Ingredients
  1. 1 3.4 oz. box of chocolate instant pudding
  2. 1 c. milk
  3. 3/4 c. Guinness Draught
  4. 4 oz. Cool Whip
  5. 1 3.4 oz box of French vanilla instant pudding
  6. 1 c. milk
  7. 3/4 c. Bailey's Irish Cream
  8. 4 oz. Cool Whip
  9. 1/3 c. chocolate sauce
  10. 2 tsp. Jameson Whiskey
Instructions
  1. In a large mixing bowl stir together the chocolate pudding mix, Guinness and milk. Once combined fold in the Cool Whip.
  2. In another large mixing bowl stir together the french vanilla pudding mix, Bailey's Irish Cream and milk. Once combined fold in the Cool Whip.
  3. In a small bowl stir together the chocolate sauce and whiskey.
  4. Place each pudding mix into a large plastic baggie. Snip one of the corners on each bag and squeeze equal amounts of each pudding flavor into shot glasses. Spoon some of the chocolate sauce over the top.
  5. Chill, serve and enjoy!

Valentine’s Day is done and over so all the flowers, hearts, red and pink are out the window and it’s now time to bring out the green shamrocks and booze to celebrate St. Patrick’s Day! To kick off all the glorious fun associated with the celebration of this Irish holiday I decided to make some Irish Car Bomb Cupcakes and to make them even more wonderful they are amazingly awesome and easy to do. These cupcakes are rich, decadent and delicious and have three layers of boozy flavor.

To make these little treats of St. Patrick’s Day deliciousness easy to do I started out with a box of devil’s food cake mix. To keep it on the track of simplicity I skipped the eggs, oil and water the mix calls for and just added some Guinness to it. That’s right people, cake mix and beer and you have ready to go cake batter!  Could it get any easier?

While the cupcakes are baking you can whip up the chocolate ganache for the cupcake centers. The ganache is flavored with Jameson Whiskey and makes for a truffle like center to the cupcake. Oh yeah, that’s going to wow your friends and family!

Next comes the frosting. I opted to go with a cream cheese frosting to really take the richness of these to an even higher level! The cream cheese paired with Bailey’s Irish Cream really makes it taste like you’re enjoying a cheesecake taste to the cupcake. Now, combine all of these flavors together and you are going to love it!

For the cake
  1. 1 box devil's food cake mix
  2. 1 11.2 oz. bottle of Guinness Draught
For the ganache
  1. 8 oz. bittersweet chocolate, chopped
  2. 2/3 c. heavy whipping cream
  3. 1 tbsp. butter, softened
  4. 2 tbsp. Jameson Whiskey
For the frosting
  1. 1/2 c. butter, softened
  2. 8 oz. cream cheese, softened
  3. 4 c. powdered sugar
  4. 2-3 tbsp. Bailey's Irish Cream
For the cake
  1. Preheat oven to 350° and line cupcake pans with cupcake liners.
  2. In a large mixing bowl combine the cake mix and the Guinness. Mix on low speed for thirty seconds until combined and then increase speed to medium and mix for two minutes,
  3. Scoop the batter into the cupcakes liners and bake for 18-23 minutes or until they bounce back when pressed on the top. Cool in the pan for five minutes then remove and finish cooling on a wire rack.
For the ganache
  1. Place the chopped chocolate into a heat safe bowl.
  2. Heat the cream in a saucepan or in the microwave and bring to a simmer.
  3. Pour the heated cream over the chocolate and let sit for a few minutes.
  4. Add the butter and whiskey and stir until smooth.
  5. Let the ganache sit until soft but firm enough to work with.
For the frosting
  1. Cream the butter and cream cheese together.
  2. Add the powdered sugar one cup at a time mixing on low in between each addition.
  3. Stir in the Bailey's Irish Cream and mix on low. Once combined increase the speed to high and mix for five minutes until light and fluffy.
To assemble the cupcakes
  1. Core out the center of the cupcake with a cupcake corer, paring knife or the bottom of a pastry tip.
  2. Scoop about a tablespoon of ganache and place into the hollowed cupcake.
  3. Top with the frosting and refrigerate until ready to serve.

Why you make these deliciously, decadent S’mores Truffle Bars of course!

