Mom life is hard! Mommy brain truly exists! Moms need and deserve a break now and again to enjoy some quiet time or to just reconnect with friends or feel like more than just mommy. Whether you are a SAHM, WAHM or a mom who works outside of the home you all deserve a lovely little break from that role even if it’s only for one meal. Luckily, Restaurant.com is a great way to get your mommy break in and still manage to not feel mom guilt by saving money using a Restaurant.com gift certificate.

Recently, I had the chance to meet my best friend for lunch while the husbands were at work and the kids were at school. The problem we have when we go out is that both of us are dieting but we are doing different diets. That means we both have to make sure that the place we pick to eat has something both of us can eat on the menu. We decided to head to Grady’s Grille a local favorite with delicious, fresh food options and an ever-changing menu.

The interior is a lovely cross between modern, old and industrial that makes it unique. You can even enjoy a nice day out on their beautiful patio.

I had some mini Korean BBQ beef tacos and I swapped the rice out and opted for some broccoli instead.

Two Ingredient Pot Pies with a Progresso Giveaway

by Jennifer Wieland
Two Ingredient Pot Pies #ProgressoGameDay #ProgressoStew #ProgressoChili

Are you ready for some football? I know that I am . Football is a way of life in my family and we love to spend our weekends talking about and watching football. Our meals revolve around the game and have to be something that you can grab quickly during halftime or easy enough to devour in between plays. Since it was a weeknight today and Monday Night Football is on I decided I needed a quick easy meal that I could prep ahead of time and just pop in the oven at game time. Thankfully, Progresso Stew made the prep a breeze for my new, two ingredient pot pies.  Two Ingredient Pot Pies #ProgressoGameDay #ProgressoStew #ProgressoChili Progresso has some new additions to their already tasty family lineup. They now have a line of stew and chili varieties that come conveniently packaged in pouches to feed more than one person.

  • Roasted Vegetable Chili with 3 Beans is a meat-free option
  • Smokehouse Pork and Beef Chili with Beans
  • Southwest Style White Chicken Chili with Beans.
  • White Chicken Stew with Savory Herbs
  • The Hearty Vegetable Stew with Beef

Two Ingredient Pot Pies #ProgressoGameDay #ProgressoStew #ProgressoChili For my pot pies I used the chicken stew but you could definitely use the beef stew as well. You could easily make both with this recipe being such a breeze and freeze or refrigerate them before cooking so that you can prep them way ahead of time and just need to pop them in the oven on game day. Fall is here, the kids are back in school and the sports and activities have started up again. Now with my husband busy with a roll out at work, my oldest working two jobs and starting a business, the other kids activities and me working, volunteering and traveling, everyone’s schedules are all over the place! So it’s not often that we can all manage to squeeze in a meal together. So when we are all in the right place at the right time I have to make sure my meal is fast. That’s why I love this one pan chicken with rice meal featuring Uncle Ben’s®

Kids2

While I adore baking, cooking is always a challenge because it’s a required job for my family to function. Since I’m the only one feeding my motley crew cooking can take on a life of it’s own with everyone’s hectic schedules.

One Pan Chicken with Rice Meal Featuring Uncle Ben's®

Luckily, while everyone is at work and school I can fit in a quick trip to my local Kroger family store, grab some Uncle Ben’s Long Grain & Wild Rice, rotisseries chicken, stock and veggies and I have a quick, easy one pan meal that covers all the main meal requirements.

One Pan Chicken with Rice Meal Featuring Uncle Ben's®

I love recipes that I can pack with vegetables! The kids get a bunch without complaining about eating them since they are soft and flavorful. Eating with color is so good for you.

Mediterranean Chicken and Potatoes

by Jennifer Wieland
Mediterranean Chicken and Potatoes is the perfect meal for a family dinner or for feeding a crowd.

My absolute favorite meat to eat is chicken so even when trying to cook for a crowd I often skip the usual standards of turkey, ham or a pricey beef dish. Instead I opt for chicken and wow people with flavor. My family’s absolute favorite chicken dish I make is Mediterranean Chicken and Potatoes. It’s a great, hearty meal that will have your whole house smelling ah-mazing and the whole family drooling before the meal is even served. That’s one of the reasons I love serving this to guests. When they walk in the door they are greeted by a yummy aroma and know they are about to be served up a delicious meal that will make them think you worked super hard and spent a ton of money when in reality that couldn’t be further from the truth.

This is a dish that is easy to prepare and doesn’t keep you chained to the stove. Meaning, you put it in the oven and only need to go back a couple of times to add the chicken and check to see when it’s done. This allows you to work on preparing the rest of the edibles, doing any last-minute cleaning and getting yourself ready. While this dish may seem simple it is extremely flavorful with juicy, fork tender chicken and caramelized potatoes. You will definitely please even the pickiest of eaters. Honestly, the carmelized potatoes in this dish are one of my favorite foods to eat. The main recipe will serve 4-5 people but can easily be doubled or tripled for larger groups. I would make a bit extra though as this one will definitely have people asking for seconds and you will want to have some leftovers for lunch the next day.

Mediterranean Chicken and Potatoes is the perfect meal for a family dinner or for feeding a crowd.

  10. ½ c. water
  11. ½ c. olive oil
  12. ½ c. water
