The teams are getting widdled down and the big game is fast approaching. It’s time to think about what you’ll be serving to wow your favorite football fans during halftime. For me, I am a fan of dips, finger foods and small plate options. It makes it so much easier to work with that while yelling at the TV. (Sorry, crazy, hardcore fan here.) One of my favorite go to dips is Chili Cheese Dip. It’s easy to put together and make but it’s filling enough to feel like you are eating more than just a dip.

In the past I have used <shudder> canned chili to make this dip but now that Progresso has a a great line of chili products available I have switched. I love that the chili is chunky with quality meats, beans and vegetables.

Ingredients
  1. 1 8 oz. pkg. cream cheese, softened
  2. 1/2 c. salsa, thick and chunky
  3. 1 1/2 c. Progresso Chili
  4. 1 c. cheddar cheese, shredded
  5. 2 green onions, diced
  6. 1 Roma tomato, diced
  7. 1/4 c. cilantro, chopped
Instructions
  1. Preheat oven to 325°.
  2. In a pie tin or cake pan spread the softened cream cheese to cover the bottom. Then spread the salsa over the cream cheese and follow that with the chili. Next, add the cheddar cheese over the top. Bake in the oven for 20 minutes. Top the cooked dip with the green onion, tomato and cilantro and then serve with tortilla chips.

I love a good dip! My husband would say he does too and that’s why he married me… lol. I however mean the edible kind and not the personality. A good dip can bring in the crowds at the start of the party and get them talking. Well, at can at my parties because the people I tend to hangout with are food junkies like me. There are all kinds of dips; fruit dips, chip dips, savory and sweet. This morning I woke up on a mission to make a sweet dip that would be a party starter. I wanted a peanut butter cup dip!

Having a big family get together for the Super Bowl has always been a mus tin my family. Everyone brings different foods and it moves form house to house each year. Several years ago my daughter was born during the Super Bowl and the party has expanded to include a birthday party too. It usually works out that there is one room that is loud, with screaming and sometimes crying and then there is the kids room for the birthday party. This year I am going with a fiesta theme and I’m making a 2-Minute Sweet N’ Sassy Mango Salsa in honor of my daughter who will be 6 and who just happens to be both sweet and sassy.

To make this fun though we are going to make it with Del Monte Diced Mangos and jarred salsa. I used Wild Oats Marketplace Organic Tequila Lime Salsa that I found at Walmart. I was trying to go for margarita flavor in a dip form. It’s also nice though that my daughter can help me make it for all of the guests. I get the hard job of opening the can and jars and she gets the fun job of dumping them into the food processor.

It’s a new year and like so many I have resolved to try to get healthy this year by eating better. That’s no easy task for a girl who likes to bake and thinks that butter should be its own food group. I knew setting out to try to get healthy that I was going to need to up my produce consumption. Like many I was not eating nearly enough fruit and veggies. The problem for me is not that I don’t like them, I do. My problem is that I prefer them raw. The issues with that though is that while you can add dressing to a salad easily most of the time raw fruit is just that… fruit. I make lots and lots of really good food. People I think invite me places just because they know I will feed them well. Sometimes though, I get an idea in my head for a food and I know it will be great and then I make it and it is just as good as I imagined but sometimes on very occasions I make food that is so out of this world good that it’s what I refer to as moan worthy. I mean you pop it into your mouth and your taste buds sing your praises, your eyes roll into the back of your head and a moan escapes before you even realize it’s happening. That my friends is what happened when I made Cinnamon Cronut Chips with Cream Cheese Dip this weekend. It was magical and I realized that they may be the perfect brunch, party snack or dessert you could possibly ever serve your guests!

The really great thing about these though is that they are easy thanks to starting out with a tube of crescent roll sheet dough as your foundation. The cinnamon coating is just a couple of ingredients and the cream cheese dip whips up in just a few minutes. Frying these little things is what takes the longest and honestly that is only a few minutes for each batch so really you want to make these and serve them to everyone you know and love and maybe even to people you know and hate because I guarantee they’ll love you when they are done.

All you need to do is unroll, smear, sprinkle, pat and cut and you are on your way.

For the Cinnamon Cronut Chips
  1. 1 tube crescent roll sheets
  2. 1 1/2 tbsp. butter, softened
  3. 1 1/2 tsp. cinnamon
  4. 1/4 c. dark brown sugar, packed
  5. oil for frying
For the Cream Cheese Dip
  1. 1 1/2 oz. cream cheese
  2. 2 tbsp. butter, softened
  3. 3/4 c. confectioner's sugar
  4. 1/2 tsp. vanilla
For the Cinnamon Cronut Chips
  1. Unroll the the crescent roll sheet onto a lightly greased surface. In a bowl mix together the cinnamon and brown sugar. Spread the butter over the entire crescent roll sheet and sprinkle the cinnamon and brown sugar mixture over it all. Gently press the mixture into the dough so that it is not just loosely sitting on top of the dough but is instead part of it. Using a small 1" - 2" circle cookie cutter cut out your chips.
  2. Heat about an inch of oil in a heavy bottomed pot to 350°. Do not let the oil get to hot. Carefully drop the chips into the oil and fry until starting to brown on the bottom. It will be about a minute. Then flip over and cook the other side the same way. Remove form oil and place on a wire rack over a baking sheet covered with paper towels to drain and catch the oil.
For the Cream Cheese Dip
  1. Place all of the ingredients in a bowl and mix with an electric mixer on low speed until combined. The cream cheese dip can be made ahead of time and refrigerated until ready to use.

