Chicago springs can go from frigid temps and snow to sunny and summery with in a day or two. It’s something you never really get used to no matter how long you live here. That’s what makes these Meyer Lemon Cupcakes such a perfect spring treat! If it’s a nice sunny and warm or hot day you want a treat that reminds you of why the hot approaching months are so great! If it’s cold and snowy you want a treat that is bright and refreshing in flavor to make you realize the grey and cold will soon be a thing of the past.

This past weekend we went to my parent’s house to celebrate my dad’s 64th birthday. It just so happened to be one of the bright, warm and sunny spring days that make spring awesome. I decided that I wanted to do a citrus cupcake for him. I had both lemons and Meyer lemons on hand. I opted for the Meyer lemons though because I love the unique flavor they have.

If you’ve never had a Meyer lemon then you should try to find some. They are shaped like a lemon but the peel can be yellow or orange. Meyer lemons you see are unique combination of lemon and orange. It helps cut the sourness of a regular lemon down and adds a bit of sweetness.

For the cake
  1. 1 18.25 oz. box white cake mix
  2. 1/2 c. butter, very soft
  3. 3 eggs
  4. 3/4 c. water
  5. 1/4 c. Meyer lemon juice
  6. 1 Meyer lemon, zested
For the frosting
  1. 1 c. butter, softened
  2. 1 Meyer lemon, zested
  3. 4 c. confectioner's sugar
  4. 2 tbsp. Meyer lemon juice
  5. 2-3 tbsp. heavy whipping cream
For the cake
  1. Preheat oven to 350° and line a cupcake pan with cupcake liners.
  2. In a large mixing bowl combine all of the ingredients for the cake. Mix on low speed until combined. Increase speed to medium and continue to mix for two minutes.
  3. Scoop the batter into the prepared cupcake liners.
  4. Bake for 18-23 minutes or until a toothpick inserted in one comes out clean.
  5. Let cool in pan for five minutes and then remove the cupcakes from the pan and let them finish cooling on a wire rack.
For the frosting
  1. In the bowl a stand mixer fitted with the paddle attachment cream the butter and Meyer lemon zest together.
  2. In small batches stir in the confectioner's sugar. Scrape down the sides of the bowl between each addition.
  3. Add the Meyer lemon juice and stir to combine.
  4. Add 2 tbsp. of heavy whipping cream and beat on low to combine. Once combined increase the speed to high and beat for five minutes. If the frosting is to thick add another tbsp. heavy whipping cream. Beat on high for another five minutes or until light and fluffy.

My daughter and I had fun placing our order, checking out the inside of the giant toaster truck and all of the fun bagel and English muffin activities. She loved getting to play the toaster game and loves that she now has her own cutting board to use in her kitchen. The tables were all made to look like stacks of bagels and English muffins. They were so stinking cute! The event was a huge hit not only with us but with the runners that day who needed to refuel after their run.

Ingredients
  1. Vegetable or canola oil for cooking
  2. 3 c. rotisserie chicken, shredded
  3. 1 tsp. onion powder
  4. 1 tsp. garlic powder
  5. 1/2 tsp. cumin
  6. 2 tbsp. cilantro, chopped
  7. 1/4 tsp. pepper
  8. 1/4 tsp. salt
  9. 1/2 c. HERDEZ® Brand Salsa Verde
  10. 12-16 corn tortillas
Instructions
  1. In a large bowl combine the chicken, seasonings, spices and salsa verde. Place a heaping spoonful of meat onto a tortilla. Roll the tortilla and use a toothpick to hold it closed.
  2. Fill a large pot with enough oil so that it's 2" deep. Heat the oil to 375°.
  3. Using tongs, carefully place one of the rolled flautas into the oil. Continue to hold the flauta with the tongs for a minute. Finish frying and then move the flautas to a paper towel lined plate.

Yeah, my 11-year-old is obsessed with them and while they are delicious did you know that it’s ridiculously easy to make them yourself? Even better though is that they are even tastier than the store-bought ones! Score big points in your house with these Soft Frosted Sugar Cookies!

The cakey cookie dough comes together easily and bakes up to pale perfection in just minutes. 

Soft Frosted Sugar Cookies

No chemical, preservative filled cookies and frosting in these soft frosted sugar cookies. Basic buttercream can be flavored how you want to amp up the flavor of the finished cookies. Tint the frosting with a seasonal color of your choice or leave the frosting in its dye free, natural state. Add the sprinkles of your choosing to really make these yummy bites of happiness into some kid-friendly eye candy.

