The 4th of July is one week away and I know that this upcoming weekend will be filled to the brim with cookouts, parties, festivals and just a whole lot of fun and merriment! This month my friends at Wayfair are celebrating National Cherry Month. To make it even more fun they asked several of us bloggers to come up delicious new cherry recipes or to share some of are an absolute favorite with our readers and them. I was so excited to be invited because I have extolled my passion for cherries in other posts on the blog. So what delicious little bit of yum am I going to share? What’s an awe-inspiring cherry pie bar you ask? Where to begin, where to begin? I love crumb topped cherry pie, cherry cobbler and brownies!

I’m not a fan of chocolate and cherries together though. This recipe is a brownie base but rather than chocolate it’s got a caramel, cinnamon flavor and oh goodness is it heavenly!

While these are good in their own right or can be used in so many different ways I took them to another level with cherries!

I took these brownies and turned them into an almost slab pie. I topped them with my homemade cherry pie filling. Why stop there though? No, no, no, I went and made it even more awesome by topping it all with an Ameretti crumb topping.

For the almond brownies
  1. 1/2 c. salted butter
  2. 2 c. light brown sugar, packed
  3. 1/2 tsp. cinnamon
  4. 2 eggs, beaten
  5. 1 c. flour
  6. 1/2 c. almond flour
  7. 1 tsp. baking powder
For the topping
  1. 4 c. cherry pie filling
  2. 1/2 c. Amaretti cookies, crushed
  3. 2 tbsp. flour
  4. 2 tbsp. brown sugar
  5. 1/4 tsp. cinnamon
  6. 3 tbsp. butter, melted
For the almond brownies
  1. Preheat oven to 350° and grease a 9" x 13" pan with baking spray.
  2. In a large saucepan over medium heat melt the butter. Add the light brown sugar and cinnamon and stir to combine. All of the liquid should be absorbed. Stir until you notice liquid bubbling around the edges. Remove from heat and pour into a large mixing bowl.
  3. Stir in the beaten eggs until completely incorporated.
  4. Add the flours and baking powder and stir to combine.
  5. Press the mixture into the 9x13 pan evenly and place in the oven.
  6. If topping: Bake for 25 minutes or until just set. Remove from the oven and let cool for 5 minutes. While it is cooling make the amaretti crunch topping if using.
  7. If not topping: Bake for 30-35 minutes until fully set.
For the topping
  1. In a bowl, stir together the crushed Amaretti cookies, flour, brown sugar and cinnamon with a fork. Pour in the melted butter and stir until all of the dry ingredients are moistened.
  2. Evenly spoon the pie filling onto the brownies. Sprinkle the amaretti crunch topping on the pie filling.
  3. Bake in the oven for 10 minutes.
  4. Allow the brownies to completely cool before serving.

I love baking up treats with and for my kids during the holidays. I love seeing their faces when they try a new treat and waiting for their reactions. There are several reasons why I just adore my M&M’S® Frosted Cookie Bars. First of all, they are of course delicious beyond belief. Second, I love taking cookie dough and baking it in a pan like you would brownies. One of the things that annoys be about cooking baking is the repetitiveness of it. Put a pan or two of cookies in the oven, cook it 8-15 minutes and then do the same thing over and over again until you are done cooking all of the dough. It makes it hard to get other things done during the busy holiday times. One pan in and done is the way to go!

Ingredients
  1. 1 c. butter, very soft
  2. 1 c. light brown sugar
  3. 2/3 c. sugar
  4. 2 lg. eggs
  5. 2 tsp. vanilla
  6. 3 packets Quaker Instant Oatmeal in Original Flavor (I pureed the oatmeal in my food processor.)
  7. 3 tbsp. instant vanilla pudding mix
  8. 1 1/2 c. flour
  9. 1/2 tsp. salt
  10. 1 tsp. baking powder
  11. 11 oz. pkg. M&M'S® Holiday Baking Minis
  12. 1 can of vanilla frosting
  13. 1 c. M&M'S® Holiday Baking Minis
Instructions
  1. Preheat oven to 350° and line a 9" x 13" pan with parchment paper and spray with baking spray.
  2. In the bowl of a stand mixer fitted with the paddle attachment cream together the butter, sugars, eggs and vanilla on medium- high, until light and fluffy. Scrape down the sides of the bowl. Stir in the oatmeal, flour, salt and baking powder just until combined. Stir in the M&M'S® Holiday Baking Minis.
  3. Spread into the prepared pan and bake 40-45 minutes or until set. Cool completely.
  4. Spread frosting over the cooled cookie bars and then top with M&M'S® Holiday Baking Minis.

