For the crust
  1. 1 1/2 c. Graham Cracker Crumbs, ground or crushed
  2. 1/3 c. brown sugar, firmly packed
  3. 6 tbsp. butter, melted
  4. 1/2 tsp. cinnamon (optional)
For the truffle filling
  1. 12 oz. pkg. semi-sweet chocolate chips
  2. 3/4 c. sweetened condensed milk
  3. 1/2 tsp. vanilla
For the topping
  1. 2 c. mini marshmallows
Instructions
  1. Preheat oven to 375° and line an 8" x 8" or 9" x 9" pan with parchment paper so that you have an overhang of a few inches on two sides. This will help with removing the dessert from the pan later. Spray the sides of the pan and the parchment paper with baking spray.
  2. In a large mixing bowl combine the graham cracker crumbs, brown sugar, melted butter and cinnamon. Using a fork or your hands combine all of the ingredients. Everything should be coated in butter and damp.
  3. Pour the graham cracker mix into the prepared pan. Press firmly into place. The bottom of a glass should help to make this easier. Bake for seven minutes. Do not over bake! Cool completely.
  4. In a microwave safe bowl combine the chocolate chips, sweetened condensed milk and vanilla. Microwave on 50% power for 45 seconds. Stir the mixture. If not completely melted microwave again on 50% for another 30 seconds. Do this until you can stir it and everything is melted and smooth.
  5. Pour the chocolate mixture over the graham cracker crust and spread evenly. Top with the marshmallows.
  6. Place under the broiler until the marshmallows are browned and toasted. Watch this carefully so they do not burn.
  7. Let the dessert set for a few hours so that the chocolate layer can firm up. Cut into 16 2" squares and serve.

I love a good dip! My husband would say he does too and that’s why he married me… lol. I however mean the edible kind and not the personality. A good dip can bring in the crowds at the start of the party and get them talking. Well, at can at my parties because the people I tend to hangout with are food junkies like me. There are all kinds of dips; fruit dips, chip dips, savory and sweet. This morning I woke up on a mission to make a sweet dip that would be a party starter. I wanted a peanut butter cup dip!

  2. Chill until ready to serve.

4th of July Edible Centerpieces

The 4th of July is this weekend and for us the holiday usually involves the local parade, a family BBQ and fireworks to round out the night. I’m sure this is also how a lot of other people spend the day as well. It’s a great holiday for friends, family and fun. For the tables this year I decided to make 4th of July edible centerpieces since our family is over run with kids currently. Something that the kids or kids at heart could just grab and nosh on when they felt like it.

These edible centerpieces consist of star marshmallows in two sizes, Rice Krispie Treats cut out with a star cookie cutter, candies and sprinkles for the edible portion.

This is also a great thing to make and let the kids put them together and decorate. Not only does it lessen your work but it also keeps the kids out-of-the-way so you can get everything else done.

For the stands to hold the edible treats you can use any red, white or blue containers that you think will work. I personally used a red, square, bamboo cup and a blue, oval, tin bucket.

Ingredients
  1. 20 Rice Krispie Treats (homemade or store bought cut into stars)
  2. 20 small star shaped marshmallows
  3. 20 large star shaped marshmallows
  4. chocolate melts (red, white or blue)
  5. candies and sprinkles to decorate
Instructions
  1. Melt the chocolate melts in the microwave in disposable pastry bags.
  2. Using candy sticks or wooden skewers slide the small star marshmallow on. Then a candy should follow next. Then add the large marshmallow and follow that with another candy. Then add the Rice Krispie Treat to the stick. Lay the assembled sticks onto a wax paper lined baking sheet.
  3. Decorate the marshmallows and Rice Krispie Treats with the melted chocolate, candies and sprinkles.
Notes
  1. To assemble the centerpieces all you need to do is place floral foam into the containers you are using. Insert the completed marshmallow and Rice Krispie Treat pops into the floral foam, adjusting until you are satisfied. Cover the floral foam with crinkle paper in the color of your choice.

