Root Beer Float Cupcakes a delicious take on cake and ice cream!

There is nothing like going to an ice cream shop and getting a float. There are tons of different kinds but the most common is of course the root beer float. If you are at a really good place they make their own root beer and ice cream in-house and you get that lovely foam on top when the two are combined. Mmmmm… now that is some heavenly stuff right there. So what could make the almighty root beer float even better? How about turning it into a root beer float cupcake?

NESCAFE Clasico Affogato – the Perfect Summer Pick Me Up

by Jennifer Wieland
NESCAFE Clasico Affogato

Summer is here! School is out and I am already wondering how much longer until school is back in session. I love my babies, don’t get me wrong but trying to work from home while entertaining the troops can try even the most patient of souls. That’s why getting together at night or on the weekends with friends for a mommy break is so important. I’m going to share with you my five favorite mommy break activities and how to make NESCAFE Clasico Affogato, the perfect summer pick me up.

Stepping away from work, family, home and everyday stresses is important for moms. You need that balance so that you feel more than just a wife, mom, employee, volunteer, housekeeper or whatever else takes up your days.

Top 5 Mommy Break Activities

Spa Time

You take care of everyone all week-long. Taking time to pamper yourself with your girlfriends is a great way to indulge while unwinding with your besties. Whether it’s a full on spa day or a simple mani/pedi it will go a long way to restoring you.

Shopping

This one is tricky. As a mom it’s so hard to shop for just you. To walk into a mall and say, ‘This is just me today and not the house, the kids or the hubby.” Take the time to focus on you and enjoy shopping with your girls who will be honest about how you look in the clothing you try on. Plus, get yourself a cute outfit, some sexy new shoes or some lingerie and your spouse will definitely be willing to let you to slip out with treats like that to show off.

Lunch or Dinner

I know this one seems a little odd. I mean you can just go out to eat with your family any old day of the week. What makes it different with your buddies is that they are in the same boat as you most likely. They want a break, the kids are driving them nuts, they want to rant about whatever annoying thing their husband is doing… You get the idea. You get to be you and just you, not mommy or wifey all while enjoying some good food. Added bonus, you get to head to that fancy little bistro or dessert bar that your hubby has no interest in going to dine at.

Movies

Sometimes you don’t need to talk to have a good time with your friends or to unwind. Sometimes you just want to sit in the dark, eat junk food, and watch a sappy. chick flick with someone who will totally appreciate it as much as you do.

Hit the Gym

The gym? Say what? I know that’s what you were thinking. The gym is a great way to unwind. Working up a sweat while exercising is not only great for your body but also your mental well-being. Add in talking to your bestie (a.k.a. your personal psychiatrist) and you will definitely be felling like yourself again when it’s over.

The important thing in all of this is finding what works for you and your friends to help restore a bit of the sanity that the summer, schools out insanity creates.

NESCAFE Clasico Affogato

If you don’t have time for a full outing invite your friends over to hangout and enjoy a cold, caffeine pick me up. NESCAFE Clasico Affogato is the perfect mommy treat!

NESCAFE Clasico Affogato

It’s a great combination of rich, cold, delicious vanilla ice cream and the mommy drink of survival, coffee.

Strawberry Cream Cheese Frosting Topped Lemon Ricotta Cake

by Jennifer Wieland
Lemon Ricotta Cake with Strawberry Cream Cheese Frosting #WayfairCakeOff

Lemon Ricotta Cake with Strawberry Cream Cheese Frosting #WayfairCakeOff

There’s a reason the line “Let them eat cake” is so famous! It’s because cake is something that people around the world can agree is a delicious treat that comes in an enormous variety of flavor combinations! Wayfair asked some us Wayfair Homemakers to take on cake in the first ever #WayfairCakeOff and the only requirement for us was that we had to use fruit in it. With all of the warm weather fruit selections are at their peak right now in the grocery stores so this was definitely a fun and easy recipe to work on. For my cake I decided to create a Strawberry Cream Cheese Frosting topped Lemon Ricotta Cake .

Lemon Ricotta Cake with Strawberry Cream Cheese Frosting #WayfairCakeOff

I love to pair citrus and berries. They always compliment each other beautifully and always make me think of warm, sunny days.

Lemon Ricotta Cake with Strawberry Cream Cheese Frosting #WayfairCakeOff

If you have never had a ricotta cake you are missing out! The sweetened ricotta sinks to almost the bottom of the cake and creates a pretty white stripe throughout the bottom. It also makes the cake unbelievably moist and delicious!

Lemon Ricotta Cake with Strawberry Cream Cheese Frosting #WayfairCakeOff

With the flavors of this cake making me think of sunshine, summer days and picnics in Tuscan countryside, I decided to keep the decorating to a sweet and simple for a more rustic look and only frosted the tops of each layer.