The last time I went I was able to pick up the ingredients to make my Decadent S’mores Truffle Bars recipe. This dessert is so good that you’ll be amazed at how easy it is to make!

I prefer to use brown sugar and cinnamon over regular sugar in my graham cracker crusts because it gives it a better flavor in my opinion.

For the crust
  1. 1 1/2 c. Graham Cracker Crumbs, ground or crushed
  2. 1/3 c. brown sugar, firmly packed
  3. 6 tbsp. butter, melted
  4. 1/2 tsp. cinnamon (optional)
For the truffle filling
  1. 12 oz. pkg. semi-sweet chocolate chips
  2. 3/4 c. sweetened condensed milk
  3. 1/2 tsp. vanilla
For the topping
  1. 2 c. mini marshmallows
Instructions
  1. Preheat oven to 375° and line an 8" x 8" or 9" x 9" pan with parchment paper so that you have an overhang of a few inches on two sides. This will help with removing the dessert from the pan later. Spray the sides of the pan and the parchment paper with baking spray.
  2. In a large mixing bowl combine the graham cracker crumbs, brown sugar, melted butter and cinnamon. Using a fork or your hands combine all of the ingredients. Everything should be coated in butter and damp.
  3. Pour the graham cracker mix into the prepared pan. Press firmly into place. The bottom of a glass should help to make this easier. Bake for seven minutes. Do not over bake! Cool completely.
  4. In a microwave safe bowl combine the chocolate chips, sweetened condensed milk and vanilla. Microwave on 50% power for 45 seconds. Stir the mixture. If not completely melted microwave again on 50% for another 30 seconds. Do this until you can stir it and everything is melted and smooth.
  5. Pour the chocolate mixture over the graham cracker crust and spread evenly. Top with the marshmallows.
  6. Place under the broiler until the marshmallows are browned and toasted. Watch this carefully so they do not burn.
  7. Let the dessert set for a few hours so that the chocolate layer can firm up. Cut into 16 2" squares and serve.

The 4th of July is this weekend and for us the holiday usually involves the local parade, a family BBQ and fireworks to round out the night. I’m sure this is also how a lot of other people spend the day as well. It’s a great holiday for friends, family and fun. For the tables this year I decided to make 4th of July edible centerpieces since our family is over run with kids currently. Something that the kids or kids at heart could just grab and nosh on when they felt like it.

These edible centerpieces consist of star marshmallows in two sizes, Rice Krispie Treats cut out with a star cookie cutter, candies and sprinkles for the edible portion.

This is also a great thing to make and let the kids put them together and decorate. Not only does it lessen your work but it also keeps the kids out-of-the-way so you can get everything else done.

For the stands to hold the edible treats you can use any red, white or blue containers that you think will work. I personally used a red, square, bamboo cup and a blue, oval, tin bucket.

Ingredients
  1. 20 Rice Krispie Treats (homemade or store bought cut into stars)
  2. 20 small star shaped marshmallows
  3. 20 large star shaped marshmallows
  4. chocolate melts (red, white or blue)
  5. candies and sprinkles to decorate
Instructions
  1. Melt the chocolate melts in the microwave in disposable pastry bags.
  2. Using candy sticks or wooden skewers slide the small star marshmallow on. Then a candy should follow next. Then add the large marshmallow and follow that with another candy. Then add the Rice Krispie Treat to the stick. Lay the assembled sticks onto a wax paper lined baking sheet.
  3. Decorate the marshmallows and Rice Krispie Treats with the melted chocolate, candies and sprinkles.
Notes
  1. To assemble the centerpieces all you need to do is place floral foam into the containers you are using. Insert the completed marshmallow and Rice Krispie Treat pops into the floral foam, adjusting until you are satisfied. Cover the floral foam with crinkle paper in the color of your choice.