Some how June has gotten away from and I can’t believe that next week is already going to be the 4th of July! I mean seriously, where does the time go? It’s like each year of my life flies by faster and faster than the last. Summer school is already ending for my 10-year-old and vacation bible school ended today for my 5 and 7 year olds and I feel like I have done nothing this summer. I really need to get on that because before I know it school will be starting again in August and I’ll have missed the whole thing. Luckily though 4th of July is here and hopefully it will get my butt in gear for a fun, unforgettable summer. We have lots of family activities planned and the hubby is off work almost the whole week since his brother is coming in from Maryland with his fiance and we are of course going to hit the local parade like we do every year. So I have tons of cooking and baking planned for this upcoming week. One of the things I am planning on making is my Red, White & Blue Fruit Dip.

My Red, White & Blue Fruit Dip is a new spin on a classic and it adds additional flavors. This awesome Dip can be paired with fresh fruit, graham crackers or vanilla wafers and will be absolutely perfect for a cookout! Ingredients

Instructions
  1. In three separate bowls measure out the marshmallow creme and whipped topping. Add one of the flavors of cream cheese to each bowl. Add 2-3 drops of red food coloring to the strawberry cream cheese bowl and 2-3 drops of blue food coloring to the blueberry cream cheese bowl. Mix each bowl with an electric hand mixer until smooth. Spoon into bowl carefully to keep colors separated and refrigerate until ready to use. Serve with fresh fruit, graham crackers or vanilla wafers.

5 Minute Salsa

This Monday is Cinco de Mayo and I was thinking about it today when I realized that I have never, ever posted my go-to 5 minute salsa recipe on here before. I do not know how I have managed to overlook something like that but apparently my memory is not what it used to be because I know I meant to do this at least two other times now. Luckily though this is easily remedied.

This salsa recipe is so easy to do that anyone can make it. Literally, this could easily be the first recipe someone ever does on their own and it will give them such kitchen confidence and since it takes only five minutes you will want to make it all of the time. My favorite snack is this salsa with some really good and crunchy tortilla chips. It is my absolute weakness in the food world and my biggest comfort food. My oldest son and I have sat and had many a chat over a bowl of this salsa or munched on it while we are waiting for our tamales to steam because yeah, they go hand in hand for us.

Ingredients
  1. 1/3 c. Spanish onion, chopped
  2. 1 14.5 oz. can of diced tomatoes
  3. 1 4 oz. can of fire roasted jalapenos (I use La Victoria brand)
  4. 1/2 tsp. salt
  5. 1 tbsp. vinegar
  6. 1/4 tsp. cumin
Instructions
  1. Add all of the ingredients to the blender or food processor except for the jalapenos. For the jalapeno, using a measuring spoon measure 1 tbsp. for mild salsa, 2-3 for medium salsa or 3+ tbsp for hot salsa. These are level tablespoons, not rounded. If you are unsure start with one and add more until you reach the desired level of heat. Pulse all of the ingredients for 20-30 seconds or until mixed.
  2. Refrigerate until ready to use and be sure to refrigerate any leftovers.
Notes
  1. Spanish onions are a sweeter and lighter in flavor than a yellow onion. If you are unable to find a Spanish onion at your market then you can substitute yellow onion.

We are huge football fans in my family and the Super Bowl is always a big event with my parents, siblings and their families. We discuss what will be made, who will bring what and at whose house it will be held at in the weeks leading up to the game. There is always a great deal of thought and planning that goes into what we are going to be eating. This year we will be serving El Monterey Taquitos to everyone.

El Monterey’s Taquitos are a perfect Big Game match up! With their new flavors and with so many varieties there will be a flavor for every one of your guests. They are a perfect finger food for the Super Bowl since you can easily have them in your hand while watching, cheering, ranting and screaming at the plays, players, coaches and refs through the course of the game. Come on now, y’all know you do that. Sadly, though this year our rants should be minimal since once again none of our teams are playing but it will still be lots of fun.

To help kick things off El Monterey was nice enough to send me a whole big box filled with five of the flavors of their taquitos. Now we are actually already fans. The kids like them as an after school snack so we routinely buy the chicken taquitos and pop them in the microwave to cook. So we were all excited and ready to try all of the flavors we received. We received El Monterey Shell Shockers in Nacho Cheese and Jalapeño Ranch flavors as well as, El Monterey seasoned, battered taquitos in Southwest Chicken and Taco Beef & Cheese. I have to say that they were all good. The kids loved the Nacho Cheese Shell Shockers. My favorite was the Jalapeño Ranch Shell Shockers since I am a fan of spicy food. My husband liked the Taco Beef & Cheese battered taquitos.

I always like pairing El Monterey Taquitos with some dips. Usually, the go to dips are guacamole and salsa but for our game day spread I decided to change it up and make my Zesty Cocoa Dip as well. Don’t worry the Zesty Cocoa Dip is savory and not sweet like you would expect when you hear the word cocoa and is actually made from a cocoa rub that you can use on meats and veggies as well. I also made a quick and super easy salsa and plated the guacamole up in a long rectangular dish I got at the party store. I then placed sour cream at each end of the platter and made lines of sour cream to make the platter look like a football field.

For the cocoa rub
  1. 1 tbsp. seasoned salt
  2. 1 tsp. unsweetened cocoa powder
  3. 1 tsp. sugar
  4. 1 tsp. dark brown sugar
  5. 1 tsp. garlic powder
  6. 1/2 tsp. onion powder
  7. 2 tsp. cumin
  8. 1 tbsp. chili powder
  9. 1 tsp. pepper
  10. 1/2 tsp. smoked paprika
  11. 1 tsp. ground chipotle chili pepper
For the dip
  1. 2-3 tbsp. cocoa rub
  2. 16 oz. container of sour cream
For the rub
  1. Combine all of the ingredients and mix well. Store in an airtight container. Use on meats, vegetables or in sauces and dips.
For the dip
  1. Combine the two ingredients and stir to combine. Refrigerate until ready to serve.
