While baking for my family Christmas party this the other day I decided to make something new. Everyone knows all about Peppermint Bark. Chocolate and crushed up candy canes combined to make a cool, creamy holiday treat. The problem I have with that though is that it’s been done to death and you don’t want to show up somewhere that already has 5 variations of the stuff. so if you’re over peppermint or it isn’t your holiday flavor of choice and if you’re the one always eating the gingerbread cookies at holiday parties then I have got the perfect holiday treat to make for you! This treat is going to have you standing out in the edible, homemade gift giving department this year! Ginger Bark is going to become one of your favorite go-to holiday treats to make!

I know exactly what you’re thinking, Ginger Bark, what on Earth us that? Ginger Bark is something that is going to put you on the holiday party map and leave the boring old Peppermint Bark in the dust! In Ginger Bark I have taken white chocolate and kicked the peppermint to the curb and replaced it with crushed up gingersnaps. I have to tell you that the pairing is freaking phenomenal! When I made it my daughter and I kept munching on it and when I brought it to my family Christmas party it received rave reviews from everyone. The white chocolate and the crispy ginger cookies are such a perfect pairing.

Simply melt the chocolate in the microwave according to package instructions and crush the gingersnaps in a baggie or food processor.

Ingredients
  1. 1 lb. white chocolate melting discs
  2. 1/2 c. crushed gingersnaps
Instructions
  1. Melt the white chocolate discs according to package instructions in a bowl.
  2. Stir in the crushed up gingersnaps.
  3. Pour into a 9"x13" pan lined with wax paper and spread evenly.
  4. Refrigerate for 15-20 minutes.
  5. Break or cut into pieces.
Notes
  1. If you don't have white chocolate melting discs on hand you can use white chocolate chips.

Halloween is my second favorite holiday next to Christmas. I enjoy breaking out spooky decor and doing the house up right in ghastly, ghoulish delight. This year I decided to add to my decorations with this fun Halloween gumball machine candy dish craft.

Instead of the traditional gumball machine I wanted to create a gumball machine look that you might find in a town full of witches and ghouls. To achieve this I skipped the traditional red and went with a black, green and grey color scheme. I have to say that I was so delighted and happy with the final result that I think I may make more to gift to people as a grownup Halloween treat.

How do you make this fun Halloween Gumball Machine Candy Dish craft?

This really is an easy craft to make. The hardest part is waiting for paint and stain to dry.

Supplies:

1 round glass floral/rose bowl (my dollar store carries them in two sizes)

terra cotta clay flower pot

1 terra cotta clay saucer

1 flat washer

1 wing nut

1 round wooden bead

black spray paint

grey acrylic paint

green glass stain

hot glue sticks

hot glue gun

Jar Jewelry Halloween glass label (optional)

Halloween Gumball Machine Candy Dish Craft - A ghastly delight for all of the monsters, witches and ghouls in your life.

Instructions:

  1. To get started you will need to make sure that your glass bowl will fit to completely cover the bottom (part with small hole) of your clay flower pot. You will also need to make sure that the clay saucer will cover the opening of the glass bowl without it being to large or to small.
  2. To stain the glass bowl you have two options. You can either use a paint or foam brush to paint the outside or you can put the stain inside the bowl and turn it to coat the interior. If you do the interior be sure to use wrapped candy. The glass stain will take a long time to dry. You should let it dry for at least 24 hours.
  3. Spray paint the clay flower pot, saucer and wooden bead. I paint the inside and the outside of the pot and saucer. Let them dry completely.
  4. Paint the washer and wing nut grey and let dry.
  5. Turn the flower pot upside down so the small hole is at the top and use the glue gun to put glue on it. Then attach the bottom of the glass bowl to the flower pot.
  6. Place the clay saucer upside down and put a bead of hot glue in the center to attach the wooden bead.
  7. On the clay pot affix the painted washer and wing nut so that they look like the opening of the gumball machine and the turning knob. This addition really gives this craft the look of a real gumball machine.
  8. If you are using a Halloween label affix it to the front of the glass bowl so that it lines up above of the washer and wing nut.
  9. Fill the glass bowl with candy and place the saucer top on the glass bowl. I used chocolates wrapped to look like gumballs and individually wrapped gumballs that looked like eyeballs. I liked the look of the two different sizes.