For the Cookies
  1. 1/2 c. butter, softened
  2. 1 c. sugar
  3. 2 eggs
  4. 3/4 tsp. vanilla
  5. 6 tbsp. milk + 1 tbsp. white vinegar, combined
  6. 3 c. all-purpose flour
  7. 1 1/2 tsp. baking powder
  8. 1/2 tsp. baking soda
  9. 1/2 tsp. salt
For the Frosting
  1. 1/2 c. butter , softened
  2. 1 tsp. vanilla or other extract of choice
  3. 2 c. powdered sugar, sifted
  4. 1-2 tbsp. heavy whipping cream
  5. food coloring (optional)
For the Cookies
  1. Preheat oven to 350° and line baking sheets.
  2. In the bowl of a stand mixer fitted with a paddle attachment cream the butter, sugar, eggs, vanilla on medium-high speed for a minute or two. Add in the soured milk mixture and beat on medium until well combined. This will take a few minutes and may still be a little lumpy. In another bowl stir together the flour, baking powder, baking soda and salt. Add the dry ingredients in three batches and scrape down the bowl as needed. Mix until just combined.
  3. Scoop dough onto lined baking pans and using the bottom of a cup dipped in flour press the dough down until it is about 1/4 of an inch thick. Bake for 8-10 minutes. The cookies will not even have started browning, don’t worry though they are ready to come out. Let cool for 2-3 minutes on pan and then transfer to a wire rack to finish cooling. Frost when completely cooled.
For the Frosting
  1. Cream the butter and vanilla in the bowl of a stand mixer fitted with the paddle attachment. Add the powdered sugar in three batches and be sure to thoroughly scrape down the sides and bottom of the bowl between each addition. Once combined add 1 tbsp. of the cream and mix. Add the second one if necessary. Add any food coloring at this point. Beat the finished frosting on high for 2-3 minutes until smooth and creamy. Use to frost cookies or cakes.

Ingredients
  1. 1 3.4 oz. box of chocolate instant pudding
  2. 1 c. milk
  3. 3/4 c. Guinness Draught
  4. 4 oz. Cool Whip
  5. 1 3.4 oz box of French vanilla instant pudding
  6. 1 c. milk
  7. 3/4 c. Bailey's Irish Cream
  8. 4 oz. Cool Whip
  9. 1/3 c. chocolate sauce
  10. 2 tsp. Jameson Whiskey
Instructions
  1. In a large mixing bowl stir together the chocolate pudding mix, Guinness and milk. Once combined fold in the Cool Whip.
  2. In another large mixing bowl stir together the french vanilla pudding mix, Bailey's Irish Cream and milk. Once combined fold in the Cool Whip.
  3. In a small bowl stir together the chocolate sauce and whiskey.
  4. Place each pudding mix into a large plastic baggie. Snip one of the corners on each bag and squeeze equal amounts of each pudding flavor into shot glasses. Spoon some of the chocolate sauce over the top.
  5. Chill, serve and enjoy!

To make it even more fun they asked several of us bloggers to come up delicious new cherry recipes or to share some of are an absolute favorite with our readers and them. I was so excited to be invited because I have extolled my passion for cherries in other posts on the blog. So what delicious little bit of yum am I going to share? What’s an awe-inspiring cherry pie bar you ask? Where to begin, where to begin? I love crumb topped cherry pie, cherry cobbler and brownies!

I’m not a fan of chocolate and cherries together though. This recipe is a brownie base but rather than chocolate it’s got a caramel, cinnamon flavor and oh goodness is it heavenly!

While these are good in their own right or can be used in so many different ways I took them to another level with cherries!

I took these brownies and turned them into an almost slab pie. I topped them with my homemade cherry pie filling. Why stop there though? No, no, no, I went and made it even more awesome by topping it all with an Ameretti crumb topping.

