark is something that is going to put you on the holiday party map and leave the boring old Peppermint Bark in the dust! In Ginger Bark I have taken white chocolate and kicked the peppermint to the curb and replaced it with crushed up gingersnaps. I have to tell you that the pairing is freaking phenomenal! Ingredients
  1. 1 lb. white chocolate melting discs
  2. 1/2 c. crushed gingersnaps
Instructions
  1. Melt the white chocolate discs according to package instructions in a bowl.
  2. Stir in the crushed up gingersnaps.
  3. Pour into a 9"x13" pan lined with wax paper and spread evenly.
  4. Refrigerate for 15-20 minutes.
  5. Break or cut into pieces.
Notes
  1. If you don't have white chocolate melting discs on hand you can use white chocolate chips.

I love the smells and tastes of fall and nothing brings those flavors and smells together like Thanksgiving. With all of the prep and cooking that goes into the perfect Thanksgiving meal it’s nice to have some things that don’t need to take up valuable oven space. It’s also nice when you can get all hands on deck and have the kids help with making some of the food. That’s what makes my entry into the second annual Wayfair Battle of the Pies entry perfect! My No Bake Caramel Apple Mini Pies are an easy dessert that can be made ahead of time and simple enough for the kids to make with supervision.

These No Bake Caramel Apple Mini Pies are fun, tasty and so much lighter than some more traditional Thanksgiving pies. After such a large meal it’s nice to have a lighter dessert choice.

This recipe is easy to put together especially if you get store-bought mini graham cracker pie crusts in tins. If you wanted to make your own graham cracker crusts you could and just use these Mini Pie Dishes that you can find on the Wayfair.com website.

Since my  two youngest kids are all about helping me bake and cook in the kitchen I like coming up with recipes that they can do the bulk or all of the work. They love being able to tell people they made something! They really like recipes where they get to whisk. I guess there’s just something fun and exciting about going as fast as you can with a mixing bowl, some ingredients and a tool that looks like a balloon. I’ve found over the years that getting my kids mini or kid sized tools makes it easier for little hands to help.

To take my No Bake Caramel Apple Mini Pies to a whole other level of fun and to give the kids yet another fun project to work on, I purchased some disposable appetizer forks. I then picked up some Washi Tape in a fall color. We then wrapped the handles of the forks in the Washi Tape and then put the forks into the center of the No Bake Caramel Apple Pies so that they look like sticks. This really plays up the whole caramel apple take on these mini pies.

Ingredients
  1. 1 3.9 oz. package of instant vanilla pudding
  2. 1 1/2 c. cold milk
  3. 1 .74 oz. packet of spiced apple cider
  4. 1 c. whipped topping
  5. 6 mini graham cracker pie crusts
  6. 1/2 c. caramel ice cream topping
  7. 1/4 c. chopped peanuts (optional)
Instructions
  1. In a large mixing bowl whisk together the pudding mix and the milk for two minutes.
  2. Pour the packet of spiced apple cider into the pudding and fold in.
  3. Spoon half of the pudding mixture into the mini graham cracker pie crusts.
  4. Fold the whipped topping into the remaining pudding.
  5. Spoon the pudding and whipped topping mixture into the mini graham cracker pie crusts.
  6. Refrigerate for three hours.
  7. Just before serving slightly warm the caramel ice cream topping so that you can work with it. You do NOT want it at all hot.
  8. Using a spoon or small offset spatula spread the caramel onto the tops of the pies. Do NOT spread the caramel to the edge as it will spread on it's own.
  9. Sprinkle the pies with chopped peanuts if desired.
Notes
  1. To truly make your pies look like caramel apples insert disposable appetizer forks into the center of each pie. To make the forks festive wrap the handles in Washi tape.
