Let’s face it, Valentine’s Day tends to be geared towards women
and the expansion of their butts. Oh, and kids too. Even if it wasn’t, there are a lot of guys out there who do not have the same kind of sweet tooth that women and kids have. That got me to thinking about my hubby and a treat he would like. He is a big time protein fan. I decided to go with an almond and pecan treat that he could munch on while boosting his protein intake.
The Bourbon Spiced Nuts came out really well and if you packaged them in a little tin and bought your guy a good quality beer to go with, it would make a really nice Valentine’s Day gift.
Bourbon Spiced Nuts
1 lb. almonds, pecans or combination of the two
1 egg white
1 tbsp. Red Stag Spiced Bourbon
3/4 c. sugar
1/4 c. brown sugar (do NOT pack)
1 tsp. cinnamon
1/2 c. butter
Pre-heat oven to 250°. Place the butter in a 13×9 pan and place in the oven for the butter to melt. You can also melt the butter in the microwave and add to the pan.
In a large bowl add the egg white and whisk until frothy. Add in the bourbon and whisk again to incorporate. Add the sugars and cinnamon to the bowl and stir to combine. Stir the nuts into the egg and sugar mixture until combined evenly. Pour the nut mix into the prepared pan with butter.
Bake for 1 to 1 1/2 hours stirring every 15 minutes. Let cool completely and then serve.
Store in an airtight container.
