I love the smells and tastes of fall and nothing brings those flavors and smells together like Thanksgiving. With all of the prep and cooking that goes into the perfect Thanksgiving meal it’s nice to have some things that don’t need to take up valuable oven space. It’s also nice when you can get all hands on deck and have the kids help with making some of the food. That’s what makes my entry into the second annual Wayfair Battle of the Pies entry perfect! My No Bake Caramel Apple Mini Pies are an easy dessert that can be made ahead of time and simple enough for the kids to make with supervision.

These No Bake Caramel Apple Mini Pies are fun, tasty and so much lighter than some more traditional Thanksgiving pies. After such a large meal it’s nice to have a lighter dessert choice.

This recipe is easy to put together especially if you get store-bought mini graham cracker pie crusts in tins. If you wanted to make your own graham cracker crusts you could and just use these Mini Pie Dishes that you can find on the Wayfair.com website.

Since my  two youngest kids are all about helping me bake and cook in the kitchen I like coming up with recipes that they can do the bulk or all of the work. They love being able to tell people they made something! They really like recipes where they get to whisk. I guess there’s just something fun and exciting about going as fast as you can with a mixing bowl, some ingredients and a tool that looks like a balloon. I’ve found over the years that getting my kids mini or kid sized tools makes it easier for little hands to help.

To take my No Bake Caramel Apple Mini Pies to a whole other level of fun and to give the kids yet another fun project to work on, I purchased some disposable appetizer forks. I then picked up some Washi Tape in a fall color. We then wrapped the handles of the forks in the Washi Tape and then put the forks into the center of the No Bake Caramel Apple Pies so that they look like sticks. This really plays up the whole caramel apple take on these mini pies.

Ingredients
  1. 1 3.9 oz. package of instant vanilla pudding
  2. 1 1/2 c. cold milk
  3. 1 .74 oz. packet of spiced apple cider
  4. 1 c. whipped topping
  5. 6 mini graham cracker pie crusts
  6. 1/2 c. caramel ice cream topping
  7. 1/4 c. chopped peanuts (optional)
Instructions
  1. In a large mixing bowl whisk together the pudding mix and the milk for two minutes.
  2. Pour the packet of spiced apple cider into the pudding and fold in.
  3. Spoon half of the pudding mixture into the mini graham cracker pie crusts.
  4. Fold the whipped topping into the remaining pudding.
  5. Spoon the pudding and whipped topping mixture into the mini graham cracker pie crusts.
  6. Refrigerate for three hours.
  7. Just before serving slightly warm the caramel ice cream topping so that you can work with it. You do NOT want it at all hot.
  8. Using a spoon or small offset spatula spread the caramel onto the tops of the pies. Do NOT spread the caramel to the edge as it will spread on it's own.
  9. Sprinkle the pies with chopped peanuts if desired.
Notes
  1. To truly make your pies look like caramel apples insert disposable appetizer forks into the center of each pie. To make the forks festive wrap the handles in Washi tape.

Ingredients
  1. 1 18 oz. Progresso Stew pouch
  2. 1 box refrigerated pie crust
Instructions
  1. Preheat oven to 375° and get out a baking sheet and two mini pie tins.
  2. Unroll the refrigerated pie crust. Place a plate that is a few inches larger than the pie tins on the pie crust and cut around it. Do this twice. Place the two pie crust circles into the pie tins. Roll the remaining pie crust together and cut out two more circles. Fill the pie crusts in the tins with the Progresso Stew dividing it in half between the two. Top the pies with the other pie crust circles and pinch the the edges to seal and flute. Trim off any extra crust and cut slits in the top.
  3. Place the prepared pot pies on the baking sheet and bake for 35-45 minutes.

I love sweet treats that can be used as not only dessert but that you can easily use any leftovers for breakfast the next morning. I don’t know about you but eating dessert for breakfast makes me feel like a kid again. Like I have pulled something over on society’s rules by finding away to take dessert from an after dinner treat (if you are lucky enough to get one) to something you can munch on for a quick breakfast the next day. These super easy individual apple tarts completely fit that description for me and even better if an older adult catches you eating one for breakfast they won’t complain not unless there aren’t anymore for them to enjoy right along with you.

Next to cherries, apples have to be my favorite fruit to bake with. They are inexpensive, last a long time and are readily available year round. My favorite apples to eat and bake with are Granny Smith apples. I love the tart, crispness of them. That tart, crispness is what makes them the perfect baking apple. Most apples turn mushy or almost dissolve into nothingness when baked so to make a successful apple dish you always need to work with a crisp apple that will hold up to the heat of the oven.

If you are serving these apple tarts to guests for dessert top them with a dollop of whipped cream of a scoop of vanilla ice cream with a caramel drizzle. If you are eating them for breakfast then all you need is to dust them with powdered sugar and it will be a delicious apple danish like treat for you and whoever you decide to share with.