Sweet Potato Cookies

I am so sneaky in my own mind! I think huh, if I add some produce to this dessert it will make it healthy and then I can happily eat some. There’s just a few problems with me looking at sweets I bake like this. The first one being, the addition of the fruit or in this case vegetable, while cutting some fat does not really make it healthy. Sadly that darn sugar and those carbs still get me. Secondly, the addition of produce in baking makes for very moist and yummy treats. So while I did cut some fat out of the recipe eating twice as much makes the dessert even worse for me. Luckily, these sweet potato cookies I made are for Thanksgiving and I will have a lot of people to share them with so that I do not succumb to eating them all on my own or even more likely, have to fight my husband for them.

I wanted to take everything that was good about sweet potato casserole and make it into a cookie. I wanted cinnamon, lots of dark brown sugar, fresh sweet potato and yes, even marshmallows! Oh my gosh did I nail it! If you love the casserole you are going to flip for these cookies. Every single bite tastes like you are nibbling on fall itself! Does that even make sense? If not you get the idea, right?

Ingredients
  1. 2 3/4 c. all-purpose flour
  2. 1 tsp. baking soda
  3. 1/4 tsp. cinnamon
  4. 1/2 c. butter, softened
  5. 1/2 c. sweet potato, mashed
  6. 1/2 c. sugar
  7. 1 1/2 c. dark brown sugar
  8. 2 eggs
  9. 2 tsp. vanilla
  10. 1 10 oz. bag of cinnamon chips
  11. 1 3 oz. container of Mallow Bits
Instructions
  1. Preheat oven to 350° and line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl stir together the flour, baking soda and cinnamon. Set the bowl aside.
  3. In the bowl of a stand mixer cream together the sweet potato and butter. Mix in the sugars just until combined. Scrape down the sides and bottom of the bowl and add your eggs and vanilla. Mix on medium speed until everything is combined well. Stir in the flour mixture, mixing just until combined and then stir in the cinnamon chips and Mallow Bits.
  4. Scoop out the dough, place on the pan and bake for 10-12 minutes. Let the cookies cool on the pan for a few minutes and then move to a wire rack to finish cooling.

Chocolate is a favorite flavor to many, many people. It has seen many a people through a broken heart, a mid-afternoon bought of sleepiness and a lot of women through PMS. It is just food that seems to make people happy and to feel a lot better so who am I to argue with that. But, just hear me out here. What if chocolate isn’t enough one day? What if you need a little extra something to go with your chocolate? Well then have I got the perfect thing for you… Chocolate Marshmallow Buttercream! Don’t deny it you just drooled a little at the thought of that didn’t you?

So this delightful little idea has been running around in my head for some time now. Since way back earlier this year when I did Marshmallow Buttercream. I thought if this is good I bet it’d be even better in chocolate! I don’t know why it’s taken me this long to get a round to making it but it has and today was a rough day with the kids (Dear God, do I really have to wait more than a month before they go back to school?) and the weather here was awful. It was cloudy and 62° out. (Seriously, 62° for a high in mid-July is just wrong!) I just needed a little pick me up and a distraction for the kids so we did a group baking project and made some chocolate cupcakes and then that’s when the idea hit me that I was making this frosting today! I needed it and I had earned it dammit! So make it we did and I am so, so very glad we did. It’s good! Like kids keep stealing the cupcakes good and Luke my pickiest eater said it’s the best chocolate frosting ever. Coming from him that’s no small praise!

Ingredients
  1. 1 c. butter, softened
  2. 2 1/2 c. confectioner's sugar, sifted
  3. 1/2 c. good quality, dutch-processed cocoa powder, sifted
  4. 1 7oz. jar of marshmallow creme
  5. 2-3 tbsp. heavy whipping cream
Instructions
  1. In the bowl of a stand mixer fitted with a paddle attachment cream the butter. In batches add the sugar and cocoa powder and mix until combined. Scrape down the sides of the bowl and stir in the marshmallow creme until completely incorporated. Scrape down the sides again and add 2 tbsp. of the cream. Mix in on low and check consistency. Add the last tbsp. of cream if needed. Once the cream is finished being added turn the mixer up to medium-high speed and blend for 3-5 minutes. It will be lighter in color and fluffy. Use to frost cake, cupcakes or cookies.

