Spring has definitely sprung around here and I couldn’t be happier! Easter is coming next weekend and the weather is warming up and nature is showing some signs of color. Easter is always so much fun and when you live in a state that gets hit plenty with grey skies, extreme cold, snow and ice all winter long it’s always nice to see the fun colors of Easter make their appearance. One staple of Easter in my house is always a variety of PEEPS®. The fun shapes and colors always make me think spring. What’s even better is that you can use PEEPS & COMPANY® products to help decorate as well as munch on this Easter. This quick, easy, inexpensive PEEPS® Easter Centerpiece will make a fun and colorful addition to your Easter table.

1 package of PEEPS® Decorated Eggs

9 short skewers or lollipop/cake pop sticks

1-2 packages of Easter grass filler

floral foam (I found a four pack at the dollar store that worked perfectly)

1 Easter basket

Arrange the floral foam blocks into the Easter basket.

Cover the foam and fill in any spots that need it inside the basket with the Easter grass filler.

Remove the PEEPS® Decorated Eggs form their package. Separate and skewer them onto the sticks.

Take the PEEPS® Decorated Eggs on the sticks and stick the sticks into the floral foam. Space them out and arrange them to your liking and there you have it, a beautiful, fun and festive centerpiece.

It’s Spring! Or so they keep telling us here in Chicago but with snow twice this week I am inclined to disagree. I hope spring does make an appearance though because I do love it. Everything goes from brown and gray to bright, green and colorful. In honor of spring and the approaching Easter holiday I wanted to do a quick and easy food that will be perfect to serve and your spring feasts. These Spring Bird’s Nest Cookies can be made with store-bought items and come together in a snap!

I love food crafts like this because you can use so many prepared food items to make this easier on you and to make this a fun and kid-friendly cooking project. If you prefer though you can always use your own favorite cookie dough recipe for this like I did. You can find my recipe here.

You can use a muffin or cupcake pan for this but I prefer to use a dessert shell pan. In this case, what becomes the top and the sides gets a lovely brown color which is reminiscent of a tree branch. Also, you are assured of having a lovely evenly hollowed out center for your frosting and candy.

If you want to bake with your kids or have kids like mine who think playing with frosting is fun. Then this is definitely something to do with them. To make the nests I used a pastry bag fitted with a grass tip. The great thing about the grass tip is it is very easy and forgiving so it will be easy for kids to use without the frustration of a tip that requires more control.

Ingredients
  1. Prepared cookie dough (I used chocolate chip)
  2. 1 can of green frosting
  3. Cadbury mini eggs, jelly beans, Peeps or other candy.
Instructions
  1. Preheat oven according to cookie dough recipe or package instructions.
  2. Press about 3-4 tbsp. of cookie dough into dessert shell pan. Each cavity should be half way filled. Bake in the oven cooking for about 15 minutes.
  3. Let the cookies cool in the pan for about five minutes and then invert onto a baking sheet. The cookies should pop right out or come out with a tap on the bottom. Allow to cool completely.
  4. Fit a pastry bag with a grass tip and then fill the bag with canned green frosting. Pipe the frosting in a circular motion into the cooled cookie shells.
  5. Decorate each nest with candy eggs and birds.

I was so happy when I got back from my cruise and found Chicago to have finally decided to warm up some. Don’t get me wrong, if I had been able to have my way I would have been moving to Florida but at least it was a much smaller shock to the system going from 85-90° to 50-60° over 30-40°. Now that it has warmed up though and I have gotten a tan I am in full on spring mode. I will only wear sandals or slides now and a hoodie or jean jacket for cover. I flat-out refuse to go back to cold weather gear no matter if the temp drops again or not.Yes, I will be the nut in sandals and snow should that happen here again.

Last night I decided I needed to get back in the saddle and bake something but I wanted it to match my current weather outlook… springy. It needed to be a sweet treat to make me think of warmer weather, sunshine and blue skies with each bite. Since I had some Meyer lemons sitting on the counter I decided to make that my flavor base for this recipe and then I scoped out the refrigerator and cupboards to see what sort of magic I could make. This was how I ended up creating Meyer Lemon Cream Cheese Blondies. These are perfect for a warm weather day with their light citrus flavor and blondies are quick and easy to bake since it all gets dumped into one pan and then baked. Let them cool some, ice them, slice them and they are a perfect sweet to pack up for a picnic lunch with your favorite friends or family.

For the blondies
  1. 2 2/3 c. all-purpose flour
  2. 1 tsp. baking soda
  3. 1/2 tsp. baking powder
  4. 1/2 c. butter, softened
  5. 8 oz. pkg. cream cheese, softened
  6. 1 2/3 c. sugar
  7. 1/2 tsp. Meyer lemon zest
  8. 1 tbsp. Meyer lemon juice
  9. 1 egg
For the icing
  1. 1 c. powdered sugar
  2. 3 tbsp. milk
  3. 1/2 tbsp. Meyer lemon juice
  4. Additional Meyer lemon zest for topping (optional)
Instructions
  1. Preheat oven to 350° and spray a 9"x13" pan with baking spray.
  2. In a large bowl mix together the flour, baking soda and baking powder and set aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment cream together the butter and cream cheese on medium-high speed. Add the sugar, lemon zest and lemon juice and mix until combined. Stir in the egg on low until incorporated. Stir in the dry ingredients in two batches and then mix on medium speed for a minute.
  4. Press the dough evenly into the prepared pan and bake for 25-30 minutes or until the middle has set. Let the blondies cool for 10-15 minutes. While they are cooling you can make the icing.
  5. To make the icing whisk together the powdered sugar, milk and lemon juice until smooth. Once the blondies are cooled some spread the icing over the top and sprinkle with additional lemon zest if desired.
  6. Cut the blondies into 2" squares and serve.
