The 4th of July is one week away and I know that this upcoming weekend will be filled to the brim with cookouts, parties, festivals and just a whole lot of fun and merriment! Summer is here! School is out and I am already wondering how much longer until school is back in session. I love my babies, don’t get me wrong but trying to work from home while entertaining the troops can try even the most patient of souls. That’s why getting together at night or on the weekends with friends for a mommy break is so important. I’m going to share with you my five favorite mommy break activities and how to make NESCAFE Clasico Affogato, the perfect summer pick me up.

Stepping away from work, family, home and everyday stresses is important for moms. You need that balance so that you feel more than just a wife, mom, employee, volunteer, housekeeper or whatever else takes up your days.

Top 5 Mommy Break Activities

Spa Time

You take care of everyone all week-long. Taking time to pamper yourself with your girlfriends is a great way to indulge while unwinding with your besties. Whether it’s a full on spa day or a simple mani/pedi it will go a long way to restoring you.

Shopping

This one is tricky. As a mom it’s so hard to shop for just you. To walk into a mall and say, ‘This is just me today and not the house, the kids or the hubby.” Take the time to focus on you and enjoy shopping with your girls who will be honest about how you look in the clothing you try on. Plus, get yourself a cute outfit, some sexy new shoes or some lingerie and your spouse will definitely be willing to let you to slip out with treats like that to show off.

Lunch or Dinner

I know this one seems a little odd. I mean you can just go out to eat with your family any old day of the week. What makes it different with your buddies is that they are in the same boat as you most likely. They want a break, the kids are driving them nuts, they want to rant about whatever annoying thing their husband is doing… You get the idea. You get to be you and just you, not mommy or wifey all while enjoying some good food. Added bonus, you get to head to that fancy little bistro or dessert bar that your hubby has no interest in going to dine at.

Movies

Sometimes you don’t need to talk to have a good time with your friends or to unwind. Sometimes you just want to sit in the dark, eat junk food, and watch a sappy. chick flick with someone who will totally appreciate it as much as you do. 

Hit the Gym

The gym? Say what? I know that’s what you were thinking. The gym is a great way to unwind. Working up a sweat while exercising is not only great for your body but also your mental well-being. Add in talking to your bestie (a.k.a. your personal psychiatrist) and you will definitely be felling like yourself again when it’s over.

The important thing in all of this is finding what works for you and your friends to help restore a bit of the sanity that the summer, schools out insanity creates.

Ingredients
  1. 1 tsp. NESCAFE Clasico
  2. 6 oz. hot water
  3. 2 scoops vanilla ice cream
Instructions
  1. In a mug combine the NESCAFE Clasico and water. Stir together. In a glass scoop two scoops of vanilla ice cream. Pour the prepared NESCAFE Clasico coffee over the ice cream.

Stanley Cup Ice Cream Cones

Stanley Cup Ice Cream Cones for the kids to celebrate the Chicago Blackhawks win and parade.

 

 

Monday was my son’s birthday he turned 11 and brought some awesome luck to the Chicago Blackhawks that night because they won the Stanley Cup for the third time in six years and won it at home for the first time since 1938. (It’s perfectly okay for me to believe he gave the his birthday luck for the win!) Today is the parade and the city is a madhouse! Hordes of people are lining the parade route and my 22-year-old is one of them. I would be too but with crowds that size I can’t bring my three youngest. I fear someone would get lost. SO since they were sad about missing the parade (My daughter wanted to yell “Oh captain, my captain!” to Jonathan Toews.) I made them some celebratory Stanley Cup Ice Cream Cones to eat while watching the parade on TV.

These are super easy to make but you will need some time for them to dry so make sure you have plenty of time.

To make your own Stanley Cup Ice Cream Cones complete with fondant pucks you will need:

Cake cones

Pairing Knife

Wilton Color Mist in silver

Chocolate Melts or Cubes

Disposable Pastry Bag

Small Package of Black Fondant (Walmart carries small Wilton packages in their craft aisle.)

Ice Cream, Yogurt or Custard of your choice

To start making your cone you will need two cake cones. Cut the top large section and part of the bottom off of one of the cones using a sharp pairing knife. The easiest way to do this is not just to cut straight through but cut and rotate the cone so that it only cuts the current section as you turn it. It comes out more even that way.

Next, you will spray the pieces with the Wilton Color Mist in silver. You can do each piece alone or fit them together and then spray them to use less spray. Let the pieces dry completely before handling.

Melt a small amount of white chocolate in the microwave according to package instructions in the disposable pastry bag. Once melted snip the tip off of the pastry bag and squeeze some of it into the smaller end on the halved cone.

While the chocolate is still melted fit it onto the upside down full cone. This will be the “”glue” that holds the pieces together and prevents ice cream melting everywhere.

While the chocolate is setting you will need to work the black fondant to soften it up. Once you have it to a workable state roll and flatten it with your hand. Then using a small fondant cutter, or the large end of a pastry tip cut out your “pucks”.

Now you can scoop up your favorite frozen treat into the Stanley Cup Cones and top with the fondant pucks and they are ready to be enjoyed. While not quite the real thing it does taste much better!

Nielsen-Massey Vanilla Celebrates National Ice Cream Month: Birthday Cake Ice Cream Sandwiches

I received a sample bottle of Niewlsen-Massey Madagascar Vanilla in order to help facilitate the writing of this article. All thoughts and opinions about the product are completely my own.