Decadent Pineapple Cream Cheese Bars

It’s so hard traveling someplace nice and warm and coming back to wintry weather, rainy weather or weather that just can’t make up its mind on what season it should be when I am now firmly in need of some summer weather. That’s why my recent baking has all had a bit of a tropical flare to it because I need to feel like summer will be here soon and baking tropical treats does that for me. These Pineapple Cream Cheese Bars came about one day during spring break last week. The kids and I all got sick and the weather was hit or miss so it wasn’t much of a fun break for us.

One day while running into the store for a few things (since that was all I could manage with a fever) I spotted pineapple cream cheese and immediately, possibly may have drooled a little. I love pineapple! I like eating it in the winter because not only is it delish but it also makes me think of sunshine and beaches. As soon as I saw this pineapple cream cheese it immediately came to me that I was going to make some Pineapple Cream Cheese Bars. Had I made them before? Heck no! I was determined though fever and all though to make them and I am so glad I did! They were such a pick me up for everyone in the house, especially my husband who was stuck with all of us sickies. He really enjoyed them!

Decadent Pineapple Cream Cheese Bars are a sweet, tropical treat.

Between the icing, the pineapple and the cream cheese these bars have a lovely flavor that is tropical, sweet and rich.

Ingredients
  1. For the bars
  2. 1 8 oz. can of crushed pineapple in it's own juice
  3. 2 3/4 c. all-purpose flour
  4. 1 tsp. baking soda
  5. 1/2 tsp. baking powder
  6. 1/2 c. butter, softened
  7. 8 oz. pkg. pineapple cream cheese, softened
  8. 1 2/3 c. sugar
  9. 1 egg
  10. For the icing
  11. 1 c. powdered sugar
  12. 2 tbsp. milk
  13. 1 - 1 1/2 tbsp. pineapple juice
Instructions
  1. Preheat oven to 350° and spray a 9"x13" pan with baking spray.
  2. Drain the canned pineapple being sure to reserve the juice. Divide the pineapple and juice as follows. 1/4 c. crushed pineapple, 3 tbsp. pineapple juice, remaining pineapple and juice in separate bowls.
  3. In a large bowl mix together the flour, baking soda and baking powder and set aside.
  4. In the bowl of a stand mixer fitted with the paddle attachment cream together the butter and cream cheese on medium-high speed. Add the sugar, 1/4 c. crushed pineapple and pineapple juice and mix until combined. Stir in the egg on low until incorporated. Stir in the dry ingredients in two batches and then mix on medium speed for a minute.
  5. Press the dough evenly into the prepared pan and top with the remaining crushed pineapple.Bake for 30-35 minutes or until the middle has set. Let the bars cool for 10-15 minutes. While they are cooling you can make the icing.
  6. To make the icing whisk together the powdered sugar, milk and pineapple juice until smooth. Once the bars are cooled some spread the icing.
  7. Cut the bars into 2" squares and serve.

I love baking! It is a form of relaxation and enjoyment for me. Even with that though sometimes I just want baking to be done fast. I don’t want to wait for pan after pan of cookies or bake, cool and frost a cake or cupcakes. No, sometimes what you really need is a dessert that you whip up the dough for fast and toss it all in a pan and bake in a relatively short time. Something that you don’t even need to wait for it to completely cool but can enjoy your first heavenly bite while it’s still warm. This was what happened to me the other day. I had the urge to bake but since I have been dieting I didn’t want to be overly tempted and opted to make Peanut Butter M&M Blondies.

I love baking with peanut butter. It always adds such great flavor and being a house full of peanut butter lovers means whatever I make with it is guaranteed to be a hit. I decided to make them seasonally appropriate by using the Valentine’s Day Peanut Butter M&Ms that come in red, pink and white. I also chose the Peanut Butter M&Ms over Reese’s Pieces because they have chocolate and peanut butter inside of them. This gives a nice subtle hint of chocolate when eating the blondies. I also used a smaller amount of peanut butter to give a lighter peanut butter flavor than you get in some peanut butter cookies. These Peanut Butter M&M Blondies have a great peanut butter flavor and are a great dessert to serve to a crowd.

