I am one of those people that loves her slow cooker. It just makes life so much easier. It’s a great way to throw some ingredients together and forget about it until it’s time to eat. It’s also a great way to make huge amounts of food for parties, holidays or sporting events. Since I was diagnosed as diabetic I have been watching my sugar and carb intake, trying to get a handle on my wildly out of control blood sugar levels. It’s amazing once you start focusing on labels while shopping. You realize that sugar is in almost everything in some way, shape or form. Sauces and dressings are a huge culprit of this. You quickly learn that many things need to go or you need to look into alternatives. Alternatives like making your own with alternatives to sugar. That’s just what I did with these slow cooker, sugar-free, pulled sesame teriyaki chicken sliders. I created my own sesame teriyaki sauce and soy ginger dressing to create this delicious meal.

To make both the teriyaki sauce and the soy ginger dressing I used a sugar alternative from the Steviva company as a replacement to honey. Steviva’s Nectevia Original blend is a great liquid sweetener that infuses organic blue agave nectar with premium 100% pure stevia extract. This combination creates a decadent, indulgent taste experience with only 1/4 the calories, carbs and sugars of regular agave, or table sugar.

To get this recipe going I first made some sugar-free sesame teriyaki sauce.

If you’ve never made your own teriyaki sauce it is unbelievably simple to do. It comes together in minutes and it’s also easy to customize with your own flavor choices.

Sometimes I forget to put a meal together for the slow cooker first thing in the morning. This recipe is perfect for those times. Since you are using boneless, skinless chicken breasts they cook much faster than a large piece of meat. On high, this cooks in a couple of hours.

Once the meat is fork tender you can take it out and shred it with two forks or use your stand mixer with the paddle attachment for some hands free shredding.

Toss the meat back into the slow cooker with the teriyaki sauce and stir to get the meat nice and saucy. Lower the slow cooker to the keep warm setting and eat when ready.

To make the sliders even more delicious I made a quick Asian slaw. It took only a few minutes to make a sugar-free ginger soy dressing. I once again used Steviva’s Nectevia Original in this recipe. I then tossed it with some coleslaw mix, shredded carrots, red pepper and green onion.

Let it hangout in the refrigerator for 10-15 minutes for the veggies to really grab up all the flavor of the dressing.

To give these sliders some heat I mixed mayonnaise and sriracha to make a sriracha mayo. You can easily make this as hot or as mild as you want. That bit of heat was a perfect pairing for the sweet and salty of the teriyaki and dressing.

Once everything was loaded onto some small rolls it was time to eat. All of the textures and flavors made this dish not only eye-catching but delicious as well.

For the Sugar-Free Sesame Teriyaki Sauce
  1. 1/2 c. Recued Sodium Soy Sauce
  2. 1/2 c. Water
  3. 2 tbsp. Nectevia Original
  4. 4 tbsp. Rice Vinegar
  5. 2 tbsp. Corn Starch
  6. 1 tbsp. Sesame Seeds
  7. 1/4 tsp. Ground Ginger
  8. 2 cloves Minced Garlic
  9. For the Sugar-Free Ginger Soy Dressing
  10. 1/4 c. Nectevia Original
  11. 1/4 c. Vegetable Oil
  12. 1/4 c. Rice Vinegar (I used unseasoned.)
  13. 1 tbsp. Reduced Sodium Soy Sauce
  14. 1 tsp. Sesame Oil
  15. 1/2 tsp. Sriracha Sauce
  16. 1/4 tsp. Ground Ginger
  17. 1 clove Minced Garlic
For the Asian Slaw
  1. 4 c. Bagged Coleslaw Blend
  2. 1 c. Shredded Carrots
  3. 1 Red Bell Pepper, sliced into very thin 2" long pieces.
  4. 2 green onions, finely sliced
  5. 3/4 c. Sugar-Free Ginger Soy Dressing
For the Sriracha Mayonnaise
  1. 1 c. Mayonnaise
  2. 1-2 tbsp. Sriracha Sauce (Use more or less for your heat preference.)
For the Slow Cooker, Sugar-Free Pulled Sesame Teriyaki Chicken Sliders
  1. 2 lbs. Boneless, Skinless Chicken Breasts
  2. 1/4 tsp. Black Pepper
  3. 1 - 11/4 c. Sugar-Free Sesame Teriyaki Sauce
  4. 2-3 tbsp. Water
  5. 12 Slider Buns or Dinner Rolls
  6. Asian Slaw
  7. Sriracha Mayonnaise
For the Sugar-Free Sesame Teriyaki Sauce
  1. Whisk all of the ingredients together into a saucepan.
  2. Heat over medium-high heat until the edges start to bubble.
  3. Lower the heat to medium and continue to whisk until sauce thickens.
  4. If the sauce gets to thick add some water to thin out.
For the Sugar-Free Ginger Soy Dressing
  1. Place all of the ingredients into a bowl and whisk together to combine. You can also place all of the ingredients into a jar with a lid and shake to combine.
For the Asian Slaw
  1. Place the coleslaw mix, shredded carrots, red bell pepper and green onions into a large bowl. Pour the sugar-free ginger soy dressing onto the vegetables and toss to coat.
  2. Chill in the refrigerator for 10-15 minutes to let the veggies absorb all of the flavor from the dressing.
For the Sriracha Mayonnaise
  1. In a bowl stir together the mayonnaise and Sriracha sauce.
For the Slow Cooker, Sugar-Free Pulled Sesame Teriyaki Chicken Sliders
  1. Place the chicken in the slow cooker.
  2. Season the chicken with black pepper and top with the sugar-free sesame teriyaki sauce and water if needed.
  3. Cover and cook on low for 4-5 hours or on high for 2-3 hours or until starting to fall apart when picked up with fork or tongs.
  4. Remove only the chicken from the slow cooker.
  5. Shred the chicken with two forks or in the bowl of your stand mixer fitted with the paddle attachment.
  6. Put the chicken back into the slow cooker with the sauce and stir to coat the meat.
  7. Lower the slow cooker to the warm setting.
  8. To assemble the sandwiches, slice rolls or open the slider buns and top each with some of the chicken and sauce. Next place some of the Asian slaw onto the meat. Spread the Sriracha mayonnaise onto the inside of the top of the bun. Place the top of the bun on the sandwich and enjoy.

