Ingredients
  1. Vegetable or canola oil for cooking
  2. 3 c. rotisserie chicken, shredded
  3. 1 tsp. onion powder
  4. 1 tsp. garlic powder
  5. 1/2 tsp. cumin
  6. 2 tbsp. cilantro, chopped
  7. 1/4 tsp. pepper
  8. 1/4 tsp. salt
  9. 1/2 c. HERDEZ® Brand Salsa Verde
  10. 12-16 corn tortillas
Instructions
  1. In a large bowl combine the chicken, seasonings, spices and salsa verde. Place a heaping spoonful of meat onto a tortilla. Roll the tortilla and use a toothpick to hold it closed.
  2. Fill a large pot with enough oil so that it's 2" deep. Heat the oil to 375°.
  3. Using tongs, carefully place one of the rolled flautas into the oil. Continue to hold the flauta with the tongs for a minute. Finish frying and then move the flautas to a paper towel lined plate.

With the New Year last month I like many decided to work on getting healthy and making better choices where my food was concerned. With numerous medical problems and being overweight I researched what would be best to not so much lose weight but get my health on track and if I got lucky maybe lose weight as well. Through friends and online research I decided to try the LCHF or Keto diet. This was a huge change for my carbohydrate, sugar junkie self as evidenced by my copious dessert recipes on this blog alone. I have found that I REALLY love this way of living but once in a while you just want some good old-fashioned comfort food. So, with no bread or pasta I decided to make myself some tender, delicious LCHF Italian Meatballs. I get all of the comfort of a meatball sandwich or a big bowl of pasta without all of the carbs to sabotage me.

To make these meatballs LCHF friendly I booted out the bread and breadcrumbs from traditional meatballs and loaded them with delicious fat from loads of dairy. Then frying them in oil just adds more of that wonderful fat! Then let them finish cooking and absorb great flavor in Ragu Light Tomato & Basil No Sugar Added Pasta Sauce to make it better.

Ingredients
  1. 1 lb. grass-fed ground beef
  2. 1/4 c. whole milk ricotta cheese (well drained)
  3. 1/4 c. Parmesan cheese
  4. 2 tbsp. heavy whipping cream
  5. 2 tsp. garlic paste
  6. 1 tsp. onion powder
  7. 1 tsp. Italian seasoning
  8. 1/2 tsp. pepper
  9. 2 tbsp. olive oil
  10. 2 c. Ragu Light Tomato & Basil No Sugar Added Pasta Sauce
Instructions
  1. Combine the meat, cheeses, cream, garlic paste and seasonings in a bowl. Mix by hand until well combined. Do not over mix.
  2. Heat the oil in a large pot or dutch oven over medium-low heat. Once the oil is hot use a cookie scooper to scoop the meat mixture out and roll into balls. Brown the meatballs. Be careful because these meatballs are more delicate since they are made with dairy instead of bread or breadcrumbs. Once the meatballs are browned on all sides pour the sauce into the pot. Stir to combine and then lower the heat to low and cover the pot.
Notes
  1. You can let the meatballs simmer in the entire jar but remember you don't want to use more than 1/4 of the sauce while eating to keep your carbs in check.

The best part of football season is in full swing now! The post season, especially the big game always make for a great time to spend with family and friends. Everyone hangs out, watches a game and of course they all eat! No football party would be complete without fabulous food that’s easy to hold in one hand while rooting for your favorite team. While I was out shopping at Pete’s Fresh Market one day I spotted La Morena Chipotle Sauce on the shelf. I then had the sudden idea to take that chipotle sauce and use it to make some Slow Cooker Pulled Chipotle Chicken Sliders for our Sunday afternoon football watching.

My Hispanic heritage comes from my dad. My mom is Italian so I didn’t learn to cook Mexican dishes until I got older and finally asked my family members to teach me different things. I’ve taken what I’ve learned from them and branched out with Mexican flavors and combined them to create different types of food. To get this meal underway I first had to make the sauce. The sauce is packed full of so much flavor!

