Meal time can be a mad dash of trying to throw things together during a busy afternoon or after a long day of work. Getting all of your produce washed, prepped and measured is an easy thing to do. So easy in fact that it’s easy to think I can do this later. What inevitably happens for me though is that those few extra minutes at lunch or dinner can wreak havoc on my best laid plans.

Cook, Slice, Dice and Portion Out Protein

I am following a Keto diet. That means unlike most diets I get to indulge in some delicious fat and protein options. While that makes it easier to stick to the diet it also means for busy people like me is that I need convenient grab and go options for throw together meals. Cooking meats, eggs and bacon in advance, slicing and dicing them and measuring them out and packaging them up in containers makes for quick breakfasts, lunch and dinner add-ins. These make great additions to a quick salad or stir the meats and eggs together for a quick breakfast that packs a protein punch.

Measure Out Snacks for Grab and Go Convenience

One of the things that makes eating badly so easy is that most houses and every grocery store is stocked with convenience foods that are all nice and neatly packaged up in grab and go containers. Makes your life easier right? No, not when you realize your backside is expanding as a result. Instead find healthy options that work for your particular diet. Measure out individual portions and package them up in plastic containers for the same grab and go convenience. This means no falling off your food wagon when the munchies hit.

Prep Your Drinks

Prep your drinks? What? This is important. A lot of time people mistake hunger for thirst. Most people don’t get enough fluids and healthy fluid intake is a key to getting healthy. I have a water bottle system that I use. I fill up the bottles each night and pop them into the refrigerator. This does two things. It guarantees that I’ll have ice cold water to drink and I have my fluids measured out for the day. I then know and can easily keep track of how much water I’ve drank.

I love baking up treats with and for my kids during the holidays. I love seeing their faces when they try a new treat and waiting for their reactions. There are several reasons why I just adore my M&M’S® Frosted Cookie Bars. First of all, they are of course delicious beyond belief. Second, I love taking cookie dough and baking it in a pan like you would brownies. One of the things that annoys be about cooking baking is the repetitiveness of it. Put a pan or two of cookies in the oven, cook it 8-15 minutes and then do the same thing over and over again until you are done cooking all of the dough. It makes it hard to get other things done during the busy holiday times. One pan in and done is the way to go!

Ingredients
  1. 1 c. butter, very soft
  2. 1 c. light brown sugar
  3. 2/3 c. sugar
  4. 2 lg. eggs
  5. 2 tsp. vanilla
  6. 3 packets Quaker Instant Oatmeal in Original Flavor (I pureed the oatmeal in my food processor.)
  7. 3 tbsp. instant vanilla pudding mix
  8. 1 1/2 c. flour
  9. 1/2 tsp. salt
  10. 1 tsp. baking powder
  11. 11 oz. pkg. M&M'S® Holiday Baking Minis
  12. 1 can of vanilla frosting
  13. 1 c. M&M'S® Holiday Baking Minis
Instructions
  1. Preheat oven to 350° and line a 9" x 13" pan with parchment paper and spray with baking spray.
  2. In the bowl of a stand mixer fitted with the paddle attachment cream together the butter, sugars, eggs and vanilla on medium- high, until light and fluffy. Scrape down the sides of the bowl. Stir in the oatmeal, flour, salt and baking powder just until combined. Stir in the M&M'S® Holiday Baking Minis.
  3. Spread into the prepared pan and bake 40-45 minutes or until set. Cool completely.
  4. Spread frosting over the cooled cookie bars and then top with M&M'S® Holiday Baking Minis.