For the almond brownies
  1. 1/2 c. salted butter
  2. 2 c. light brown sugar, packed
  3. 1/2 tsp. cinnamon
  4. 2 eggs, beaten
  5. 1 c. flour
  6. 1/2 c. almond flour
  7. 1 tsp. baking powder
For the topping
  1. 4 c. cherry pie filling
  2. 1/2 c. Amaretti cookies, crushed
  3. 2 tbsp. flour
  4. 2 tbsp. brown sugar
  5. 1/4 tsp. cinnamon
  6. 3 tbsp. butter, melted
For the almond brownies
  1. Preheat oven to 350° and grease a 9" x 13" pan with baking spray.
  2. In a large saucepan over medium heat melt the butter. Add the light brown sugar and cinnamon and stir to combine. All of the liquid should be absorbed. Stir until you notice liquid bubbling around the edges. Remove from heat and pour into a large mixing bowl.
  3. Stir in the beaten eggs until completely incorporated.
  4. Add the flours and baking powder and stir to combine.
  5. Press the mixture into the 9x13 pan evenly and place in the oven.
  6. If topping: Bake for 25 minutes or until just set. Remove from the oven and let cool for 5 minutes. While it is cooling make the amaretti crunch topping if using.
  7. If not topping: Bake for 30-35 minutes until fully set.
For the topping
  1. In a bowl, stir together the crushed Amaretti cookies, flour, brown sugar and cinnamon with a fork. Pour in the melted butter and stir until all of the dry ingredients are moistened.
  2. Evenly spoon the pie filling onto the brownies. Sprinkle the amaretti crunch topping on the pie filling.
  3. Bake in the oven for 10 minutes.
  4. Allow the brownies to completely cool before serving.

Valentine’s Day is done and over so all the flowers, hearts, red and pink are out the window and it’s now time to bring out the green shamrocks and booze to celebrate St. Patrick’s Day! To kick off all the glorious fun associated with the celebration of this Irish holiday I decided to make some Irish Car Bomb Cupcakes and to make them even more wonderful they are amazingly awesome and easy to do. These cupcakes are rich, decadent and delicious and have three layers of boozy flavor.

To make these little treats of St. Patrick’s Day deliciousness easy to do I started out with a box of devil’s food cake mix. To keep it on the track of simplicity I skipped the eggs, oil and water the mix calls for and just added some Guinness to it. That’s right people, cake mix and beer and you have ready to go cake batter!  Could it get any easier?

While the cupcakes are baking you can whip up the chocolate ganache for the cupcake centers. The ganache is flavored with Jameson Whiskey and makes for a truffle like center to the cupcake. Oh yeah, that’s going to wow your friends and family!

Next comes the frosting. I opted to go with a cream cheese frosting to really take the richness of these to an even higher level! For the cake
  1. 1 box devil's food cake mix
  2. 1 11.2 oz. bottle of Guinness Draught
For the ganache
  1. 8 oz. bittersweet chocolate, chopped
  2. 2/3 c. heavy whipping cream
  3. 1 tbsp. butter, softened
  4. 2 tbsp. Jameson Whiskey
For the frosting
  1. 1/2 c. butter, softened
  2. 8 oz. cream cheese, softened
  3. 4 c. powdered sugar
  4. 2-3 tbsp. Bailey's Irish Cream
For the cake
  1. Preheat oven to 350° and line cupcake pans with cupcake liners.
  2. In a large mixing bowl combine the cake mix and the Guinness. Mix on low speed for thirty seconds until combined and then increase speed to medium and mix for two minutes,
  3. Scoop the batter into the cupcakes liners and bake for 18-23 minutes or until they bounce back when pressed on the top. Cool in the pan for five minutes then remove and finish cooling on a wire rack.
For the ganache
  1. Place the chopped chocolate into a heat safe bowl.
  2. Heat the cream in a saucepan or in the microwave and bring to a simmer.
  3. Pour the heated cream over the chocolate and let sit for a few minutes.
  4. Add the butter and whiskey and stir until smooth.
  5. Let the ganache sit until soft but firm enough to work with.
For the frosting
  1. Cream the butter and cream cheese together.
  2. Add the powdered sugar one cup at a time mixing on low in between each addition.
  3. Stir in the Bailey's Irish Cream and mix on low. Once combined increase the speed to high and mix for five minutes until light and fluffy.
To assemble the cupcakes
  1. Core out the center of the cupcake with a cupcake corer, paring knife or the bottom of a pastry tip.
  2. Scoop about a tablespoon of ganache and place into the hollowed cupcake.
  3. Top with the frosting and refrigerate until ready to serve.

Pound cake is a staple in my house. Among my family is is hands down the most requested dessert. I grew up with a dad who has a love for pound cake like you would not believe. When I was young I didn’t get the whole draw to pound cake it took a long time for me to emerge as a pound cake fan girl. Now I like to experiment and do different takes and twists on my favorite basic pound cake recipe. To bring out the Irish from my maternal grandmother I just had to break out some Jameson Whiskey and make it into an utterly irresistible orange whiskey pound cake.