Instead of sprinkles I used the tiny Mallow Bits to decorate the tops of the frosted cupcakes.

Dear God, I hope you are stronger than I was and can manage to not eat this straight from the bowl. If you’re as weak as I am though don’t worry I won’t tell a soul.

I had more than a couple, I had several and I only shared like three of them with her because I didn’t want to look like I had some sort of crazy fixation with s’mores but you know what? I think I do have some crazy ass fixation with s’mores because since then all I have been able to think about is s’mores recipes. I currently have about five ideas running through my head all about s’more-y goodness. One of those recipes that popped into my head was for S’mores Muffins because you know what’s better than a s’more? A s’more muffins first thing in the morning warm and yummy fresh out of the oven.

Once I had the idea of a s’mores mufiin in my head I decided I wanted to go with a brown sugar and cinnamon based muffin batter to provide the warmth and flavor of what would have been the graham cracker in a normal s’more. Then of course I needed to add the marshmallow but the thing with regular mini marshmallows is that they would just melt and dissolve into the batter if you cooked them. That’s where Jet-Puffed Mallow Bits come in. I have used these before in my S’mores Cookies and they are perfect. Since they are really tiny and the dried marshmallows, like the ones in the little hot chocolate packets or cereal they hold up to baking. They do not dissolve into nothingness and they maintain there shape while providing the necessary marshmallow flavor. Finally, I used mini chocolate chips as the chocolate to get the most chocolate I could throughout the muffins.

Ingredients
  1. 2 c. all-purpose flour
  2. 1/4 c. sugar
  3. 1/2 c. dark brown sugar
  4. 2 1/2 tsp. baking powder
  5. 1/4 tsp. baking soda
  6. 1/4 tsp. salt
  7. 1 tsp. cinnamon
  8. 1 tsp. vanilla
  9. 1 c. milk
  10. 1/2 c. oil
  11. 2 eggs
  12. 3/4 c. mini chocolate chips
  13. 3/4 c. Jet-Puffed Mallow Bits
  14. Cinnamon-Sugar
Instructions
  1. Preheat oven to 400° and line muffin pan with liners.
  2. In a large bowl add the first seven dry ingredients and stir together with a fork making sure to break up the brown sugar completely. Form a well in the center of the dry ingredients and add all of the wet ingredients. Stir together until completely combined and minimal lumps remain. Stir in the chocolate and marshmallows. You can reserve some of the marshmallows and chocolate and sprinkle them on the tops of the muffins before baking as I did. Sprinkle the tops of the muffins with some cinnamon-sugar.
  3. Place the pans in the oven and bake for 16-18 minutes or until a tester comes out clean. Cool the muffins in the pan for 5 minutes and then transfer to a wire rack to finish cooling or enjoy still warm.

Some how June has gotten away from and I can’t believe that next week is already going to be the 4th of July! I mean seriously, where does the time go? It’s like each year of my life flies by faster and faster than the last. Summer school is already ending for my 10-year-old and vacation bible school ended today for my 5 and 7 year olds and I feel like I have done nothing this summer. I really need to get on that because before I know it school will be starting again in August and I’ll have missed the whole thing. Luckily though 4th of July is here and hopefully it will get my butt in gear for a fun, unforgettable summer. We have lots of family activities planned and the hubby is off work almost the whole week since his brother is coming in from Maryland with his fiance and we are of course going to hit the local parade like we do every year. So I have tons of cooking and baking planned for this upcoming week. One of the things I am planning on making is my Red, White & Blue Fruit Dip.

