Ingredients
  1. 1 3.4 oz. box of chocolate instant pudding
  2. 1 c. milk
  3. 3/4 c. Guinness Draught
  4. 4 oz. Cool Whip
  5. 1 3.4 oz box of French vanilla instant pudding
  6. 1 c. milk
  7. 3/4 c. Bailey's Irish Cream
  8. 4 oz. Cool Whip
  9. 1/3 c. chocolate sauce
  10. 2 tsp. Jameson Whiskey
Instructions
  1. In a large mixing bowl stir together the chocolate pudding mix, Guinness and milk. Once combined fold in the Cool Whip.
  2. In another large mixing bowl stir together the french vanilla pudding mix, Bailey's Irish Cream and milk. Once combined fold in the Cool Whip.
  3. In a small bowl stir together the chocolate sauce and whiskey.
  4. Place each pudding mix into a large plastic baggie. Snip one of the corners on each bag and squeeze equal amounts of each pudding flavor into shot glasses. Spoon some of the chocolate sauce over the top.
  5. Chill, serve and enjoy!

Ingredients

  • 2 chocolate sandwich cookies, crushed fine
  • 2 pudding cups (3.25 oz each) Snack Pack® Chocolate Pudding
  • 2 gummy worms

Directions

  1. Stir half of crushed cookies evenly into pudding cups. Sprinkle remaining crushed cookies on top.
  2. Place 1 gummy worm in each pudding cup. Serve immediately.

A couple of weeks ago it was my husband’s birthday. He’s a simple man with simple tastes and would be fine with vanilla cake and frosting every day of his life but me being me I like to change things up for him.  Get him to live on the wild side of life. So this year I decided to go with a favorite snack of his as the flavor base for the frosting. He just loves eating pistachios while gaming. I decided to keep the cake part of his cupcakes simple and go with an easy vanilla bean cupcake and instead of an elaborate over the top in time and effort frosting I went with simple, easy and packed with flavor. This easy Three Ingredient Pistachio frosting is a snap to throw together.

When I was a kid I was sure I hated pumpkin as a food and flavor. I mean I had been forced to endure my fair share of pumpkin pie and I hated it. The thing was though that pumpkin pie was the only way I was ever exposed to pumpkin. It was not until I was in my mid thirties that I tried pumpkin as anything other than pie and when I did I was shocked. I liked pumpkin! I mean I really, really liked pumpkin. I tried other pumpkin things and I liked them too. It was only pumpkin pie that I had an aversion to and still do for some reason. I think my aversion to pumpkin pie though stems from the fact that my birthday often falls on Thanksgiving and what little girl wants pumpkin pie instead of a pretty cake? Now if someone had given me this Gooey Butter Pumpkin Cake for a birthday I might have overlooked the fact that it was not pretty but it sure does taste amazing!

I know half the U.S. population hates pumpkin like I used to and the other half are pumpkin addicts who can’t wait for summer to end and fall to start just to get their hands on all that is pumpkin. I like to help those people out and so every year now I try to come up with a new take on pumpkin to share with family and friends during the fall. This year is no exception but, I wanted something that could easily be thrown together when there is a ton of other stuff in life keeping me busy and starting with a box cake mix fit the bill for that. This recipe comes together in minutes and then you just bake, cool and serve. How much easier can you get in life and on top of that it is so unbelievably good that it will definitely impress your friends and family.

Ingredients
  1. 1 15.25 oz. box of yellow cake mix
  2. ½ c. butter, melted
  3. 2 eggs
  4. 1 3.4 oz. box of pumpkin spice instant pudding
  5. ½ tsp. vanilla
  6. 8 oz. pumpkin spice cream cheese
  7. 2 eggs
  8. ½ tsp. pumpkin pie spice
  9. 2 c. powdered sugar
Instructions
  1. Preheat oven to 350 degrees and spray a 9 x 13 pan with baking spray. Mix cake mix, melted butter, pumpkin spice instant pudding mix, vanilla, and 2 eggs on low speed until combined. Press into the prepared pan.
  2. Mix pumpkin spice cream cheese, eggs, and pumpkin pie spice with an electric mixer. Slowly beat in confectioner's sugar mixing until combined. Pour and spread evenly over the cake layer.
  3. Bake for 45 to 50 minutes. Cool in pan and then cut and serve.