I’ve only drank whiskey once in my life It’s a moment I won’t ever forget. I’m a drinking wuss! Whiskey burns going down, made me cough and my eyes water. I know I’m never going to be that uber cool chick that can shoot whiskey so instead I make myself cooler by boozing up an awesome, freaking cake!

Utterly Irresistible Orange Whiskey Pound Cake

The whiskey in the cake adds a smoky undertone that pairs really well with the brightness of flavor that you get from the orange juice and zest. Pair the cake slices with some melted orange marmalade drizzled over the top and some whipped cream to finish it off. Serve with an Irish coffee or a shot depending on the crowd that your sharing it with.

Ingredients
  1. 1 c. salted butter, softened
  2. 3 c. sugar
  3. 1 orange zested
  4. 6 large eggs
  5. 3 c. all-purpose flour
  6. 1/2 tsp. baking powder
  7. 1/2 c. heavy whipping cream
  8. 1/3 c. Jameson Whiskey
  9. 3 tbsp. fresh squeezed orange juice
Instructions
  1. In a large bowl cream together the butter, sugar and orange zest until light and fluffy. Add the eggs one at a time, mixing until completely incorporated. In another bowl mix together the flour and baking powder. In a measuring cup combine the cream, whiskey and orange juice. Alternating between the wet and dry ingredients add them to the butter and egg mixture. Make sure to start and end with the dry ingredients.
  2. Thoroughly spray a bundt pan with baking spray and pour the batter into the prepared pan. Place the pan into the cold oven. Turn the oven to 325° and bake the cake for one hour and fifteen minutes without opening the door. When time is up check the cake. If done remove from the oven. If it still needs more time, let it continue to finish baking.
  3. Let the cake cool in the pan for 15 minutes and then invert onto a plate, wire rack or cake plate. Serve warm or cool completely.

With the New Year last month I like many decided to work on getting healthy and making better choices where my food was concerned. With numerous medical problems and being overweight I researched what would be best to not so much lose weight but get my health on track and if I got lucky maybe lose weight as well. Through friends and online research I decided to try the LCHF or Keto diet. This was a huge change for my carbohydrate, sugar junkie self as evidenced by my copious dessert recipes on this blog alone. I have found that I REALLY love this way of living but once in a while you just want some good old-fashioned comfort food. So, with no bread or pasta I decided to make myself some tender, delicious LCHF Italian Meatballs. I get all of the comfort of a meatball sandwich or a big bowl of pasta without all of the carbs to sabotage me.

To make these meatballs LCHF friendly I booted out the bread and breadcrumbs from traditional meatballs and loaded them with delicious fat from loads of dairy. Then frying them in oil just adds more of that wonderful fat! Then let them finish cooking and absorb great flavor in Ragu Light Tomato & Basil No Sugar Added Pasta Sauce to make it better.

It’s nice to know that you can get a jar pasta sauce from Ragu that caters to those that are trying to eliminate sugar from their lives. Did you also know that Ragu sauces are slowly simmered to add layers of flavor. There is no artificial flavors and no high fructose corn syrup. Ingredients
  1. 1 lb. grass-fed ground beef
  2. 1/4 c. whole milk ricotta cheese (well drained)
  3. 1/4 c. Parmesan cheese
  4. 2 tbsp. heavy whipping cream
  5. 2 tsp. garlic paste
  6. 1 tsp. onion powder
  7. 1 tsp. Italian seasoning
  8. 1/2 tsp. pepper
  9. 2 tbsp. olive oil
  10. 2 c. Ragu Light Tomato & Basil No Sugar Added Pasta Sauce
Instructions
  1. Combine the meat, cheeses, cream, garlic paste and seasonings in a bowl. Mix by hand until well combined. Do not over mix.
  2. Heat the oil in a large pot or dutch oven over medium-low heat. Once the oil is hot use a cookie scooper to scoop the meat mixture out and roll into balls. Brown the meatballs. Be careful because these meatballs are more delicate since they are made with dairy instead of bread or breadcrumbs. Once the meatballs are browned on all sides pour the sauce into the pot. Stir to combine and then lower the heat to low and cover the pot.
Notes
  1. You can let the meatballs simmer in the entire jar but remember you don't want to use more than 1/4 of the sauce while eating to keep your carbs in check.
