School mornings are rough for many of us. My oldest son and I are usually the first ones up in the morning. He is trying to get up and ready and out the door for work while I am trying to roll the other kids and my husband up out of bed. Sounds easy enough but we have learning centers in my area and that means we have staggered start times for the schools. My 12 year-old has to be up first for his bus at 7:05. So once he’s dressed he gets a bowl of his favorite Malt-O-Meal® cereal to start eating while I go and wake up my 7 year-old. Her bus arrives at 7:33. As she comes down for breakfast and my 12 year-old is leaving for the bus I’m left dashing back upstairs to wake my 9 year-old and husband. My 9 year-old has a bus that comes at 7:54 and my husband has to be dropped off at the train station a half mile from us by 7:50. To say our mornings are a long, drawn-out affair is an understatement!

I always have these ambitious ideas for the weekends. I’ll wake up early, clean house before everyone wakes up, make a grand breakfast and follow all of that up with some fun family time. The reality is though I wake up thanks to my internal alarm clock and I may or may not clean house a bit. Breakfast falls short and is usually just a quick trip to the donut shop for some sugar laden treats and usually after that I decide after spending all week with the kids that I need at least one afternoon for a break and stretch out errands to an ungodly amount of time. Don’t judge me! You know you have roamed the grocery or discount store for hours just to enjoy the alone time. This past Sunday though I did wake up early, clean some house, make a yummy breakfast and spend the afternoon with the family. My yummy breakfast ended up being much easier than I thought with this super simple apple cinnamon roll cake.

While I do love elaborate baking I’m just like anyone else and I sometimes like to take shortcuts to create recipes. This Apple Cinnamon Roll Cake was so easy to make! All I needed was one tube of cinnamon rolls with icing and a can of apple pie filling.

This is one of those awesome things to make that tastes great and is ready to pop in the oven in just minutes.

Once it’s out of the oven and cools for a minute or two you can ice it and enjoy it warm. I bet this would even make a great dessert if you topped it with some ice cream.

This is the perfect breakfast for someone with a sweet tooth! It’s like cinnamon rolls meets apple pie meets a cake. Just what you need for those times you want something sweet but can’t decide between a few different things.

Ingredients
  1. 1 12.4 oz. tube of cinnamon rolls with icing
  2. 1 21 oz. can of apple pie filling
Instructions
  1. Preheat oven to 350° and spray a 9" X 9" pan with baking spray.
  2. Open the tube of cinnamon roll dough. Set the icing aside. Cut the cinnamon rolls into quarters and place in a mixing bowl. Open the apple pie filling and pour into the mixing bowl. Stir together and then spread evenly into the prepared pan.
  3. Bake for 35-40 minutes or until golden brown. Remove from the oven and cool for a minute or two.
  4. While the cake is cooling pour the icing into a plastic baggie and seal it. Cut a small piece off of one of the bottom corners. Squeeze the icing bag to drizzle the icing over the still warm cake.
  5. Cut, serve and enjoy!

I remember as a kid watching the Star Wars movies with my dad, a certified sci-fi fanatic. I loved the movies so much I would make my mom fix my hair in Princess Leia style buns on the side of my head. When Return of the Jedi came out my sister and I each begged and pleaded until we each got our very own Ewok stuffed dolls. One of the clinchers for falling in love with my husband was that he was as much of a sci-fi geek as I was and that he was a Star Wars fan. Oh yes, The Force is strong in my family and household. So much so that we even have a child named Luke. My husband and father both walk around doing heavy breathing and then saying, Luke, I am your father.” Since our Luke is Autistic he can be very particular about his food choices. Cereal is his absolute favorite breakfast food; if it has marshmallows in it even better. Oatmeal Raisin Apple Muffins

It’s National Raisin Week and a group of us bloggers decided to get together and create some super yummy, out of this world raisin recipes for all of you. I debated for weeks on just what my recipe would be. I didn’t want to do the standard cookie and I have been trying to eat healthier (meaning not as much fat) as usual and decided to go with an Oatmeal Raisin Apple Muffins recipe. 

I love muffins for breakfast! They are so easy to grab and go when you are running around on a busy morning. I also like that for muffins you can mix up the dry ingredients in advance and store them in a baggie or a sealed container and add the wet ingredients when you are ready to bake. These muffins are made even better because they are super moist and flavorful. They have so much apples and raisins you are getting something good for you in each and every bite. The topping gives them a nice little bit of sweet and crunchy.

