Ingredients
  1. 1 3.4 oz. box of chocolate instant pudding
  2. 1 c. milk
  3. 3/4 c. Guinness Draught
  4. 4 oz. Cool Whip
  5. 1 3.4 oz box of French vanilla instant pudding
  6. 1 c. milk
  7. 3/4 c. Bailey's Irish Cream
  8. 4 oz. Cool Whip
  9. 1/3 c. chocolate sauce
  10. 2 tsp. Jameson Whiskey
Instructions
  1. In a large mixing bowl stir together the chocolate pudding mix, Guinness and milk. Once combined fold in the Cool Whip.
  2. In another large mixing bowl stir together the french vanilla pudding mix, Bailey's Irish Cream and milk. Once combined fold in the Cool Whip.
  3. In a small bowl stir together the chocolate sauce and whiskey.
  4. Place each pudding mix into a large plastic baggie. Snip one of the corners on each bag and squeeze equal amounts of each pudding flavor into shot glasses. Spoon some of the chocolate sauce over the top.
  5. Chill, serve and enjoy!

Valentine’s Day is done and over so all the flowers, hearts, red and pink are out the window and it’s now time to bring out the green shamrocks and booze to celebrate St. Patrick’s Day! To kick off all the glorious fun associated with the celebration of this Irish holiday I decided to make some Irish Car Bomb Cupcakes and to make them even more wonderful they are amazingly awesome and easy to do. These cupcakes are rich, decadent and delicious and have three layers of boozy flavor.

To make these little treats of St. Patrick’s Day deliciousness easy to do I started out with a box of devil’s food cake mix. To keep it on the track of simplicity I skipped the eggs, oil and water the mix calls for and just added some Guinness to it. That’s right people, cake mix and beer and you have ready to go cake batter!  Could it get any easier?

While the cupcakes are baking you can whip up the chocolate ganache for the cupcake centers. The ganache is flavored with Jameson Whiskey and makes for a truffle like center to the cupcake. Oh yeah, that’s going to wow your friends and family!

Next comes the frosting. I opted to go with a cream cheese frosting to really take the richness of these to an even higher level! The cream cheese paired with Bailey’s Irish Cream really makes it taste like you’re enjoying a cheesecake taste to the cupcake. Now, combine all of these flavors together and you are going to love it!

For the cake
  1. 1 box devil's food cake mix
  2. 1 11.2 oz. bottle of Guinness Draught
For the ganache
  1. 8 oz. bittersweet chocolate, chopped
  2. 2/3 c. heavy whipping cream
  3. 1 tbsp. butter, softened
  4. 2 tbsp. Jameson Whiskey
For the frosting
  1. 1/2 c. butter, softened
  2. 8 oz. cream cheese, softened
  3. 4 c. powdered sugar
  4. 2-3 tbsp. Bailey's Irish Cream
For the cake
  1. Preheat oven to 350° and line cupcake pans with cupcake liners.
  2. In a large mixing bowl combine the cake mix and the Guinness. Mix on low speed for thirty seconds until combined and then increase speed to medium and mix for two minutes,
  3. Scoop the batter into the cupcakes liners and bake for 18-23 minutes or until they bounce back when pressed on the top. Cool in the pan for five minutes then remove and finish cooling on a wire rack.
For the ganache
  1. Place the chopped chocolate into a heat safe bowl.
  2. Heat the cream in a saucepan or in the microwave and bring to a simmer.
  3. Pour the heated cream over the chocolate and let sit for a few minutes.
  4. Add the butter and whiskey and stir until smooth.
  5. Let the ganache sit until soft but firm enough to work with.
For the frosting
  1. Cream the butter and cream cheese together.
  2. Add the powdered sugar one cup at a time mixing on low in between each addition.
  3. Stir in the Bailey's Irish Cream and mix on low. Once combined increase the speed to high and mix for five minutes until light and fluffy.
To assemble the cupcakes
  1. Core out the center of the cupcake with a cupcake corer, paring knife or the bottom of a pastry tip.
  2. Scoop about a tablespoon of ganache and place into the hollowed cupcake.
  3. Top with the frosting and refrigerate until ready to serve.

Pound cake is a staple in my house. Among my family is is hands down the most requested dessert. I grew up with a dad who has a love for pound cake like you would not believe. When I was young I didn’t get the whole draw to pound cake it took a long time for me to emerge as a pound cake fan girl. Now I like to experiment and do different takes and twists on my favorite basic pound cake recipe. To bring out the Irish from my maternal grandmother I just had to break out some Jameson Whiskey and make it into an utterly irresistible orange whiskey pound cake.

I’ve only drank whiskey once in my life It’s a moment I won’t ever forget. I’m a drinking wuss! Whiskey burns going down, made me cough and my eyes water. I know I’m never going to be that uber cool chick that can shoot whiskey so instead I make myself cooler by boozing up an awesome, freaking cake!