The last time I went I was able to pick up the ingredients to make my Decadent S’mores Truffle Bars recipe. This dessert is so good that you’ll be amazed at how easy it is to make!

Brown sugar, cinnamon, crushed graham crackers and melted butter create the crust.

I prefer to use brown sugar and cinnamon over regular sugar in my graham cracker crusts because it gives it a better flavor in my opinion.

The truffle center is so easy you will not even believe it! Some semi-sweet chocolate chips, vanilla and sweetened condensed milk are all you need.

For the crust
  1. 1 1/2 c. Graham Cracker Crumbs, ground or crushed
  2. 1/3 c. brown sugar, firmly packed
  3. 6 tbsp. butter, melted
  4. 1/2 tsp. cinnamon (optional)
For the truffle filling
  1. 12 oz. pkg. semi-sweet chocolate chips
  2. 3/4 c. sweetened condensed milk
  3. 1/2 tsp. vanilla
For the topping
  1. 2 c. mini marshmallows
Instructions
  1. Preheat oven to 375° and line an 8" x 8" or 9" x 9" pan with parchment paper so that you have an overhang of a few inches on two sides. This will help with removing the dessert from the pan later. Spray the sides of the pan and the parchment paper with baking spray.
  2. In a large mixing bowl combine the graham cracker crumbs, brown sugar, melted butter and cinnamon. Using a fork or your hands combine all of the ingredients. Everything should be coated in butter and damp.
  3. Pour the graham cracker mix into the prepared pan. Press firmly into place. The bottom of a glass should help to make this easier. Bake for seven minutes. Do not over bake! Cool completely.
  4. In a microwave safe bowl combine the chocolate chips, sweetened condensed milk and vanilla. Microwave on 50% power for 45 seconds. Stir the mixture. If not completely melted microwave again on 50% for another 30 seconds. Do this until you can stir it and everything is melted and smooth.
  5. Pour the chocolate mixture over the graham cracker crust and spread evenly. Top with the marshmallows.
  6. Place under the broiler until the marshmallows are browned and toasted. Watch this carefully so they do not burn.
  7. Let the dessert set for a few hours so that the chocolate layer can firm up. Cut into 16 2" squares and serve.

“Dirt” Dessert Pudding Cups

Ingredients

  • 2 chocolate sandwich cookies, crushed fine
  • 2 pudding cups (3.25 oz each) Snack Pack® Chocolate Pudding
  • 2 gummy worms

Directions

  1. Stir half of crushed cookies evenly into pudding cups. Sprinkle remaining crushed cookies on top.
  2. Place 1 gummy worm in each pudding cup. Serve immediately.

I love a good dip! My husband would say he does too and that’s why he married me… lol. I however mean the edible kind and not the personality. A good dip can bring in the crowds at the start of the party and get them talking. Well, at can at my parties because the people I tend to hangout with are food junkies like me. There are all kinds of dips; fruit dips, chip dips, savory and sweet. This morning I woke up on a mission to make a sweet dip that would be a party starter. I wanted a peanut butter cup dip!

Ingredients
  1. 1 8 oz. package of Neufchatel cheese
  2. 1 7 oz. jar of marshmallow creme
  3. 1 8 oz. container whipped topping
  4. 1 13 oz. jar of Reese's Spreads Peanut Butter Chocolate
  5. 1 1.5 oz. package Reese's Peanut Butter Cups, chopped
Instructions
  1. In a large bowl mix together the Neufchatel cheese, marshmallow creme, whipped topping and peanut butter chocolate spread until combined. Place in serving dish and top with chopped up peanut butter cups.
  2. Chill until ready to serve.
Notes
  1. You can use other brands of chocolate peanut butter spread or peanut butter cups.

There are recipes that I come up with sometimes that I make again and again  and become a staple in my baking routine. A recipe that people request all of the time and that is just simply so yummy you can’t pass it up. This is one of those recipes! These out of this world peanut butter cup cupcakes were first made in my house for my oldest son’s birthday on May 30th. Since then I have made them two more times already and have more requests for them too!

What makes these cupcakes so out of this world is the flavor. When you bite into one you truly taste a Reese’s Peanut Butter Cup in cake form. For any peanut butter cup fan this will be cupcake perfection! The other thing that makes this cake great is that it all starts out with a box mix that gets yummified!