Once I got the sauce made I placed the chicken breast and sauce in the slow cooker. Turned it on and let it do its thing.

Once the meat was fork tender I took it out and shredded it. I then added it back into the sauce and served on slider rolls.

Since this was football party food I made sure to have a lot of topping options for my family and some sides to enjoy with the sliders.

Ingredients
  1. 7 oz. can La Morena Chipotle Sauce
  2. 7 oz. can tomato sauce (Spanish style)
  3. 2 tbsp. green chiles
  4. 1/4. c. onion, diced
  5. 3 cloves garlic, minced
  6. 2 tsp. cumin
  7. 2 tbsp. Mexican oregano
  8. 1/2 tsp. pepper
  9. 1/2 tsp. salt
  10. 1 c. water
  11. 3 lbs. boneless, skinless chicken breast
  12. dinner rolls or slider buns
Instructions
  1. In a blender or food processor combine the first ten ingredients and blend.
  2. In a slow cooker add the chicken breast. Pour the sauce over the chicken and cook on low for 3-4 hours or until fork tender. Shred the chicken and then add back into the sauce. Serve on rolls with toppings of choice.

Celebrate Las Posadas this year with this Keto-Friendly Salsa Verde Avocado Chicken Salad.

 

Many nations, races and religions have different ways to celebrate the holiday season. A lesser known holiday in parts of the U.S. is Las Posadas. This is a nine day celebration that is celebrated in Mexico and in parts of Southwestern United States. Las Posadas originated in Spain and the word Posada translates to English to mean hotel or inn. It is a holiday that lasts nine days, from December 16th – 24th and is celebrated by Hispanics of the Catholic and Protestant religions. Family members are chosen to dress up as Joseph and Mary each night. The procession is lead by someone carrying a candle and a house is visited by the procession. Someone answers at the house and they sing a song and let the procession enter. The group then gathers around the nativity to pray. It is done for nine nights to represent the nine months of pregnancy. 

Las Posadas is a lovely holiday that brings religion back to focus into the Christmas season. With so many people only thinking of Santa and gifts it’s so easy to lose sight of what’s important and what the true reason for the season is for Christians. Spending time with family and friends and sharing food is a wonderful way to enjoy the holiday season for nine days. 

Celebrate Las Posadas this year with this Keto-Friendly Salsa Verde Avocado Chicken Salad.

This year to celebrate Las Posadas I wanted to create a meal that I could eat. I have been following a Keto diet since the beginning of November. For those of you that don’t know what a Keto diet is, it’s a low-carb high-fat diet. It’s been shown to drastically help with a number of health issues and has the added benefit of helping people lose weight. 

Celebrate Las Posadas this year with this Keto-Friendly Salsa Verde Avocado Chicken Salad.

I used HERDEZ® Salsa Verde for my inspiration for an easy Las Posadas recipe. I then bought the rest of my ingredients and made this Keto-Friendly Salsa Verde Avocado Chicken Salad. I used the HERDEZ® Salsa Verde to create both a marinade for the chicken and a dressing for the salad.

For the salsa verde marinade
  1. 1/2 c. HERDEZ Salsa Verde
  2. 2 tbsp. olive oil
  3. 1/2 tsp. pepper
For the chicken
  1. 1 c. salsa verde marinade
  2. 4 boneless, skinless chicken breasts
For the salsa verde avocado dressing
  1. 1 1/2 c. HERDEZ Salsa Verde
  2. 2 tbsp. olive oil
  3. 1 avocado, peeled and cubed
  4. 1/2 tsp. pepper
For each salad
  1. 1 1/2 c. spring mix lettuce
  2. 1 c. baby leaf spinach
  3. 6 grape tomatoes
  4. 1/4 c. shredded Mexican cheese
  5. 1 boneless, skinless salsa verde chicken breast, grilled and sliced
  6. 1/4 - 1/2 c. salsa verde avocado dressing
Instructions
  1. In a gallon sized zip top baggie add all of the marinade ingredients. Seal the bag and mix together. Add the chicken to the marinade in the zip top baggie. Seal the baggie and shake to coat. Place in the refrigerator and let chill for at least 30 minutes.
  2. Grill the chicken on a grill or grill pan until cooked through completely. Remove the chicken and place on a plate and cover with foil. Let sit 5-10 minutes. Slice the chicken into strips.
  3. In a blender or food processor combine all of the ingredients for the dressing. Pulse a few times until the avocado is no longer in large pieces. Do not over blend or it will become to liquidy.
  4. Add the salad ingredients (vegetables and cheese) to a bowl or plate. Top with a sliced chicken breast and then drizzle the salsa verde avocado dressing over it.