Ingredients
  1. 1 sheet set of puff pastry
  2. 1 tbsp. Butter, melted
  3. ½ lemon
  4. 3 medium Granny Smith apples
  5. 2/3 c. dark brown sugar
  6. ½ tsp. Cinnamon
  7. powdered sugar
Instructions
  1. Preheat oven to 400º and line a baking sheet with parchment paper or silicone mat.
  2. Defrost your sheet of puff pastry and unfold. Cut sheet into six equal pieces. Place them on the prepared baking sheet and brush with the melted butter.
  3. Peel and core the apples. Cut the apples into thin slices. You can use a mandolin or an apple peeler, corer machine if you have one. Place the apples in a bowl and squeeze the juice from the half lemon over the apple slices. Toss together to coat all of the apples. Add the dark brown sugar and cinnamon to the bowl with the apples and use a spoon to stir together. The sugar will begin to liquify and coat the apples. Arrange the apples in a row on each piece of puff pastry so that they overlap each other. Spoon the juice over the apples.
  4. Bake in the oven for 25-30 minutes or until the puff pastry has risen, is golden brown and the sugar has started to caramelize. Remove from oven and let cool on the pan for 5-10 minutes. Dust with powdered sugar and serve warm.

Cherry season has been in full swing and I have been buying them like crazy because where I live there have been a lot of really great deals in the last few weeks and because cherries are hands down, without a doubt one of my absolute favorite produce items of the year. Since cherry season is pretty short and you can’t buy them year round without passing out from the price I have been going crazy and buying all the cherries I can. Some of the deep red beauties I have been freezing and others the kids and I have been eating by the handfuls as snacks. I like freezing cherries because then I can use them later in the year when I want to make a pie, cobbler or even my almond crunch topped cherry brownies. All of those require cherry pie filling and if you have ever bought a can of cherry pie filling you know that it tends to have a lot more of the cherry gel than actual chunks of cherry in the lower cost ones and the more expensive brands that have lots of cherries in them can be pretty expensive. Luckily though to make your own Simple Homemade Cherry Pie Filling is a snap, tastes utterly amazing and is pretty quick too.

Making your own cherry pie filling is simple. You just need to start off with some pitted, tart cherries.

You just have to cover the pan with a lid and let those babies cook until they are floating in a pool of their own cherry juice.

Next you just need to stir in the only other two ingredients to the whole process, sugar and corn starch.

Don’t worry if the color looks a little off and pale. It will change and look like it should as the juice begins to thicken.

Seriously, once this is done and ready to use I dare you to try to not just eat it right out of the pan. It’s that good! Plus look at all of those cherries. You don’t get cherries to gel ratio like that in canned pie fillings and all it takes is like ten minutes to make. If you are going to go through the effort to make a pie, cobbler or crisp you might as well take the few extra minutes and make the filling from scratch.

Ingredients
  1. 4 c. fresh or frozen tart cherries
  2. 1 c. sugar
  3. 1/4 c. corn starch
Instructions
  1. In a large saute pan add the cherries, cover and heat over medium-low heat. Once the cherries lose enough juice that they are sitting in juice that covers the bottom halves of the cherries then remove the pan from the heat. In a small bowl stir together the sugar and corn starch. Pour the dry mixture into the cherries and stir to combine. Return the pan to the heat and continue to cook over low heat until the liquid has thickened up, stirring frequently. Remove form heat and let cool.
Notes
  1. If the mixture becomes to thick add some water and if it doe snot thicken up enough then add a little bit more corn starch.

Strawberry season is now upon us and I couldn’t be happier! It is probably the most favorite fruit in our house and luckily can be frozen for year round consumption. This means you can easily enjoy this tasty little fruit all year round and easily make this Strawberry Creme Pie recipe any time you have a hankering for some summery good sweets but don’t want to spend a ton of time in the kitchen.

Light, creamy and oh so perfect for a warm summer night, this Strawberry Creme Pie is sure to hit the spot and be an absolute crowd pleaser. With only five ingredients and no baking necessary it makes it even better. That’s right, no hot kitchen for you but all the tasty goodness of a dessert that was much harder to make. The other great thing is that this pie can be made well in advance and frozen. Then when you are ready to eat it all you need to do is pop it out of the freezer and let it defrost some and then it’s ready to eat.

Before we get to the recipe I thought I would share some fun strawberry facts with you…

  • Strawberries are the only fruit with their sides on the outside and the seeds themselves are also considered a fruit too.
  • Strawberries are not actually berries but bananas are and strawberries are actually members of the rose family.
  • You should never wash fresh strawberries until ready to use. Washing them actually promotes spoiling.
  • If you aren’t a fan of carrots don’t worry, because strawberries do help your eyes by preventing cataracts and eye degeneration.
  • A handy tip for warm weather: strawberry juice combined with honey rubbed onto the skin can help relieve inflammation and sunburn. After you have rubbed it into the skin thoroughly just rinse it off with warm water and some lemon juice.