The best part of football season is in full swing now! The post season, especially the big game always make for a great time to spend with family and friends. Everyone hangs out, watches a game and of course they all eat! No football party would be complete without fabulous food that’s easy to hold in one hand while rooting for your favorite team. While I was out shopping at Pete’s Fresh Market one day I spotted La Morena Chipotle Sauce on the shelf. I then had the sudden idea to take that chipotle sauce and use it to make some Slow Cooker Pulled Chipotle Chicken Sliders for our Sunday afternoon football watching.

My Hispanic heritage comes from my dad. My mom is Italian so I didn’t learn to cook Mexican dishes until I got older and finally asked my family members to teach me different things. I’ve taken what I’ve learned from them and branched out with Mexican flavors and combined them to create different types of food. To get this meal underway I first had to make the sauce. The sauce is packed full of so much flavor!

Once I got the sauce made I placed the chicken breast and sauce in the slow cooker. Turned it on and let it do its thing.

Once the meat was fork tender I took it out and shredded it. I then added it back into the sauce and served on slider rolls.

Ingredients
  1. 7 oz. can La Morena Chipotle Sauce
  2. 7 oz. can tomato sauce (Spanish style)
  3. 2 tbsp. green chiles
  4. 1/4. c. onion, diced
  5. 3 cloves garlic, minced
  6. 2 tsp. cumin
  7. 2 tbsp. Mexican oregano
  8. 1/2 tsp. pepper
  9. 1/2 tsp. salt
  10. 1 c. water
  11. 3 lbs. boneless, skinless chicken breast
  12. dinner rolls or slider buns
Instructions
  1. In a blender or food processor combine the first ten ingredients and blend.
  2. In a slow cooker add the chicken breast. Pour the sauce over the chicken and cook on low for 3-4 hours or until fork tender. Shred the chicken and then add back into the sauce. Serve on rolls with toppings of choice.

With the Superbowl right around the corner this Slow Cooker Barbacoa recipe is perfectly easy on you to make but perfect for feeding a hungry crowd. With just the right amount of heat it will definitely fire up your guests to root for their favorite team. Slow Cooker Barbacoa turns any party into a fiesta!

My family always does a big party for the big game and this year one of the foods i ma bringing is going to be this slow cooker barbacoa. I plan on doing a taco bar and using a couple of my other favorite Mexican meat recipes too. This is a great idea for a party. It will give your guests variety and take your food from the ho-hum of burgers, hot dogs and pizza to the fab fiesta that you want your party to be.

Ingredients
  1. 3 lbs. chuck roast or beef roast of choice trimmed of fat, cut into 5-6 pieces
  2. 4 cloves garlic, minced
  3. 1/2 c. Spanish onion, diced
  4. 4 tsp. cumin
  5. 2 tsp. Mexican oregano
  6. 1 tsp. salt
  7. 1 tsp. black pepper

  9. 1 tbsp. vegetable, canola or olive oil
  10. 3 tbsp. apple cider vinegar
  11. 3 tbsp. lime juice
  12. 1 7oz. can of chipotle chiles in adobo sauce
  13. 1 c. chicken broth
  14. 3 bay leaves
Instructions
  1. Place the trimmed and cut up beef into your slow cooker.
  2. In a blender or food processor pulse the garlic, onion, cumin, oregano, salt, pepper, cloves, oil, apple cider vinegar, lime juice and chipotle chiles in adobo sauce until fairly smooth. Pour the pureed mixture over the beef in the slow cooker. Pour in the broth and add the bay leaves. Stir to combine everything and to make sure all of the beef is coated. Cook on low for 6-8 hours or on high for 3-4 hours.
  3. Once the ,eat is done cooking shred it with two forks or using your stand mixer. Return the meat to the sauce in the slow cooker and turn the slow cooker to the keep warm or warm setting. Serve over rice or as tacos.