Ingredients
  1. 1/2 c. butter, very soft
  2. 1/2 c. natural peanut butter
  3. 1 c. light brown sugar, firmly packed
  4. 2/3 c. sugar
  5. 2 eggs
  6. 2 tsp. vanilla
  7. 2 1/2 c. all-purpose flour
  8. 1/2 tsp. salt
  9. 1 tsp. baking powder
  10. 11 oz. pkg. Peanut Butter M&Ms, divided
Instructions
  1. Preheat oven to 350° and spray a 9"x13" pan with baking spray.
  2. In the bowl of a stand mixer fitted with the paddle attachment cream together the butter, peanut butter, sugars, eggs and vanilla on medium-high until light and fluffy. Scrape down the sides of the bowl. Stir in the flour, salt and baking powder just until combined. Lastly, stir in the 1/2 of the Peanut Butter M&Ms.
  3. Press the dough into the prepared pan and press the remaining Peanut Butter M&Ms into the top of the dough. Bake for 20-25 minutes. Remove form the oven and let them cool. Cut into 2"-3" squares and serve.

It’s Veteran’s Day here in the good old U.S. of A. and yesterday was my parent’s 41st wedding anniversary as well. My dad was in the Navy and stationed in Virginia when they were married and my younger sister and I were both born in a Naval hospital. We even have state and military birth certificates. It’s kind of cool to have that military one! Anyway, I decided last night that I was going to bake and share a brand new treat with you all in honor of these two very important things in my life. Since Thanksgiving is coming up though so I wanted to create a dessert that would go perfectly for that friends and family filed holiday too. That’s how I came up these Pumpkin Spice Cream Cheese Bars. So today I say thank you to all of our military members past, present and future for all that you do and have done and all that you and your families sacrifice to keep us safe. I’d also like to thank my parents for getting married because without that one I wouldn’t be here today.

These bars turned out to be such a rich, decadent treat! They were full of pumpkin spice flavor that brings to mind all things fall but it is not done in an overpowering fashion. The addition of the cream cheese takes these from your standard, run of the mill blondies to something that is rich and oh so tasty. The glaze just adds the perfect finishing touch to the bars and adds another level of sweetness.

I really liked the addition of the pumpkin spice morsels. It gave the bars a pretty little pop of orange color throughout. The really hard while baking these was keeping my 5-year old from eating all of the pumpkin spice morsels before I could get them mixed into the dough.

For the bars
  1. 2 2/3 c. all-purpose flour
  2. 1 tsp. baking soda
  3. 1/2 tsp. baking powder

  10. 1 10 oz. pkg. Nestle Pumpkin Spice Morsels
For the glaze
  1. 1 c. confectioner's sugar
  2. 1/4 tsp. pumpkin pie spice
  3. 3 tbsp. milk
  4. 1/2 tsp. vanilla
For the bars
  1. Preheat oven to 350° and spray a 9"x13" pan with baking spray.
  2. In a large bowl mix together the flour, baking soda, baking powder and pumpkin pie spice and set aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment cream together the butter and cream cheese on medium-high speed. Add the sugar and vanilla and mix until combined. Stir in the egg on low until incorporated. Add the dry ingredients in two batches and then mix on medium speed for a minute. Stir in the pumpkin spice morsels.
  4. Press the dough evenly into the prepared pan and bake for 25-30 minutes or until the middle has set. Let the bars cool for 30 minutes. When they are almost cool make the glaze.
For the glaze
  1. To make the glaze, whisk together the powdered sugar, pumpkin pie spice, milk and vanilla until smooth. Once the bars are cooled spread the glaze over the top. Cut the bars into 2" squares and serve. Store in an airtight container.

Fun Frankenstein Rice Krispies Treats For Halloween

Frankenstein Rice Krispie Treats

Most of the time baking is my form of relaxation and decompressing from the stresses of life but, sometimes the kids like to help me bake or they like to have project time to make a kid’s creation. I decided that a simple and fun idea for Halloween would be to make some festive, seasonal Rice Krispies Treats. So one day while strolling around the craft store I spotted some black and vibrant green colored Wilton Candy Melts and I thought they would be perfect for making the Rice Krispies Treats into some fun Frankenstein Rice Krispies Treats for Halloween.

The chocolates were the key to this idea bet then I realized I would need a few other items so I began searching the Wilton Halloween section. There I located some green and yellow candy eyes and some jumbo bug sprinkles. The bug sprinkles came in black and green too and since the actually looked like centipedes I decided that if only part of it was visible that it would work as Frankenstein’s bolts nicely.