Ingredients
  1. 1 Graham Cracker Pie Crust
  2. 1 3.4 oz. Box of Jell-O Strawberry Creme Instant Pudding
  3. 1 3/4 c. Milk
  4. Whipped Topping (regular sized tub)
  5. 1/2 c. Strawberries, chopped and more for garnish
Instructions
  1. Unwrap the pie crust and set it aside.
  2. In a large bowl whisk together the pudding mix and the milk for two minutes. It should be somewhat thick. Place in the refrigerator for five minutes. Fold in shopped strawberries and 1 c. of whipped topping. Spread evenly into the pie crust and freeze for 15-20 minutes. Top with the remaining whipped topping and spread evenly. Add strawberries for garnish.
  3. Refrigerate or freeze until ready to serve.
Notes
  1. I have the most luck finding the Jell-O Strawberry Creme Pudding at Walmart Superstores.

It’s no secret that I love shopping at Mariano’s! It’s unlike any other grocery shopping experience I have ever had with departments and foods not available at any stores near me. I can wander there for hours whenever I go, browsing through all of the departments to see what new things await me. I have noticed that Mariano’s makes people want to let the foodie in them have a free reign to eat and create. It should definitely be awarded the title Top Grocery Store Chicago for how different it is from the other big chains. There is so much there to inspire you to be creative with food and now even if you are looking for more inspiration and ideas they have the Mariano’s Tastemakers series on their website.

The Mariano’s Tastemakers series has top Chicago chefs and gourmands helping you to make the most of your shopping and cooking with Mariano’s. There are a ton of videos and recipes for you to view. My favorite was pastry chef Sarah Jordan. Being a baker I was just drawn to her and I remembered her from an article I had read about her last year. She likes to blend savory and sweet together. I like that and have done that myself a few times but I still like to see and try other ideas. I like taking the whole concept of pairing things together that normally don’t get matched with each other or taking something and using it in an unsuspecting way.

Here are some of my tips and things I took away from shopping at Mariano’s and from the Mariano’s Tastemakers.

  • Swap out a liquid (e.g. milk, water, etc.) or part of a liquid in a recipe with something that will add another flavor to your cooking or baking. Use chicken broth in place of water. Use juices or fruit purees in place of water. The fresh squeezed juices in the produce section are perfect here.
  • Don’t be afraid to try different, non-standard flavor pairings. Many people may not know this but bacon and chocolate are phenomenal together. Stop in the baking aisle but remember you can find other things throughout the store that may take those cookies or cakes to a whole new place.
  • Mariano’s staff is very friendly and helpful. They are always willing to answer questions you may have. If you are in the spice house and aren’t sure about something just ask. I bought some new tea and they gave me tea bags and everything to use for it.
  • Go to Mariano’s hungry. You will eat there so just head there ready to eat and enjoy all they have to offer.
  • The other thing I learned from Sarah Jordan’s video is that you can get meats you buy grilled for you. So while I love baking, cooking is a job function as mom. I like that I can grab different meats for everyone and get them grilled. That means the kids can have burgers, the hubby a steak and I can get some chicken. At home this would not be an option. I’m not going to cook that many different meals in one night. This is great for families with picky eaters.

Sarah Jordan, Mariano’s Tastemaker inspired me to combine happy hour and dessert into one event. Her inspiration of thinking outside the food box is a great message. Many people bake and cook with alcohol but the heat cooks out the kick and makes it safe for anyone to eat as it is only then a flavor.

I wanted to take an alcohol and make it into a no-bake dessert so you still had the kick of the drink but with the sweetness of the dessert. My alcohol of choice was Vanilla Cinnamon Baileys, which I used to make a Vanilla Cinnamon Baileys Pie.

  2. 1 5.1 oz box of instant vanilla pudding mix
  3. 1 c. Vanilla Cinnamon Baileys Irish Cream
  4. 3/4 c. heavy whipping cream
  5. 1/2 tsp. cinnamon
  6. 2 c. whipped topping
Instructions
  1. Whisk together the pudding mix, Baileys and whipping cream for two minutes. Whisk in the cinnamon. It should be soft set. Refrigerate until set and then fold in the whipped topping. Evenly spread into the pie crust and then refrigerate until ready to serve. Top with additional whipped topping.
Notes
  1. This does contain alcohol so do not serve to children.