Lemon Ricotta Cake with Strawberry Cream Cheese Frosting #WayfairCakeOff

Even though the cake may have been decorated simply there was definitely nothing simple about how delicious this cake is! This Strawberry Cream Cheese Frosting Topped Lemon Ricotta Cake will wow whoever you serve it this summer with its summer fruit flavors. While the stripe of sweetened ricotta cheese will leave the cake moist and with a uniquely, delicious flavor!

Meyer Lemon Cupcakes a Perfect Spring Treat

by Jennifer Wieland
Meyer Lemon Cupcakes

Chicago springs can go from frigid temps and snow to sunny and summery with in a day or two. It’s something you never really get used to no matter how long you live here. That’s what makes these Meyer Lemon Cupcakes such a perfect spring treat! If it’s a nice sunny and warm or hot day you want a treat that reminds you of why the hot approaching months are so great! If it’s cold and snowy you want a treat that is bright and refreshing in flavor to make you realize the grey and cold will soon be a thing of the past.

Meyer Lemon Cupcakes

This past weekend we went to my parent’s house to celebrate my dad’s 64th birthday. It just so happened to be one of the bright, warm and sunny spring days that make spring awesome. I decided that I wanted to do a citrus cupcake for him. I had both lemons and Meyer lemons on hand. I opted for the Meyer lemons though because I love the unique flavor they have.

Meyer Lemon Cupcakes

If you’ve never had a Meyer lemon then you should try to find some. They are shaped like a lemon but the peel can be yellow or orange. Meyer lemons you see are unique combination of lemon and orange. It helps cut the sourness of a regular lemon down and adds a bit of sweetness.

Dessert Bagels for Breakfast Three Ways

by Jennifer Wieland
Dessert Bagels for Breakfast Three Ways #ThomasBreakfastTour
I was compensated for this post by Thomas’ but all thoughts and opinions are 100% my own.

I am a gal who likes her sweets! I know, I know, I know hard to tell on this site but that’s how I roll. I’m that mom who will let her kids eat cake once in a while for breakfast and justify it because hey, there’s eggs and milk in it. Since Thomas’® Bagels are a staple in my house I like to come up with fun and delicious ways to take them from a basic boring bagel and schmear to a delicious treat that’s more like a dessert bagel for breakfast.

Dessert Bagels for Breakfast Three Ways #ThomasBreakfastTour

The Chocolate Covered Strawberry Bagel

Quick, easy and delicious to put together this chocolate covered strawberry bagel not only tastes great but gives you a dose of healthy strawberries but a bump of caffeine with the chocolate sauce.

Dessert Bagels for Breakfast Three Ways - The chocolate covered strawberry bagel #ThomasBreakfastTour

To make toast a Thomas’ Bagel and then top with cream cheese, sliced strawberries and of course some chocolate sauce.

The Elvis Presley Bagel

This protein packed, sweet treat is a deliciously delightful way to start your day and will leave you saying, “Thank you! Thank you very much!”

Dessert Bagels for Breakfast Three Ways The Elvis Presley Bagel #ThomasBreakfastTour

To make toast your Thomas’ Bagel and then top with your favorite peanut butter, sliced bananas, a chocolate sauce drizzle and then a salted caramel drizzle.

The Apple Pie Bagel

What’s more American than apple pie? It is the quintessential American dessert but why stop it at just dessert. This bagel is the perfect slice of apple pie minus the pie crust and scoop of ice cream. Although, now that I think about it a scoop of ice cream would be awesome here!

Dessert Bagels for Breakfast Three Ways - The Apple Pie Bagel #ThomasBreakfastTour

To make toast your Thomas’ Bagel and then top with brown sugar and cinnamon cream cheese, thin slices of apple, a sprinkle of cinnamon-sugar and then a drizzle of caramel sauce.

Dessert Bagels for Breakfast Three Ways #ThomasBreakfastTour

Now that you have some fresh new ideas on how to make your breakfast feel more like a decadent dessert I want to let you know about my visit to the Thomas’ Toaster Truck when they stopped in Chicago during the Shamrock Shuffle on one of the stops of the #ThomasBreakfastTour recently.

Dessert Bagels for Breakfast Three Ways #ThomasBreakfastTour

My daughter and I had fun placing our order, checking out the inside of the giant toaster truck and all of the fun bagel and English muffin activities. She loved getting to play the toaster game and loves that she now has her own cutting board to use in her kitchen. The tables were all made to look like stacks of bagels and English muffins. They were so stinking cute! The event was a huge hit not only with us but with the runners that day who needed to refuel after their run.

Add in the soured milk mixture and beat on medium until well combined. This will take a few minutes and may still be a little lumpy. In another bowl stir together the flour, baking powder, baking soda and salt. Add the dry ingredients in three batches and scrape down the bowl as needed. Mix until just combined.
  3. Scoop dough onto lined baking pans and using the bottom of a cup dipped in flour press the dough down until it is about 1/4 of an inch thick. Bake for 8-10 minutes. The cookies will not even have started browning, don’t worry though they are ready to come out. Let cool for 2-3 minutes on pan and then transfer to a wire rack to finish cooling. Frost when completely cooled.
For the Frosting
  1. Cream the butter and vanilla in the bowl of a stand mixer fitted with the paddle attachment. Add the powdered sugar in three batches and be sure to thoroughly scrape down the sides and bottom of the bowl between each addition. Once combined add 1 tbsp. of the cream and mix. Add the second one if necessary. Add any food coloring at this point. Beat the finished frosting on high for 2-3 minutes until smooth and creamy. Use to frost cookies or cakes.
Notes
  1. These cookies are perfect for parties and holidays!

