Chocolate Peanut Butter Pie & Mini Vacation Conclusion

As I stated in my last post, I was out-of-town on a last-minute weekend vacation to close out the summer with my three youngest. I am here to say that while the time in Wisconsin Dells was most enjoyable the drive home was even worse than the drive to Wisconsin. First of all, I think half of Chicago must have gone to Wisconsin Dells. The return traffic was bad but the kids are what truly made the trip one for the books.

My 6-year-old spent the trip alternating between fits and biting/slapping my 4-year-old. I know that sounds awful but honestly I wanted to bite her too I think. She spent the car ride alternating between crying over everything and shrieking at an awful ear-piercing volume. At one point, she did it for over 6 miles! It only stopped when I pulled over on the shoulder of the road and threatened to throw away everything she owns and to never take her out again. I’m sad to say, it didn’t last. Ten minutes later she started shrieking again and we missed the junction we needed to get on. I then had to detour for 4 miles to be able to turn around. The last child in the group, my 9-year-old, who refuses to use public restrooms, held it until near rupture occurred and I had to make a mad dash for a McDonald’s to go potty and feed the kids dinner.

While the children were like ravening beasts for the car ride home they were good for the rest of the trip. They enjoyed the pool. Where Luke can now do a handstand and Jackson can now swim in the 5 ft. deep section. Jackson and Ellie rode their first roller coaster and we all enjoyed the wave pool with 9 foot high waves.

So, what did I learn from this trip? A couple of things. First, the kids can’t start school soon enough. Come on Wednesday & Thursday! Get here already! Second, I have not been drunk in at least 10 years. 10 YEARS!!! That is way to long and I think I need a night out to completely unwind, destress and just get drunk without worrying about kids.

Since I spent yesterday recovering from my nerves that were shot to hell and trying to find the sanity I had lost on Sunday. I knew I needed a super easy recipe if I wanted to make something but it had to have chocolate because, let’s be honest, chocolate can fix a lot of life’s woes. I then thought about the Peanut Butter Pie that Lynda at Southern Kissed did earlier this month. When I saw it originally I knew I had to try it, but as with everything I had to change it up because I can never leave things alone.

This pie takes just minutes to throw together and is a great family project. The ingredients are simple and easily found and often already in your home. I used a whipped chocolate peanut butter which helped to keep it very light.

Chocolate Peanut Butter Pie

1 store-bought chocolate pie crust
1 c. Jif Whips whipped chocolate & peanut butter spread
1 c. milk
1 small box of instant chocolate pudding
1 8 oz. container of whipped topping
1/2 c. Nestle Peanut Butter & Milk Chocolate Morsels

In a large bowl start beating the whipped chocolate peanut butter spread on low and slowly add the milk. Continue beating until smooth. Add the pudding and beat until pudding is combined and mix is thicker. Fold the whipped topping in by hand until completely incorporated. Spoon into the pie crust and smooth out. Sprinkle the top with the morsels and freeze for two hours. Top with whipped cream if desired. Let sit at room temperature for 30 minutes before serving.