S’mores Cream Pie

We are kind of simple here when it goes to celebrating Valentine’s Day. I am not one of those girls that expects roses and a romantic dinner. In fact, I prefer to spend it with all of my Valentines, so we usually do a nice family dinner and I make a special dessert. I figure I should spend the day with all of the people who hold my heart if I can. In other words, these days that leaves me, the hubby and the little ones. The rest of the kids won’t be here.

So I decided to start trying to come up with a recipe for this dinner the other day and for some reason my mind was just stuck on making a pie recipe. Being a dessert for Valentine’s Day though I wanted it to be loaded with chocolate and other sweet goodness. That’s when the idea for a S’mores Cream Pie hit me. I swear it was a true light bulb moment. The whole thing instantly came to me and I was excited because I knew I could break out my kitchen torch. (Note* I have an unhealthy obsession with my kitchen torch. I like charring things more than any one person should.) I knew it would be a hit with the family and honestly it really is a big hit here. They have already eaten half of the pie and I only made it before dinner.

S'mores Cream Pie

The pie is light and fluffy and so good with all of the flavors of a s’more. It’s complete with toasted marshmallow edges and let’s be honest here, whipped topping and marshmallow creme mixed together is like a marriage made of guilty pleasures. Throw in the chocolate ganache and pudding filling and this dessert is one that will put a smile on your face but be careful because it can easily put some pounds on your butt.

Ingredients
  1. 1 graham cracker pie crust
  2. 1/2 c. milk chocolate chips
  3. 2 tbsp. heavy whipping cream
  4. 1 3.9 oz. box of instant chocolate pudding
  5. 1 3/4 c. milk
  6. 1 8 oz. tub of whipped topping, divided in half
  7. 1 7.5 oz. container of marshmallow creme
  8. 2 tbsp. hot fudge
  9. 1 graham cracker, crushed
Instructions
  1. In a double boiler over medium-low heat warm the milk chocolate chips and cream. Stir until smooth and then remove form heat. Pour into the prepared graham cracker crust and spread evenly over the bottom and sides. Place in the refrigerator to set.
  2. Whisk together the pudding mix and the milk for two minutes. It will thicken. Place in the refrigerator to set for five minutes. After it is set fold in half of the whipped topping until completely incorporated. Spread over the chocolate ganache in the prepared pie crust.
  3. If you have a kitchen torch set aside 1/4 c. of the marshmallow creme if not, that's okay. Whisk together the large portion of marshmallow creme and the remaining portion of whipped topping until completely combined. Evenly spread over the chocolate cream in the pie.
  4. Warm the hot fudge for about 10 seconds and then place it in a baggie, close and snip the corner. Drizzle the chocolate over the top of the pie. Sprinkle with the crushed graham crackers. If you set aside the 1/4 c. of marshmallow creme place it in a baggie or pastry bag and pipe it around the outside edge of the pie. Using a kitchen torch you can toast the marshmallow creme. Do not torch the whipped topping and marshmallow creme mixture.
  5. Place the pie in the refrigerator to firm up and take out when ready to serve. Store covered in the refrigerator.

I always like to have  some quick and easy recipes on hand that can be thrown together in no time at all for surprise guests or visitors. Throughout the year you can often get surprise visitors but it definitely seems to happen more for me during the holiday seasons. I think it’s because family comes into town and my husband forgets to tell me that people are coming by but it’s okay now. I used to freak out about not being prepared for surprise guests but now I just roll with it and have developed some recipes that are quick, easy and pretty much made out of pantry staples.

When people pop in for a visit I like to have a quick dessert that is great to share while sitting around the table chatting with friends and family. Something that can be tossed together in minutes and cooked while you are getting your company settled and that you don’t have to hover over. I like to serve something that is a comfort food and gives people a nice homey feeling and during the cold months I like a nice warm treat. So one of my favorite, quick go to recipes is my Quick Fruit Cobbler. It’s assembled in minutes and then you just pop it in the oven and then serve, usually with some ice cream. This recipe is so simple that even someone who has never cooked could manage to make it with no problems.

Ingredients
  1. 1 c. + 2 tbsp. all purpose flour
  2. 2 1/2 tbsp. sugar
  3. 4 tbsp. dark brown sugar, firmly packed
  4. 1/4 tsp. cinnamon
  5. 1/2 c. butter, melted (I use salted)
  6. 1 can of fruit pie filling (e.g. cherry, apple, peach, blueberry, etc.)
Instructions
  1. Preheat oven to 350°.
  2. Place all of the dry ingredients together in a large bowl and stir them to combine. Pour the melted butter into the dry ingredients and stir with a fork to combine. It will turn into large crumbs. Pour the pie filling into an 8x8 or 9x9 pan and then evenly sprinkle the crumbs over the top to cover completely.
  3. Bake in the oven for 30 minutes. Let cool for 5-10 minutes and serve warm with some ice cream.