For the muffins
  1. 1 c. all-purpose flour
  2. 1 c. oat flour (pulverize old fashioned oats in a food processor or blender)
  3. 1/2 c. sugar
  4. 1/4 c. dark brown sugar
  5. 1 1/2 tsp. cinnamon
  6. 1/4 tsp. baking soda
  7. 1 c. milk
  8. 1/2 c. natural applesauce
  9. 2 eggs
  10. 1/2 c. organic raisins
  11. 1 c. granny smith apples (peeled, cored and finely diced)
For the topping
  1. 1/4 c. dark brown sugar
  2. 3 tbsp. all-purpose flour
  3. 1 tbsp. butter, melted
  4. 2 tbsp. old fashioned oats
For the muffins
  1. Preheat the oven to 400° and line a muffin tin with liners and spray with baking spray.
  2. In a large bowl combine the dry muffin ingredients and stir to combine. Make a well in the center and add the wet muffin ingredients. Stir to combine. Stir in the raisins and the apples.
For the topping
  1. In a bowl combine the brown sugar, flour and cinnamon and stir together to combine and break up any lumps. Stir in the melted butter and mix until combined. Stir in the oats.
  2. Fill the muffin tin liners to 2/3 of the way filled and sprinkle some of the topping on each one.
  3. Bake for 15-20 minutes. Let cool in the pan for 5 minutes and then remove. Eat warm or continue cooling.

Everyone Loves Breakfast, Right? Pancake Cupcakes

This morning I made the kids waffle sticks for breakfast. As I was waiting for the waffles to finish cooking, I realized that the waffle batter was similar in consistency to cake batter. I began to think – would these work as cupcakes? I threw the left over batter into cupcake liners and into the oven they went! While they were cooking I worked on a maple syrup buttercream.  The frosting came out yummy! The cupcakes weren’t bad but they weren’t fabulous either. I needed to experiment with this idea further, so I used pancake batter – some plain, some with blueberries and the rest with chocolate chips. Of course, everyone likes butter on top of a stack of pancakes, so what the hay – I brushed on some melted butter when they came out. I mean if you are going to take a massively carb overloaded food like pancakes and make them into cupcakes with frosting, is a little butter really going to hurt? Please – no one  answer that question. I like to push the envelope, so I cooked up some bacon, crumbled it, and sprinkled it all over these little fellas. We all know bacon makes EVERYTHING better.

So what was the verdict? They weren’t bad! I think this is a great way to use up leftover pancake batter so it doesn’t go to waste. This can also make an unusual breakfast for someone’s birthday or would work great the morning after a kid’s sleepover. You could chop up bacon, sausage, etc. and let the kids all add their own “sprinkles”. This would also probably make you the coolest parent in the neighborhood. These are an excellent choice to make with the kids, even if you are leery of baking.

Side note: These do stick a bit to the cupcakes liners so I would suggest spraying the liners with some butter flavored cooking spray if you want to. You can sweeten the cupcake part by adding fruit or chocolate chips to the batter, otherwise it tends not to taste overly sweet.

For the Pancake Cupcakes
  1. makes 18-36 mini cupcakes depending on how much pancake batter you make
  2. 1 Box of Pancake Mix
  3. Water
  4. Add-Ins
  5. Butter
For the Maple Syrup Buttercream
  1. 1/2 c. butter (room temp)
  2. 2 c. Confectioner's Sugar (sifted)
  3. 4 tbsp. Grade A Maple Syrup (room temp)
  4. 1 tbsp. Heavy Whipping Cream
For the Cupcakes
  1. Preheat oven to 350 and line the mini cupcake pan with liners.
  2. The pancake cupcakes were made with a Complete Buttermilk Pancake Mix. I followed the instructions on the box to make the pancake mix by just adding water. Fruit, flavor chips, etc can be added. Spoon into liners and bake for 9-10 minutes. Remove from oven and brush with melted butter after removing them from the pan. Cool completely and then frost.
For the Frosting
  1. In the bowl of a stand mixer fitted with the paddle attachment cream the butter on medium-high for about 3 minutes. Add the confectioner's sugar all at once and the maple syrup and turn the mixer on to stir. Once incorporated add the heavy whipping cream and beat on medium-high for 3-5 minutes until fluffy.