My Red, White & Blue Fruit Dip is a new spin on a classic and it adds additional flavors. This awesome Dip can be paired with fresh fruit, graham crackers or vanilla wafers and will be absolutely perfect for a cookout! Everyone is going to love this stuff so you may want to double the recipe because it makes fruit even better and with the fun, festive colors you can’t go wrong. Although honestly, you can eat this at any old-time of the year not just patriotic holidays and you’ll want to too.

Ingredients
  1. 1 7oz. jar of marshmallow creme, divided into three equal parts
  2. 1 c. whipped topping divided into 3 1/3 c. portions
  3. 3oz. cream cheese
  4. 3oz. strawberry cream cheese
  5. 3oz. blueberry cream cheese
  6. red & blue food coloring
Instructions
  1. In three separate bowls measure out the marshmallow creme and whipped topping. Add one of the flavors of cream cheese to each bowl. Add 2-3 drops of red food coloring to the strawberry cream cheese bowl and 2-3 drops of blue food coloring to the blueberry cream cheese bowl. Mix each bowl with an electric hand mixer until smooth. Spoon into bowl carefully to keep colors separated and refrigerate until ready to use. Serve with fresh fruit, graham crackers or vanilla wafers.

Tootsie Roll Frosting - My Sweet Sanity

Sometimes I set out to make a new recipe and in my head I have a vision of what it will look like, how good it will taste and how it will appear visually to the eater. I will have some paper with measurements and ingredients listed and some scribbled out and adjusted or changed. Trying to get it to be just perfect in my mind and on paper before I ever even attempt to make it. That is my neurosis when working on recipes. For a few months now I have been working on and envisioning a chocolate marshmallow buttercream frosting. I thought it would be phenomenal. It would be chocolate-y and marshmallow-y and the perfect complement to a chocolate cupcake. Sometimes though reality is not what you envisioned and what you had pictured in your mind is not at all what you get. This was one of those times but what I ended up with was something even better than what I had originally thought to make. You see, when all was said and done I come up with a very thick but light frosting that tasted nothing like marshmallow and everything like a Tootsie Roll if it were somehow made into frosting and OH… MY… GOD!… is it good! Like I was just sitting with the kids eating it out of the bowl good. (Shhh… don’t tell anyone what an awful mom I am for that one.) Every single one of my friends and family that had these cupcakes loved them and all thought they tasted like Tootsie Rolls too so that is why I call this Tootsie Roll Frosting.

This frosting is perfect for cupcakes but due to how thick it is it has to be piped so would not work well to frost a cake. When I say it’s thick though it is but yet it’s still very light when you eat it. It’s not heavy in that sense. It is pliable though so you may even be able to use it to mold decorations if you decreased some of the cream.

Ingredients
  1. 3/4 c. butter, softened
  2. 3 tbsp. hot fudge (do not warm)
  3. 3 1/2 c. confectioner's sugar
  4. 1/2 c. cocoa powder
  5. 8 oz. bag Kraft jet-Puffed Mallow Bites Chocolate Brownie Marshmallows, melted and slightly cooled
  6. 2-4 tbsp. heavy whipping cream
Instructions
  1. In the bowl of a stand mixer fitted with the paddle attachment cream the butter and hot fudge together on medium-high. Sift together the confectioner's sugar and the cocoa powder and then stir into the creamed mixture in two batches on low speed. Stir in the melted marshmallow until combined. It will be very thick. Stir in two tablespoons of the heavy whipping cream and mix on medium-high speed for a minute. Scrape down the sides of the bowl and then add more cream if needed. Turn the mixer back on to medium-high speed and beat for 3 minutes.
Notes
  1. This is a thick frosting that will need to be piped and will not spread well. Don't worry though this is not a heavy frosting when eaten. When trying to gauge if it needs more cream you should know the ideal consistency will be a soft Play-Doh.

Seriously! If you like Tootsie Rolls make this! You will not be sorry at all! I paired this with a chocolate fudge boxed cake mix for the cupcakes and it was perfection.