Some notes about this craft:

  • Use wrapped candies as this candy dish is painted.
  • This is not designed to and should not be washed.
  • You can run some hot glue along the inside of the clay saucer that will sit on the glass bowl to keep the glass and clay from clinking loudly.
  • I found the Halloween Jar Jewelry labels I used at Joann.

Arrange the floral foam blocks into the Easter basket.

It’s Spring! Or so they keep telling us here in Chicago but with snow twice this week I am inclined to disagree. I hope spring does make an appearance though because I do love it. Everything goes from brown and gray to bright, green and colorful. In honor of spring and the approaching Easter holiday I wanted to do a quick and easy food that will be perfect to serve and your spring feasts. These Spring Bird’s Nest Cookies can be made with store-bought items and come together in a snap!

I love food crafts like this because you can use so many prepared food items to make this easier on you and to make this a fun and kid-friendly cooking project. If you prefer though you can always use your own favorite cookie dough recipe for this like I did. You can find my recipe here.

You can use a muffin or cupcake pan for this but I prefer to use a dessert shell pan. In this case, what becomes the top and the sides gets a lovely brown color which is reminiscent of a tree branch. Also, you are assured of having a lovely evenly hollowed out center for your frosting and candy.

If you want to bake with your kids or have kids like mine who think playing with frosting is fun. Then this is definitely something to do with them. To make the nests I used a pastry bag fitted with a grass tip. The great thing about the grass tip is it is very easy and forgiving so it will be easy for kids to use without the frustration of a tip that requires more control.

Ingredients
  1. Prepared cookie dough (I used chocolate chip)
  2. 1 can of green frosting
  3. Cadbury mini eggs, jelly beans, Peeps or other candy.
Instructions
  1. Preheat oven according to cookie dough recipe or package instructions.
  2. Press about 3-4 tbsp. of cookie dough into dessert shell pan. Each cavity should be half way filled. Bake in the oven cooking for about 15 minutes.
  3. Let the cookies cool in the pan for about five minutes and then invert onto a baking sheet. The cookies should pop right out or come out with a tap on the bottom. Allow to cool completely.
  4. Fit a pastry bag with a grass tip and then fill the bag with canned green frosting. Pipe the frosting in a circular motion into the cooled cookie shells.
  5. Decorate each nest with candy eggs and birds.

Christmas Tree Cupcake Cones

Last week we were on vacation in Orlando and so I missed being able to post a lot of great crafts and recipes I had worked on or wanted to get done. Now I’m back home and the kids are off of school and I need to work. Luckily though I can combine my work with activities for the kids. That’s what we did today and we made some Christmas Tree Cupcake Cones. I’m sure all of you have had a cupcake cone before in a cake cone. I’m also sure you’ve seen people or have yourself used a sugar cone and frosted it as a tree. I decided to combine the two and now we have Christmas Tree Cupcake Cones in the house!

In traditional cupcake cones you use cake cones and set the cones into a cupcake pan, fill with cake batter and then bake. When you frost them they look like ice cream cones. I’ve loved these since I was a kid but decided to change it up some by using sugar cones instead so I could get the Christmas tree feel. How do you get these to stand up in the cupcake pan though? That’s easy, you fill the cone about 2/3 of the way and then carefully place the open end down in the cupcake pan.

These are filled with the cake batter and ready to go into the oven!

These cooked up quick and then I let them cool. Once they were cooled I melted some chocolate and covered about 1/3 of a popsicle stick with the melted chocolate and then inserted about half of the stick into the center of the cake. You need to use popsicle sticks instead of cake pop sticks because these are larger and heavier. Let the chocolate set in the refrigerator before decorating.

This part is similar to making cake pops.

