Root Beer Float Cupcakes a delicious take on cake and ice cream!

There is nothing like going to an ice cream shop and getting a float. There are tons of different kinds but the most common is of course the root beer float. If you are at a really good place they make their own root beer and ice cream in-house and you get that lovely foam on top when the two are combined. Mmmmm… now that is some heavenly stuff right there. So what could make the almighty root beer float even better? How about turning it into a root beer float cupcake?

I first made these cupcakes and posted about them a few years ago for my dad’s birthday. He is a huge root beer float fan and I figured he would really get a kick out of these cupcakes. These Root Beer Float Cupcakes are some surprisingly, simple yet delicious treats. Every single time I make these they end up gobbled up by kids and adults alike. They are absolutely a perfect treat for a summer, backyard barbecue or to serve at any of the summer holidays.

I know the idea of a filled cupcake may seem daunting but they really are much easier than you’d think. Plus, I know my kids are always happy to come grab the bits of cored out cupcake to munch on as a snack.

You and your guests will be amazed how much these cupcakes taste just like the classic root beer float! The root beer flavoring is just right. It’s not overpowering at all and the cool ice cream makes for the perfect surprise when you bite into the cupcake. The whipped topping provides the taste of the creamy foam you get when you pour root beer over ice cream.

For the cupcakes
  1. 1 box of White Cake Mix
  2. 1/2 c. butter, melted
  3. 2 eggs
  4. 1 1/4 c. root beer
For the filling
  1. 1 pint vanilla ice cream, softened slightly.
For the frosting
  1. 1 16 oz. container of whipped topping
  2. 1 tsp. root beer extract
For the cupcakes
  1. Preheat oven to 350° and line cupcake pans with liners.
  2. In a large bowl combine all of the ingredients and mix with a hand mixer for 30 seconds on low-speed until combined. Increase speed to medium and continue to mix for 2 more minutes.
  3. Fill liners 2/3 of the way full and bake for 18-20 minutes. Let cool in pan for a few minutes and then remove to a wire rack and continue to cool there.
  4. Core the center of the cupcake out. Do not go all the way through the bottom. You can use a cupcake corer, paring knife or the large end of a pastry tip.
  5. Place softened ice cream in the cored cupcake.
For the frosting
  1. Mix the whipped topping and root beer flavor and stir until combined well.  Fill a pastry bag fitted with a tip and pipe the frosting on.
  2. Place the cupcakes in the freezer until ready to serve them.
Notes
  1. If you don't have or can't find root beer extract don't worry. Simply take 1/4 c. of root beer and place it in a saucepan. Heat over medium-low heat until reduced to a teaspoon or two. Let it cool and then add to the whipped topping.

Ingredients
  1. 1 3.4 oz. box of chocolate instant pudding
  2. 1 c. milk
  3. 3/4 c. Guinness Draught
  4. 4 oz. Cool Whip
  5. 1 3.4 oz box of French vanilla instant pudding
  6. 1 c. milk
  7. 3/4 c. Bailey's Irish Cream
  8. 4 oz. Cool Whip
  9. 1/3 c. chocolate sauce
  10. 2 tsp. Jameson Whiskey
Instructions
  1. In a large mixing bowl stir together the chocolate pudding mix, Guinness and milk. Once combined fold in the Cool Whip.
  2. In another large mixing bowl stir together the french vanilla pudding mix, Bailey's Irish Cream and milk. Once combined fold in the Cool Whip.
  3. In a small bowl stir together the chocolate sauce and whiskey.
  4. Place each pudding mix into a large plastic baggie. Snip one of the corners on each bag and squeeze equal amounts of each pudding flavor into shot glasses. Spoon some of the chocolate sauce over the top.
  5. Chill, serve and enjoy!

I love a good dip! My husband would say he does too and that’s why he married me… lol. I however mean the edible kind and not the personality. A good dip can bring in the crowds at the start of the party and get them talking. Well, at can at my parties because the people I tend to hangout with are food junkies like me. There are all kinds of dips; fruit dips, chip dips, savory and sweet. This morning I woke up on a mission to make a sweet dip that would be a party starter. I wanted a peanut butter cup dip!

What’s peanut butter cup dip you ask? Why it’s a sweet, tangy take on a classic candy that’s been made dipable! What’s better is that it takes only a few minutes to throw together but will leave your guests asking for the recipe. Yup, it’s that good!

Ingredients
  1. 1 8 oz. package of Neufchatel cheese
  2. 1 7 oz. jar of marshmallow creme
  3. 1 8 oz. container whipped topping
  4. 1 13 oz. jar of Reese's Spreads Peanut Butter Chocolate
  5. 1 1.5 oz. package Reese's Peanut Butter Cups, chopped
Instructions
  1. In a large bowl mix together the Neufchatel cheese, marshmallow creme, whipped topping and peanut butter chocolate spread until combined. Place in serving dish and top with chopped up peanut butter cups.
  2. Chill until ready to serve.
Notes
  1. You can use other brands of chocolate peanut butter spread or peanut butter cups.

A couple of weeks ago it was my husband’s birthday. He’s a simple man with simple tastes and would be fine with vanilla cake and frosting every day of his life but me being me I like to change things up for him.  Get him to live on the wild side of life. So this year I decided to go with a favorite snack of his as the flavor base for the frosting. He just loves eating pistachios while gaming. I decided to keep the cake part of his cupcakes simple and go with an easy vanilla bean cupcake and instead of an elaborate over the top in time and effort frosting I went with simple, easy and packed with flavor. This easy Three Ingredient Pistachio frosting is a snap to throw together.

With three simple ingredients this frosting is so simple that a kid could make it and make it without mom or dad hovering. In fact, this is now my ten year old’s second favorite frosting.

  1. In a large bowl whisk together the pudding mix and the milk for a couple of minutes until it is completely combined and thick. Fold in the whipped topping being careful not to over mix.
  2. Use to frost a cake or cupcakes.