Pork Tamale Bites a Perfect Holiday Appetizer

Tamales are something that I always associate with the holidays. My grandma and great-aunt would each have tamales made at their houses for Christmas. We would visit both of them over the holidays and get our fill. It wasn’t until my grandma passed away that I realized I never asked her to teach me how to make them. Thankfully, her sister was more than willing to teach me how to make them. It involved a lot of her going you add this much of this and that much of that. Handfuls of things since she’d been making them for decades. I’ve now got it down pat though and at some point during the holidays I will hold a tamale making party and my family comes over. We cook, eat, drink, talk and just have a really great time hanging out with each other. At the end of the party everyone leaves with tamales to eat or freeze. To cut out all of that though I came up with these bite size variations, Pork Tamale Bites a perfect holiday appetizer..

To get the ball rolling on this appetizer I headed to my local Pete’s Fresh Market and picked up everything I would need to make the Pork Tamale Bites. I was able to get everything from the produce and meat to the canned La Morena Jalapeños and Maseca® Corn Flour.

The first thing that you need to do to make these Pork Tamale Bites is to cook the pork.

Once the pork has reached the point of falling apart you will need to shred it with two forks. This can be done well ahead of time and kept in the refrigerator or frozen.

Now, you can make the sauce for the pork. This is easy to do in your blender or food processor. Just blend until smooth. Once again, this can be done ahead of time.

Add the sauce to your meat and stir to coat.

Next up, it’s time to make the tamale masa. This is so easy to do and just takes a few minutes. When it’s done it should look like thick pancake batter.

Press the tamale masa into the cavities of a mini muffin/cupcake pan.

Add your meat in the sauce to the masa cavities.

When the cooking is almost complete sprinkle on some cheese and finish baking.

Let the cooked Pork Tamale Bites cool for about five minutes. Use a butter knife around the edge of the Pork Tamale Bites to loosen and then remove them from the pan.

For the meat
  1. 1 lb. pork chops
  2. 1 small Spanish onion, quartered
  3. 2 garlic cloves, smashed
  4. 1/2 tsp. black pepper
  5. 1 14 oz. can vegetable broth
For the sauce
  1. 1 8 oz. can tomato sauce seasoned with onion, garlic & cilantro
  2. 3 pickled jalapeno peppers, La Morena brand
  3. 1/4 tsp. pepper
  4. 1/4 tsp. Mexican oregano
  5. 1/8 tsp. cumin
For the tamale masa
  1. 2/3 c. masa (I use Maseca brand)
  2. 1/2 tsp. baking powder
  3. 1/2 tsp. salt
  4. 1/4 c. lard or vegetable shortening
  5. 5-6 oz. warm water
To assemble
  1. 1/2 c. Mexican cheese blend
For the meat
  1. Combine all of the ingredients for the meat portion in a pot and simmer covered until so tender it falls apart or can easily be shredded with forks.
For the sauce
  1. In a blender or food processor combine all of the ingredients for the sauce. Blend until smooth.
For the tamale masa
  1. In a mixing bowl combine the masa, baking powder, salt and 5 oz. of the water. Stir to combine. Thoroughly stir in the lard. Add the rest of the water if needed.
To assemble
  1. Preheat the oven to 350° and press the prepared tamale masa (about 1 1/2 tsp.) into the cavities of a mini muffin/cupcake pan. Fill the tamale masa cups with meat and sauce mix. Bake in the oven for 20 minutes. Remove from oven and sprinkle evenly with cheese. Bake for another 5 minutes. Remove from oven and let cool for 5 minutes. Use a butter knife around the edges to loosen and then remove from pan and plate.
Notes
  1. You can serve with a dollop of sour cream on the top.