Strawberry Creme Pie

Strawberry season is now upon us and I couldn’t be happier! It is probably the most favorite fruit in our house and luckily can be frozen for year round consumption. This means you can easily enjoy this tasty little fruit all year round and easily make this Strawberry Creme Pie recipe any time you have a hankering for some summery good sweets but don’t want to spend a ton of time in the kitchen.

Light, creamy and oh so perfect for a warm summer night, this Strawberry Creme Pie is sure to hit the spot and be an absolute crowd pleaser. With only five ingredients and no baking necessary it makes it even better. That’s right, no hot kitchen for you but all the tasty goodness of a dessert that was much harder to make. The other great thing is that this pie can be made well in advance and frozen. Then when you are ready to eat it all you need to do is pop it out of the freezer and let it defrost some and then it’s ready to eat.

Before we get to the recipe I thought I would share some fun strawberry facts with you…

  • Strawberries are the only fruit with their sides on the outside and the seeds themselves are also considered a fruit too.
  • Strawberries are not actually berries but bananas are and strawberries are actually members of the rose family.
  • You should never wash fresh strawberries until ready to use. Washing them actually promotes spoiling.
  • If you aren’t a fan of carrots don’t worry, because strawberries do help your eyes by preventing cataracts and eye degeneration.
  • A handy tip for warm weather: strawberry juice combined with honey rubbed onto the skin can help relieve inflammation and sunburn. After you have rubbed it into the skin thoroughly just rinse it off with warm water and some lemon juice.

Ingredients
  1. 1 Graham Cracker Pie Crust
  2. 1 3.4 oz. Box of Jell-O Strawberry Creme Instant Pudding
  3. 1 3/4 c. Milk
  4. Whipped Topping (regular sized tub)
  5. 1/2 c. Strawberries, chopped and more for garnish
Instructions
  1. Unwrap the pie crust and set it aside.
  2. In a large bowl whisk together the pudding mix and the milk for two minutes. It should be somewhat thick. Place in the refrigerator for five minutes. Fold in shopped strawberries and 1 c. of whipped topping. Spread evenly into the pie crust and freeze for 15-20 minutes. Top with the remaining whipped topping and spread evenly. Add strawberries for garnish.
  3. Refrigerate or freeze until ready to serve.

  1. I have the most luck finding the Jell-O Strawberry Creme Pudding at Walmart Superstores.

Cookies and Creme Cookies

Last week Jenny Flake over at The Picky Palate had a recipe up for making the perfect M & M cookies. From her pictures you can see that they do indeed look to be absolutely perfect! When I saw them and read her post I knew I had to try them immediately. So of course, I made a bee line to the store just to get some mini M & M’s and start a cookie recipe craze here.

Now what makes this story amusing is that I went to two different stores looking for the bags of mini M & M’s and was unable to find them while dragging three kids with horrible, runny noses and hacking coughs throughout each location just for that one item. Don’t worry. I totally know what you are thinking… Mom of the Year, right? No? Okay, well they did want me to make them to cheer them up so that is what I am going with to make myself feel like a passable mom.

The secret ingredient on these cookies though is pudding. Let me tell you, I have been throwing pudding into a bunch of cookie recipes I worked on this past week and it does make for some awesome cookies! This is how I came up with my Cookies ‘n Creme Cookies. These are all kinds of crazy yummy!
Cookies 'n Creme Cookies
Cookies ‘n Creme Cookies
makes 2 dozen large cookies

1/2 c. (1 stick) butter, softened
1 c. sugar
1 lrg. egg
1/2 tsp. vanilla extract
1 1/4 c. all-purpose flour
1/4 c. good quality cocoa powder
3 tbsp. Jello Oreo Cookies ‘n Creme Instant Pudding mix
1/2 tsp. baking soda
1/2 tsp. salt
2 tbsp. milk
4 Hershey’s Cookies ‘n Creme Bars, chopped

Preheat oven to 350° and line the baking sheets with parchment paper.

In the bowl of a stand mixer fitted with a paddle attachment cream the butter and sugar until well combined on medium-high speed. Add the egg and vanilla and mix until it’s completely incorporated. Add the flour, pudding mix, baking soda and salt and mix until combined on low. Add in the milk and mix in on medium speed. Stir in the chopped Hershey’s Cookies ‘n Creme Bars.

Using a medium cookie scoop (mine was 1 oz.) scoop the dough and place 2 inches apart. Bake 10-12 minutes. Cool on the cookie sheet 5 minutes and then transfer to a wire rack to finish cooling.