These were a lot of fun to make and you can get creative with your decorations. We just used things I already had on hand here. My daughter was a green frosting covered mess when we finished but it was fun and festive!

Ingredients
  1. 1 8.25 oz. Funfetti Vibrant Green Cake Mix (batter prepared as instructed)
  2. 1-2 15.6 oz. can Funfetti Vibrant Green Vanilla Flavored Frosting
  3. 12-18 sugar cones (depending on size)
  4. chocolate
  5. Popsicle sticks
  6. 1/4 c. powdered sugar
  7. Candy, sprinkles, jimmies, etc. for decorating
  8. Foam blocks
Instructions
  1. Preheat the oven to 350° and spray a cupcake pan with baking spray.
  2. You should already have the cake batter prepared per package instructions. Fill the sugar cones about 2/3 of the way full. The batter will be thick so you can turn the cone over and place it open end down into the cupcake pan. My cones took 12 minutes to cook for a toothpick to come out clean. Larger cones may take a an extra minute or two. Let the cones cool in the pan for five minutes and then finish cooling on a wire rack.
  3. Once the cones are almost done cooling melt some chocolate. ( I used white chocolate ships because that's what I had on hand. You could use candy melts or a candy bar too.) Dip 1/3 of a popsicle stick into the melted chocolate and then inserted the chocolate covered end into the cake so that about 1/2 the stick is inside the cake cone. Place the cones on their sides on a backing sheet and place in the refrigerator for the chocolate to firm up.
  4. While the chocolate is setting empty one of the cans of frosting into a bowl. Add the powdered sugar and stir until combined completely. This helps make the frosting stiffer.
  5. To decorate the Christmas trees either pipe the frosting on (not to thick) or spread the frosting on with an offset spatula. Decorate with candy, sprinkles, jimmies, etc. and if you want to give it a little dusting of snow place a very small amount of powdered sugar into a sifter and shake over the trees. Place the decorated trees into foam blocks to hold them. I covered mine with powdered sugar to make it look like snow and placed some "gifts" under my trees.

Ingredients
  1. 1 c. butter, softened
  2. 1 c. light brown sugar, firmly packed
  3. 1/3 c. Splenda Sugar Blend
  4. 2 eggs
  5. 2 tsp. vanilla
  6. 3 tbsp. instant vanilla pudding mix
  7. 2 1/4 c. + 2 tbsp. all-purpose flour
  8. 1/2 tsp. salt
  9. 1 tsp. baking powder
  10. 11 oz. pkg. mini candy coated chocolates
Instructions
  1. Preheat oven to 350° and line baking sheets with parchment paper.
  2. In the bowl of a stand mixer fitted with the paddle attachment cream together the butter, brown sugar, Splenda Sugar Blend on medium- high, until light and fluffy. Scrape down the sides of the bowl and mix in the eggs and vanilla. Stir in the pudding mix, flour, salt and baking powder just until combined. Stir in the mini candy coated chocolates.
  3. Use a standard cookie scoop to scoop out dough. Place on the prepared baking sheets and lightly press the dough down to flatten it some so they spread properly. Bake the cookies for 9-11 minutes. The cookies may look like they need to bake longer but do not. Remove them from the oven and let them cool on the pan for five minutes. The sugar continues to cook the cookies while they are cooling. This will ensure a soft and chewy cookie.

Monster Munch Popcorn for Halloween Movie Night

It’s Friday night and on the weekends we like to do family movie nights like I am sure many of you do too. We curl up on the couches, pop in a family friendly movie and eat and snack the night away. With this being Halloween season right now we have a ton of scheduled movie nights filled with family friendly spooky themes. To complement our Halloween movie selections I decided to create Monster Munch popcorn as a silly, ghoulish treat.

Monster Munch popcorn takes just plain old butter popcorn and gives it an EWWW factor. The ghoulish slime on the popcorn is sweet, vibrant green colored white chocolate. The added gross factor of children worms and eyes are all completed with gummy candies. What makes this fun is that you can completely change this up to suit your family. You could stick with the green chocolate melts and use gummy witch fingers and pretzel cats. You could use red chocolate melts for a blood effect and some gummy fangs. Another option is to use black chocolate melts and add candy spiders and bugs. The possibilities go on and on and are only limited by your imagination.