Did you know that July is National Ice Cream Month? That’s right  whole month devoted to the cool, creamy goodness of all those ice cream treats that can be bought or made. A month like this deserves some major love so in honor of it I have made some Birthday Cake Ice Cream Sandwiches and thanks to Nielsen-Massey Vanillas the taste can’t be beat.

Nielsen-Massey Madagascar VanillaNielsen-Massey Vanillas are my favorite vanillas to buy. The quality and taste can’t be beat and I can get not only Madagascar Vanilla from them but I can also get Tahitian Vanilla, Mexican Vanilla and Vanilla Bean Paste. I kind of have an addiction for their Vanilla Bean Paste. You get all those lovely flecks of vanilla beans in your baking, which makes it all so pretty and so yummy.

I decided to take my Madagascar Vanilla and create an ice cream sandwich that I knew would be a hit with my kids. I wanted to go with one of their favorite ice cream flavors and just make it perfect for them to eat on a hot July day. Since they love Birthday Cake Ice Cream with its cake batter flavor and swirls of frosting I thought how perfect, fun and festive that would be for National Ice Cream Month but since this week is also the 4th of July I decided to go with a red, white and blue color scheme.

If you have never made your own ice cream at home I highly encourage it. Since you control the ingredients you can make it as rich and decadent or as light and healthy as you want it to be. You can get brave and try all kinds of different flavor combinations and most ice creams are fairly quick to make. The part that makes ice cream sandwiches difficult is waiting. First you have to make the ice cream, then you have to make your cookies to sandwich the ice cream between, next is assembly and finally freeze time. If your like me though, you’ll be sampling as you go along so you’ll know that it’s well worth the wait.

The ice cream stages:
1. Mix ingredients & chill
2. Blend in ice cream maker
3. Spread in pan and top with lines of frosting.

I used kicked up Funfetti Cake Mix to make the cookies in my ice cream sandwich pan.

For the Ice Cream
  1. 2 c. heavy whipping cream
  2. 1 c. whole milk
  3. 1/3 c. sugar (This is optional, the cake mix and frosting will add some sugar to the finished ice cream so you can skip it is you want to eliminate so sugar and calories.)
  4. 1 c. Funfetti cake mix
  5. 2 tsp. Nielsen-Massey Madagascar Vanilla
For the Frosting
  1. 1 can of Funfetti frosting
  2. 2 tbsp. confectioner's sugar
  3. 1/2 tsp. Nielsen-Massey Madagascar Vanilla
  4. Food coloring of choice
  5. For the Sandwich Cookies
  6. 1 box of Funfetti cake mix
  7. 2 eggs
  8. 1/2 c. vegetable oil
  9. 1/2 tsp Nielsen-Massey Madagascar Vanilla
To Decorate
  1. Use the sprinkles included with the frosting or other sprinkles
For the Ice Cream & Frosting
  1. Make sure that you have frozen your ice cream maker bowl for at least 24 hours.
  2. In a blender, place all of the ice cream ingredients (add sprinkles from cake mix if not already in the cake mix) and blend until smooth. Refrigerate the ice cream mixture for at least two hours.
  3. After the two hours is up pour the ice cream mixture into your ice cream maker and turn it on. Follow your ice maker's instructions for how long to blend but most will be between 20-30 minutes.
  4. While the ice cream is blending open up your frosting and stir in the confectioner's sugar, vanilla and food coloring until well blended. You can divide the frosting and other ingredients in half and then do two colors as I did. Place the frosting in a plastic baggie and snip one of the corners. Line a jelly roll sheet with foil and plastic wrap. Evenly spread the ice cream over half of the pan vertically. Next pipe lines of frosting over the top. The entire top doe snot need to be covered with frosting. Fold the uncovered half of the plastic wrap and foil over the ice cream and lightly smooth the top so that it's even and the frosting goes into the soft ice cream. Place in the freezer for 2-3 hours.
For the Sandwich Cookies
  1. Preheat oven to 350° and spray a cookie sheet or ice cream sandwich pan with baking spray.
  2. In a large mixing bowl combine all of the ingredients and mix well with a fork. If you are just making round cookies drop mounds using a cookie scoop. If you are using an ice cream sandwich pan use the cookie scoop to drop one scoop into each cavity. Press the dough out until it covers the bottom of the cavity.
  3. Bake for 8-10 minutes and then cool for about 5 minutes before removing from pan. Finish cooling on a wire rack completely before assembling the ice cream sandwiches.
To Assemble the Ice Cream Sandwiches
  1. Using one of the cookies as a guide, cut the ice cream into rectangles or use a circular cookie cutter to make circles. Place the ice cream between two of the cookies and lightly press them together. Roll edges in sprinkles. Wrap each sandwich in plastic wrap or freezer paper and then freeze for 3-4 hours. Then eat and enjoy.

Following are some tips and shortcuts from Nielsen-Massey for making and personalizing your own homemade ice cream sandwiches:

 

  • Dress it up: Roll the sides of finished ice cream sandwiches in mini chocolate chips, mini M&Ms, sprinkles, toasted coconut or nuts to add color and texture.
  • Take a shortcut: If you are short on time, purchase bakery cookies to use with the homemade ice cream recipe to build your own ice cream sandwiches.
  •  Chill out: Keeping your homemade ice cream cold is the secret to a sandwich that won’t fall apart or get soggy. Take the time to re-freeze ice cream between steps – your patience will be rewarded with perfect sandwiches every time.
  •  Keep them fresh: Wrap each sandwich individually in plastic wrap immediately after building each sandwich. Keep them in the freezer until just before serving.