Fall is here, the kids are back in school and the sports and activities have started up again. Now with my husband busy with a roll out at work, my oldest working two jobs and starting a business, the other kids activities and me working, volunteering and traveling, everyone’s schedules are all over the place! So it’s not often that we can all manage to squeeze in a meal together. So when we are all in the right place at the right time I have to make sure my meal is fast. Ingredients
  1. 6 oz. box Uncle Ben's® Long Grain and Wild Rice
  2. 2 c. cooked chicken, cubed
  3. 1/4 c. shallot, diced
  4. 1/4 c. onion, diced
  5. 1/4 c. celery, chopped
  6. 1/4 c. carrot, sliced
  7. 1/3 c. bell pepper, chopped
  8. 3 c. low-sodium chicken stock
  9. 1/4 tsp. pepper
  10. 1/4 tsp. thyme
Instructions
  1. Preheat oven to 350°.
  2. Combine the chicken, vegetables, rice, seasoning packet, pepper, thyme and chicken stock in a 13 x 9" pan and stir to combine. Cover the pan tightly with foil and bake for 35-45 minutes. It will be done when there is only a little liquid left.

As a mom I absolutely love cooking for my family but what I love even more than that is every chance I get to cook with my kids. Spending time with them while having the chance to create precious memories and great food is something I will treasure for always and that I hope they will too. For my Mother’s Day dinner this year I wanted pasta and my two youngest boys have been really into cooking lately. They want me to show them how to cook and bake everything that I make. I love that they are learning a new life skill, improving their math skills and learning the science behind food all at the same time. So this afternoon we made my favorite Spicy Meat Sauce with Barilla® Spaghetti.

Spicy Meat Sauce

This sauce has been an evolution over the years. It’s taken me playing around, experimenting and trial and error until it’s become what it is now. Making this sauce is just a few simple steps and so worth the effort. Both my husband and I love our pasta to have a little heat to it while still being edible for the kids. I know to a lot of people making your own sauce seems intimidating but it’s really easy to do and this recipe makes enough for 2-3 meals depending on the size of your family.

Ingredients
  1. 2 tbsp. olive oil
  2. 1 ¾ lbs. Hot Italian sausage, without casing
  3. 1/2 c. onion, finely chopped
  4. 2 oz. Pepperoni slices, quartered
  5. 3 garlic cloves, minced
  6. 2 6 oz. Cans of tomato paste
  7. 1 15 oz. Can of tomato sauce
  8. 1 28 oz. Can of crushed tomatoes
  9. 1 1/2 c. water
  10. 2 tbsp. Sugar
  11. 1 ½ tsp. Basil
  12. ½ tsp. Fennel
  13. 1 tsp. Italian seasoning
  14. ½ tsp. Oregano
  15. ½ tsp. Salt
  16. ¼ tsp. Pepper
  17. 1/2 tsp. Red pepper flakes
Instructions
  1. Add the olive oil in a large heavy bottomed pot or dutch oven. Brown the Italian sausage and onion over medium-high heat. Once the meat is almost brown and the onions are turning translucent drain the fat and ad the pepperoni and garlic. Continue stirring frequently so that the pepperoni and garlic do not burn. Cook for a minute or two. Add the tomato paste, tomato sauce and crushed tomatoes. Stir to combine. Add in the water, sugar and seasonings. Bring the sauce to a boil and then lower the heat to low and cover. Continue to cook on low for 2 hours stirring occasionally. If the sauce thickens up to much add another ½ cup of water.
  2. Use the sauce in your favorite pasta dish or store in air tight containers in your freezer until ready to use. Defrost frozen sauce in the refrigerator overnight and then heat through on the stove.