I love pairing chocolate with popcorn. The salty, buttery popcorn and the sweet chocolate work so well together. The Wilton vibrant green melts give the perfect effect for slime.

Yum, yum, yum who doesn’t want to munch on some creepy eyeballs? I saw brains too when I was shopping that oozed “blood” I considered them but I thought they were a bit to much.

Ingredients
  1. 1/2 c. popcorn kernels
  2. 3-6 tbsp.butter, melted
  3. popcorn salt
  4. 5 oz. colored chocolate melts (I used Wilton in vibrant green.)
  5. Candy, pretzels, marshmallows, etc.
Instructions
  1. Pop the popcorn kernels in a hot air popper or on the stove top. Top with butter and salt to flavor. Cover a baking sheet with wax paper and once the popcorn has cooled pour onto the prepared sheet. Melt the chocolate in a disposable pastry bag according to the package directions and then snip the tip and drizzle over the popcorn. Stir the popcorn up a bit and then let the chocolate set. Pour the popcorn in a bowl and mix in your candy, pretzels, marshmallows, etc. and serve.

Being the baker that I am I was elated to learn that Royal Caribbean has a cupcake shop called The Cupcake Cupboard aboard several of its ships. I was even more excited to learn that the ship I was sailing on, the Liberty of the Seas was one of the ships and wouldn’t you know it but one of our scheduled things was to decorate cupcakes in one of the classes offered. So in addition to drooling over, debating which flavor to eat and eating the cupcakes they offered we got to sit down and learn how to make a special cupcake.

The cupcake decorating is available on each cruise and is definitely something worth checking out. They have classes on board for both adults and kids so everyone can learn to make a beautiful and tasty treat. Don’t worry though if you have never decorated a cupcake before. You will be walked through what to do step-by-step and in the end you will find it was so much easier than you expected it to be.

The Brandcation blogger group took up three classes and between them were instructed on how to make two different cupcake designs. I was in the first group and we made a dog cupcake. The second group did the same thing and the third group made a hamburger and french fry cupcake meal. Everyone’s cupcakes turned out beautifully, even those who were a bit nervous about decorating.

I decided I would share with my readers how to make the dog just to give you an idea about how easy they make creating an edible work of art at the classes.

With Valentine’s Day behind us it is now time to move on to the next big festive holiday. Next month will be St. Patrick’s Day and it’s a huge event here in Chicago. There are pub crawls, numerous parades and the Chicago River is dyed green. With our large Irish population we like to do it right. Celebrations go on for weeks. So in honor of this fun day I decided to make a sweet treat that kids and adults will enjoy.

My kids had once again wanted to cook with me so I came up with these little gems on Monday since they were off school for President’s Day and we had too much snow to go out and do anything. This helped to keep them occupied and they were so excited about how fun looking they were when we finished making them. Luckily, I had everything on hand already so these were really a quick and easy thing to make. If you are planning on throwing or attending any St. Patrick’s Day celebrations then these would be sure to be a hit.

Ingredients
  1. 1 box of frosted brownie mix (Mix prepared according to package instructions.)
  2. M&M's Minis in yellow and brown
  3. 1 pkg. of Airheads Xtremes Rainbow Candy
Instructions
  1. Preheat oven to 350° and spray a mini cupcake pan with baking spray.
  2. Mix the cupcake mix according to the back of the package. Scoop mix into the mini cupcake pan and bake for 18 - 20 minutes. Let the brownie bites cool in the pan for 5-10 minutes and then move to a wire rack to finish cooling.
  3. Once cooled completely, open the frosting packet and lightly frost the bottom of the brownies. Place four brown mini M&Ms on the bottom as the feet of the pot. Now frost the top of the brownie bites and place yellow mini M&Ms in the center. Cut the Airheads Xtremes in half and take one half and lightly press the ends into the frosting to create an arched rainbow.