These were so much fun to make and the kids had a blast creating their own versions of Frankenstein and then of course gobbling them up. This is definitely a kid friendly project and it would also make a great activity at a child’s Halloween party. You could setup already sliced Rice Krispies Treats either homemade or packaged with bowls of melted chocolate for dipping. Finish the activity table off with pastry bags of melted chocolate for more decorating and candies, sprinkles and other fun items to help create your own Frankensteins with.

Ingredients
  1. 9 Rice Krispies Treats, either homemade or packaged (if homemade use a 9"x9" pan)
  2. 2 12 oz. bags Wilton Candy Melts, one in Vibrant Green and one in Black
  3. 18 Candy Eyes
  4. 18 Jumbo Bug Sprinkles
Instructions
  1. Cut or shape your Rice Krispies Treats into squares or rectangles.
  2. Melt your green Wilton Candy Melts according to the package instruction in a bowl and your black ones in two separate pastry bags. Using an offset spatula cover the tops of the Rice Krispies Treats with the melted vibrant green candy melts. Place the candy eyes. Then snip the ends of the pastry bags. One should be a small opening and the other larger. Use the large opening pastry bag to pipe the hair on and use the small opening pastry bag to pipe a mouth. Dip the ends of the sprinkles in the vibrant green chocolate and press into the sides of the Rice Krispies Treats to look like bolts.

It’s seems like more and more people are needing to eat gluten-free for health reasons or just to change-up their diets to a healthier lifestyle. When people find out I bake on my own blog I am often asked if I do special diet recipes, gluten-free, vegetarian, dairy-free, etc. It’s not that in the past I have been against these recipes for any reason, well okay, I am against the dairy ones because that means no cream and butter and to me that is just blasphemous, but the others I have nothing against it’s just there was never a need for me to try making them. Then my great-niece was diagnosed with Celiac Disease and had to go gluten-free. I’ve also battled a slew of health problems the last few years and figured it couldn’t hurt anything to try making healthier options once in a while. Earlier this month I did my Gluten-Free Cherry Chip Almond Oatmeal Cookies and today I am bringing you these absolutely delicious Gluten-Free Snickerdoodle Blondies.

I’ve spent the last few weeks reading gluten-free blogs and articles trying to learn the differences in baking. I’ve spent hours and hours trying to find a good all-purpose gluten-free flour and I think I finally have in Glutino Gluten Free Pantry All-Purpose Flour
because it already has a binder in it which you usually need in gluten-free baking. If you’re new to gluten-free baking the prices may scare you a bit because the flours are much more expensive than traditional all-purpose flour but once you find one you like you can usually buy it in bulk to save yourself some money.

For the Gluten-Free Snickerdoodle Blondies I based them off of my regular Snickerdoodle Blondies recipe that is always popular when I make it. Since this is a gluten-free version there are some differences. The gluten-free version turned out less dense and they were thicker but they were very moist and had a great flavor. It’s definitely a recipe that the gluten-free people in your life will be happy you took the time to make for them.

For the blondies
  1. 1 1/3 c. Glutino Gluten-Free Pantry All-Purpose Flour
  2. 1 tsp. baking powder (I use Clabber Girl as it's gluten-free)
  3. 3/4 tsp. cinnamon
  4. 3/4 c. dark brown sugar, firmly packed
  5. 1/4 c. sugar
  6. 1/2 c. butter, softened
  7. 1 egg
  8. 1/4 c. applesauce
  9. 1/2 tsp. vanilla
For the topping
  1. 1 tsp. sugar
  2. 1/4 tsp. cinnamon
Instructions
  1. Preheat oven to 350° and spray an 8"x8" or 9"x9" pan with baking spray. Then measure some parchment paper so that it hangs over the edges for easy lift out of the blondies once they are done.
  2. In a bowl stir together the Glutino All-Purpose Flour, baking powder & cinnamon so that they are well mixed. In the bowl of a stand mixer fitted with a paddle attachment add the sugars, butter, egg, applesauce and vanilla. Mix together on medium speed until it is fairly smooth and there are only small bits of butter left. Stir in the flour mix and mix just until combined. Spread the batter evenly into the prepared pan and sprinkle the combined cinnamon and sugar for the topping.
  3. Bake for 28-32 minutes. Let cool in the pan and then carefully life the blondies form the pan using the overhanging parchment paper. Then you can slice and serve.