For the cupcakes
  1. 1 15.25 oz. box of devil's food cake mix (I used Pillsbury)
  2. 1/2 c. melted butter
  3. 1/2 c. Reese's Spreads Peanut Butter Chocolate
  4. 3 eggs
  5. 1/2 c. water
For the Reese's Spread frosting
  1. 1/2 c. salted butter, softened
  2. 1/2 c. Reese's Spreads Peanut Butter Chocolate
  3. 2 c. confectioners sugar
  4. 2 tbsp. whole milk
For the peanut butter frosting
  1. 1/2 c. salted butter, softened
  2. 1/2 c. creamy peanut butter
  3. 2 c. confectioners sugar
  4. 2 tbsp. whole milk
For the cupcakes
  1. Preheat oven to 350° and line muffin tins with liners.
  2. In a large bowl combine all of the ingredients and mix according to package directions.
  3. Scoop the batter into the prepared muffin tins and bake for 18-23 minutes or until a toothpick inserted comes out clean. Cool completely before frosting.
For the Reese's Spread frosting
  1. Cream together the softened butter and Reese's Spread on medium-high speed. Once it's light and fluffy stir in the confectioner's sugar in two batches. Stir in the milk just until combined. Scrape down the sides and then beat the frosting on high speed for 5-10 minutes.
For the peanut butter frosting
  1. Cream together the softened butter and peanut butter on medium-high speed. Once it's light and fluffy stir in the confectioner's sugar in two batches. Stir in the milk just until combined. Scrape down the sides and then beat the frosting on high speed for 5-10 minutes.
Notes
  1. To decorate the cupcakes you will partially fill two disposable pastry bags with each of the frosting flavors. You will the snip the tips open on each of them and place both bags into another pastry bag fitted with the pastry bag tip of your choice. When you pipe the frosting you will then get a swirled effect. Top each cupcake with a mini peanut butter cup for decoration.

I have had this idea for this cake rattling around in my head for almost a year now. For some reason though I kept either putting it off or something else would come up and it would get pushed to the back burner. A few days ago though I woke up and decided that I was going to make my final tweaks to the recipe and make it and by golly it was going to be abso-freaking-lutely ah-mazing! Do you want to know what? It was spectacular this Cookies N Creme Gooey Butter Cake!

I’m so glad that I didn’t put off making this cake again for two reasons. First of all this cake truly is unbelievably good! Second of all, later in the day after making this cake I came down with what seems like to me is the world’s worst case of strep throat ever. I’m talking I needed steroid shots just to get my tonsils off of each other so I could do that crazy little thing called breath. Then a visit to the ER when it did it again. That’s enough about that though.

This cake is so easy to put together but will have people who eat it wanting more. It’s the perfect addition to a get together, office party or celebration and with cookout season and Easter right around the corner you can’t go wrong bringing this to share with the other guests.

If you’ve never made a gooey butter cake before it consists of two layers. The base layer is the cake layer or in this case the cake and candy layer.

The second layer of a gooey butter cake is a cream cheese layer or in this case a cream cheese and Oreo layer.

Ingredients
  1. 1 15.25 oz. box of devil's food cake mix
  2. 1/2 c. butter, melted
  3. 2 eggs
  4. 4 oz. bar of Hershey's Cookies N Creme Candy Bar, chopped
  5. 8 oz. cream cheese
  6. 2 eggs
  7. 6 Oreos or other chocolate sandwich cookies, crushed
  8. 2 c. powdered sugar
  9. 8 Oreos or other chocolate sandwich cookies, crushed
Instructions
  1. Preheat oven to 350 degrees and spray a 9 x 13 pan with baking spray.
  2. Mix cake mix, melted butter and 2 eggs on low speed until combined. Press into the prepared pan. Top with the chopped up candy bar.
  3. Mix cream cheese and eggs with an electric mixer. Slowly beat in 6 crushed Oreos or other chocolate sandwich cookies and confectioner's sugar mixing until combined. Pour and spread evenly over the cake layer. Top that with the other 8 crushed Oreos or other chocolate sandwich cookies.
  4. Bake for 40 to 45 minutes. Cool in pan and then cut and serve.