Ingredients
  1. 3 lbs. chuck roast or beef roast of choice trimmed of fat, cut into 5-6 pieces
  2. 4 cloves garlic, minced
  3. 1/2 c. Spanish onion, diced
  4. 4 tsp. cumin
  5. 2 tsp. Mexican oregano
  6. 1 tsp. salt
  7. 1 tsp. black pepper
  8. 1/4 tsp. ground cloves
  9. 1 tbsp. vegetable, canola or olive oil
  10. 3 tbsp. apple cider vinegar
  11. 3 tbsp. lime juice
  12. 1 7oz. can of chipotle chiles in adobo sauce
  13. 1 c. chicken broth
  14. 3 bay leaves
Instructions
  1. Place the trimmed and cut up beef into your slow cooker.
  2. In a blender or food processor pulse the garlic, onion, cumin, oregano, salt, pepper, cloves, oil, apple cider vinegar, lime juice and chipotle chiles in adobo sauce until fairly smooth. Pour the pureed mixture over the beef in the slow cooker. Pour in the broth and add the bay leaves. Stir to combine everything and to make sure all of the beef is coated. Cook on low for 6-8 hours or on high for 3-4 hours.
  3. Once the ,eat is done cooking shred it with two forks or using your stand mixer. Return the meat to the sauce in the slow cooker and turn the slow cooker to the keep warm or warm setting. Serve over rice or as tacos.

My paternal grandma was Mexican and I lived for holidays as a kid because that meant we got to eat tamales, chicken mole and whatever other food creations she made for the entire family. She didn’t do this all the time because you see my dad was one of twelve children. Now add-on grandchildren and great-grandchildren and the numbers were staggering. This truly is one of the memories I love most from each year growing up. The problem I had though happened when my grandma passed away and I realized I had never asked her to teach me how to make everything. It broke my heart thinking that I had missed that connection to her. Luckily for me though her sister, my great-aunt known to all of us as Auntie was willing to teach those of us that wanted to learn. She taught us how to cook meats, make tamales, how to make homemade tortillas and I can never thank her enough for it. These last few years though I have enjoyed experimenting with Mexican ingredients to incorporate them into more meals for my family. One such recipe is my Zesty Chicken and Refried Bean Tortas that I make with La Morena products.

What’s a torta you ask? The word torta is a Spanish, Italian and Portuguese word that has many culinary meanings. In Mexico, tortas are a type of sandwich that come in many forms. For my version I make a zesty paste marinade and coat chicken with it and then grill it up. I then garnish the torta with La Morena Refried Beans and other toppings. This is a particular favorite with my family and truly makes a great dinner or is perfect for watching your favorite sports team with some guests. You can set up a torta bar and let them all top their tortas any way they like.

To get all the supplies I needed to make this dish I headed to my local Pete’s Fresh Market and found everything I would need including my La Morena Refried Beans and Chipotle Peppers in Adobo Sauce.

Ingredients
  1. 7oz. can La Morena Chipotle Peppers in Adobo Sauce
  2. 1/2 of a 4oz. can fire roasted green chiles
  3. 1/4 of a large Spanish Onion, diced
  4. 4 cloves of garlic
  5. 2 tsp. cumin
  6. 1 tbsp. Mexican Oregano
  7. 1/2 tsp. pepper
  8. 1/4 tsp. salt
  9. 1/4 c. vegetable oil
Instructions
  1. Remove the chipotle peppers from the adobo sauceand place the peppers in a bowl. Press the peppers to remove as much of the sauce as possible. Discard or save the peppers for another recipe.
  2. In the bowl of a food processor or in a blender pulse together the adobo sauce, green chiles, onion, garlic and all of the dry seasonings. With the blender or food processor running slowly pour in the oil. Mix just until the oil is incorporated. This will be a thick marinade.
  3. Marinate 2-3 lbs. of chicken with 1/2 cup of the marinade. The remainder of the marinade can be stored in a baggie and frozen for later use.
Notes
  1. This is spicy and you are working with peppers. Be sure to wear gloves to protect your skin and avoid touching your face and eyes.