Slow Cooker Chicken & Italian Sausage Cacciatore

A few posts back I talked about how I needed to get into using my slow cooker more than I do. I like it but just don’t utilize it like I should be doing. I think I am coming along nicely though in trying to incorporate it into my life on a more regular basis. I have been using it once a week now which is a vast improvement over once a month or so like I was doing. Last night I decided that I would go with a recipe that I have made before and my family loves but I just don’t make it nearly as much as I should.

I came up with this recipe about two years ago. My mom’s birthday always falls on or around Mother’s Day and I decided to take her out to dinner and to see a musical as her gift for both. I picked a restaurant in the Old Town neighborhood of Chicago since it was near the theater we would be heading to after we ate. When I decided on the restaurant I knew my mother would be pleased with my choice, it was Topo Gigio Ristorante. My mother is a big Topo Gigio fan and I remember her talking about it growing up. My grandfather was from Sicily and Topo Gigio was originally an Italian and Spanish TV series which starred an adorable little mouse. Little Topo Gigio became popular in the U.S. though after being on the Ed Sullivan show. So the decor of Topo Gigio, complete with the iconic mouse dolls, figurines and shirts brought a smile to her face. Then we sat down and looked at the menu. The selections were amazing and we both loved what we ordered but I knew my husband would love what my mom ordered, the POLLETTO con SALSICCIA alla CACCIATORA. So I set out to recreate a home version. That was how my Slow Cooker Chicken & Italian Sausage Cacciatore was born.

Many people have had chicken cacciatore but adding the Italian sausage just adds another layer of flavor to this dish and cooking it in the slow cooker allows the flavors to really come together. This is a very hearty meal and it makes a lot, like dinner party sized or my family. I have made this as one of the meat options at holidays and it is always a hit.

Ingredients
  1. 1 1/2 lbs. boneless skinless chicken breasts or thighs (your preference)
  2. 1 1/2 lbs. Italian sausage (I prefer hot but you can use mild.)
  3. 1 lg. onion sliced thin
  4. 8 oz. sliced mushrooms
  5. 1 green bell pepper chopped into 1" pieces
  6. 3 6 oz. cans tomato paste
  7. 3-4 cloves garlic, minced
  8. 1 tbsp. capers
  9. 2 tsp. oregano
  10. 1 tsp. basil
  11. 1 tsp. celery powder or flakes
  12. 1/4 tsp. pepper
  13. 1 c. chicken broth
  14. 3/4 c. dry white wine
  15. 2 tbsp. olive oil
Instructions
  1. Lightly brown the Italian sausage. I do this since the sausage can be greasy and can make the sauce greasy then too. Slice the sausage into 3-4" long pieces. Cut the chicken into smaller pieces. For breast cut into thirds and thighs cut in half.
  2. Place the onions in the bottom of the slow cooker and then top with the meats. Next add the mushrooms and greens pepper. Mix together the rest of the ingredients in a large bowl and then pour over the meats and vegetables.
  3. Cover and cook on low for 7-8 hours or on high for 3-4 hours. Serve over rice or pasta.
Notes
  1. I serve mine of orzo since it's a rice shaped pasta and I like the best of both worlds.
  2. This will make a lot of food. If you are trying to feed a family of two or three you can divide this in two and freeze half before cooking for a second slow cooker meal.

I love my slow cooker! I honestly, really, really do but sometimes I just simply forget that I even have one. I have made a home for it on my counter so that I see it throughout the day so that I then think, huh, I should make something in that. Sadly though I still only use it a few times a month in a good month. I don’t know that if in the morning my dinner brain is just not functioning in high gear yet so I just don’t think about. Maybe it’s just another example of how I work better under pressure so scrambling to come up with dinner at 5:00 pm wins out over the easy, non-headache inducing slow cooker option. Whatever the reason though I am trying to get past it and use it more. I know it will make life easier. I also know that we will end up spending less on take-out too if I use it more. I just need to get my mind in the game and do it now.

Last week I did use it one day and I even made a brand spanking new recipe for it. I decided that slow cooker teriyaki pot roast sounded like a great idea and you know what? It really, really was a great idea! It came out very tasty and my whole group loved it. My daughter who eats only a few bites of meat a day and my nine-year old who we almost have to force feed because of medications (they make him not want to eat) both had two helpings. Seriously, if I get either of them to eat one whole helping I feel like mom of the year so two whole helpings was like a minor miracle.

Ingredients
  1. 2.5 - 3 lb. roast
  2. 1 c. garlic and green onion teriyaki sauce (I used Kikkoman)
  3. 1 c. beef broth
  4. 1/4 tsp. ground ginger
  5. 2 cloves garlic, minced
  6. 1/2 tsp. pepper
  7. 1 10 oz. bag of stir-fry vegetables
  8. cooked rice
Instructions
  1. Place the roast in the slow cooker and whisk together the eriyaki sauce, beef broth and all of the seasonings. Pour over the roast and cook on low for 7-8 hours or on high for 4-5 hours. Half an hour before it's done add in the frozen vegetables and stir to toss with the sauce.
  2. Take the roast out and shred it and then place it back into the sauce and stir to mix with the vegetables. Serve over the prepared rice.