How to Make Irish Car Bomb Pudding Shots

by Jennifer Wieland
How to Make Irish Car Bomb Pudding Shots

The Irish are known for their aptitude in drinking but even some of us with some Irish blood flowing through our veins are what is commonly referred to as a lightweight when it comes to drinking. I fully own that I am a fruity, girly drinking mess. Shots of whiskey… No thanks, I’ll pass. A pint of Guinness Beer? Are you out of your mind? Something with booze that doesn’t seem like booze? Now, my curiosity is peaked. So how about some Irish Car Bomb Pudding Shots? Oh yeah! Now that’s my speed.

How to Make Irish Car Bomb Pudding Shots

Jello shots have been around for quite a long time now and are always wildly popular at parties! They always add some fun and tasty whimsy to a party. Now imagine that with pudding instead and needing a spoon to eat a creamy treat that is packed full of some kick.

How to Make Irish Car Bomb Pudding Shots

These Irish Car Bomb Pudding Shots are easy to make, have two different puddings, three types of booze and chocolate sauce to really make these the talk of your get together.

How to Make Irish Car Bomb Pudding Shots

Taking my cue from my Irish Car Bomb Cupcakes I decided to use the same flavors and make them mini and delicious for some St. Patrick’s Day fun. The plays of alcohol, chocolate and vanilla really makes for a tasty treat that packs quite the little punch.

Awe-Inspiring Cherry Pie Bars

by Jennifer Wieland
Awe-Inspiring Cherry Pie Bars to celebrate National Cherry Month with Wayfair.com

This month my friends at Wayfair are celebrating National Cherry Month. To make it even more fun they asked several of us bloggers to come up delicious new cherry recipes or to share some of are an absolute favorite with our readers and them. I was so excited to be invited because I have extolled my passion for cherries in other posts on the blog. So what delicious little bit of yum am I going to share? Well today I am pleased to bring you my awe-inspiring cherry pie bars!

Awe-Inspiring Cherry Pie Bars to celebrate National Cherry Month with Wayfair.com

What’s an awe-inspiring cherry pie bar you ask? Where to begin, where to begin? I love crumb topped cherry pie, cherry cobbler and brownies!

Awe-Inspiring Cherry Pie Bars

I’m not a fan of chocolate and cherries together though. This recipe is a brownie base but rather than chocolate it’s got a caramel, cinnamon flavor and oh goodness is it heavenly!

Awe-Inspiring Cherry Pie Bars

While these are good in their own right or can be used in so many different ways I took them to another level with cherries!

Awe-Inspiring Cherry Pie Bars

I took these brownies and turned them into an almost slab pie. I topped them with my homemade cherry pie filling. Why stop there though? No, no, no, I went and made it even more awesome by topping it all with an Ameretti crumb topping.

Awe-Inspiring Cherry Pie Bars

The end result? MMM, MMM, MMM, these Cherry Pie Bars are so good!

Amazingly Awesome and Easy Irish Car Bomb Cupcakes

Amazingly Awesome and Easy Irish Car Bomb Cupcakes - Perfect for St. Patrick's Day

Valentine’s Day is done and over so all the flowers, hearts, red and pink are out the window and it’s now time to bring out the green shamrocks and booze to celebrate St. Patrick’s Day! To kick off all the glorious fun associated with the celebration of this Irish holiday I decided to make some Irish Car Bomb Cupcakes and to make them even more wonderful they are amazingly awesome and easy to do. These cupcakes are rich, decadent and delicious and have three layers of boozy flavor.

Amazingly Awesome and Easy Irish Car Bomb Cupcakes - Perfect for St. Patrick's Day

To make these little treats of St. Patrick’s Day deliciousness easy to do I started out with a box of devil’s food cake mix. To keep it on the track of simplicity I skipped the eggs, oil and water the mix calls for and just added some Guinness to it. That’s right people, cake mix and beer and you have ready to go cake batter!  Could it get any easier?

While the cupcakes are baking you can whip up the chocolate ganache for the cupcake centers. The ganache is flavored with Jameson Whiskey and makes for a truffle like center to the cupcake. Oh yeah, that’s going to wow your friends and family!

Next comes the frosting. I opted to go with a cream cheese frosting to really take the richness of these to an even higher level! The cream cheese paired with Bailey’s Irish Cream really makes it taste like you’re enjoying a cheesecake taste to the cupcake. Now, combine all of these flavors together and you are going to love it!