Ingredients
  1. 2-3 lbs. boneless, skinless chicken breast
  2. 1/2 c. Zesty, Mexican Chicken Marinade
  3. 4-6 Telera or Bolillo rolls
  4. La Morena Refried Beans
  5. Cilantro
  6. Spanish onion, diced
  7. Queso Fresco
Instructions
  1. In a large plastic baggie place the chicken and cover with the marinade. Seal the bag and be sure that all of the chicken is covered with the marinade. Place in the refrigerator for at least an hour.
  2. Preheat the grill or a grill pan. If using a grill pan spray with some olive oil. Cook the chicken until cooked completely through. Times will vary depending on the size of the pieces. While the chicken is cooking heat the refried beans. Dice the cooked chicken into cubes.
  3. Slice the rolls open and spread on some of the refried beans. Next add on your chicken and then top with cilantro, onion and queso fresco.

Mediterranean Chicken and Potatoes is the perfect meal for a family dinner or for feeding a crowd.

My absolute favorite meat to eat is chicken so even when trying to cook for a crowd I often skip the usual standards of turkey, ham or a pricey beef dish. Instead I opt for chicken and wow people with flavor. My family’s absolute favorite chicken dish I make is Mediterranean Chicken and Potatoes. It’s a great, hearty meal that will have your whole house smelling ah-mazing and the whole family drooling before the meal is even served. That’s one of the reasons I love serving this to guests. When they walk in the door they are greeted by a yummy aroma and know they are about to be served up a delicious meal that will make them think you worked super hard and spent a ton of money when in reality that couldn’t be further from the truth.

This is a dish that is easy to prepare and doesn’t keep you chained to the stove. Meaning, you put it in the oven and only need to go back a couple of times to add the chicken and check to see when it’s done. This allows you to work on preparing the rest of the edibles, doing any last-minute cleaning and getting yourself ready. While this dish may seem simple it is extremely flavorful with juicy, fork tender chicken and caramelized potatoes. You will definitely please even the pickiest of eaters. Honestly, the carmelized potatoes in this dish are one of my favorite foods to eat. The main recipe will serve 4-5 people but can easily be doubled or tripled for larger groups. I would make a bit extra though as this one will definitely have people asking for seconds and you will want to have some leftovers for lunch the next day.

Ingredients
  1. 1 lemon
  2. 1 ½ – 2 lbs. Boneless, skinless chicken breasts
  3. 1 tbsp oregano
  4. 1 ½ tsp. season salt
  5. ½ tsp. black pepper
  6. 1 ½ tsp. Italian seasoning
  7. 1 tsp onion powder
  8. 1 tsp garlic powder
  9. 6-7 yukon gold medium sized potatoes
  10. ½ c. water
  11. ½ c. olive oil
  12. ½ c. water
Instructions
  1. Juice one lemon into a bowl and set aside. Combine all of the seasonings in a bowl and set aside. Trim the chicken if needed and then place in a bowl. Add half of the lemon juice and seasoning mix. Massage into chicken and then place the bowl into the refrigerator.
  2. Cut the potatoes into quarters lengthwise and place in a 9x13 baking dish. Combine the olive oil, water, remaining lemon juice and seasoning mix and then poor over the potatoes. Stir together to thoroughly coat the potatoes.
  3. Place pan into cold oven and turn the heat to 475°. Bake potatoes for 30-40 minutes. Give the potatoes a stir and push the potatoes to the sides of the pan to make room for the chicken in the center. Add another ½ c. water to the pan.
  4. Add the chicken to the pan, making sure the top side of the chicken breasts are down. Return pan to oven and roast chicken until the side facing down is golden brown, 30-45 minutes depending on the size of the chicken breasts. Then turn the chicken over, turn the potatoes and turn off the even. Let the pan rest in the hot oven for another 15 minutes.
  5. Remove the pan from the oven and plate up the food on a serving platter. Pour pan juices over the the top and cover and let rest for a few minutes before serving.