Utterly Irresistible Orange Whiskey Pound Cake

The whiskey in the cake adds a smoky undertone that pairs really well with the brightness of flavor that you get from the orange juice and zest. Pair the cake slices with some melted orange marmalade drizzled over the top and some whipped cream to finish it off. Serve with an Irish coffee or a shot depending on the crowd that your sharing it with.

Ingredients
  1. 1 c. salted butter, softened
  2. 3 c. sugar
  3. 1 orange zested
  4. 6 large eggs
  5. 3 c. all-purpose flour
  6. 1/2 tsp. baking powder
  7. 1/2 c. heavy whipping cream
  8. 1/3 c. Jameson Whiskey
  9. 3 tbsp. fresh squeezed orange juice
Instructions
  1. In a large bowl cream together the butter, sugar and orange zest until light and fluffy. Add the eggs one at a time, mixing until completely incorporated. In another bowl mix together the flour and baking powder. In a measuring cup combine the cream, whiskey and orange juice. Alternating between the wet and dry ingredients add them to the butter and egg mixture. Make sure to start and end with the dry ingredients.
  2. Thoroughly spray a bundt pan with baking spray and pour the batter into the prepared pan. Place the pan into the cold oven. Turn the oven to 325° and bake the cake for one hour and fifteen minutes without opening the door. When time is up check the cake. If done remove from the oven. If it still needs more time, let it continue to finish baking.
  3. Let the cake cool in the pan for 15 minutes and then invert onto a plate, wire rack or cake plate. Serve warm or cool completely.

St. Patrick’s Day is a holiday that is known for its drinks, adult drinks that is. So while the adults are getting tipsy celebrating St.Patrick’s Day to the fullest extent why not make a drink for the kids so they can partake of the festivities too? I remember as a kid every time we went out to a restaurant that my parents would let us order Kiddie Cocktails (a.k.a. Shirley Temples) and we just loved them! We always felt like we were so grown up with our sophisticated drinks in hand complete with fancy toothpick with cherries and sometimes an orange wedge on it. Continuing with that idea, my mom and grandma would always make a big punch bowl full of some sherbert punch drink just for the kids at family get-togethers. Fast forward to me and I have continued this tradition with my own kids right up to yesterday afternoon with a new one.

Yesterday we woke up to another bout of ice and snow and after being stuck half in the driveway and half out in the street for almost an hour my hubby decided to brave the streets and walk to the train and I just decided to keep the kids home from school. Since the kids and I were confined to the house I decided to make them an early St. Patrick’s Day treat. I made them very green, very yummy, Pineapple & Lime Ice Cream Sodas. These were a yummy sweet drink and the kids really loved how green they were, particularly my 6-year-old whose favorite color is green.

Now, while the green color does lend itself to St. Patrick’s Day, this can certainly be made for birthday parties, Easter, Christmas or for any old reason during the hot summer months.

Ingredients
  1. 1 packet Lemon-Lime Kool-Aid
  2. 1 ltr. Green River Soda
  3. 4 c. pineapple juice
  4. 1 tub of lime sherbert
  5. 1 tub of pineapple sherbert
Instructions
  1. In a large pitcher combine the Kool-Aid packet, Green River and pineapple juice. Stir to combine. In tall glasses scoop 1-2 scoops of each flavor into each glass and then pour enough liquid over the top to reach the top of the glass. Serve and enjoy.
Notes
  1. This can also be made in a punch bowl. You would just combine all of the liquid ingredients in the bowl and then scoop the sherbert into the punch bowl. As it melts you will get a foamy top to the punch.
  2. For those of you wondering what Green River is it is a lime soda. It is a very, very green soda and you can substitute a lemon-lime soda for it if you can't get any.

St. Patrick’s Day will be arriving in five short days. My oldest is probably preparing to drink himself silly this weekend at college in celebration. The ones in high school probably don’t care much and neither does my 9-year-old but my 5 & 6-year-old are excited! They have been making projects at school and watching me make stuff around here for St. Patrick’s Day as well. So I made them some Leprechaun Chocolate Marshmallow Popcorn as a treat and told them about the leprechauns.

As I’m sure you know, leprechauns are part of Irish folklore and believed to be fairies and short in stature. They like to make shoes and to save up all their gold in a hidden pot of gold at the end of the rainbow. They are also known for their love of mischief. That’s right, they are just like small children sneaking about being naughty. If you catch one though, legend says that they will grant you three wishes in exchange for their freedom. Many people have tried to catch a leprechaun, setting all sorts of traps for them but I don’t know any who have ever succeeded because leprechauns are such a wily lot. So instead of trying to catch one, I made a special snack just for them. This snack will give them sticky fingers to help with collecting their gold coins and with any mischief that may require sticky fingers.

So we left a bowl of the popcorn out to see if any leprechauns would stop by for some last night. Luckily, we had a lot of snow and a local leprechaun must have wanted to warm himself up because when we woke up this morning we knew one had eaten some of our popcorn. Popcorn was out of the bowl and a bit of a mess was made and the silly leprechaun left his hat behind. My kids thought it was funny and have been taking turns wearing his hat. So if you want to have some St. Patrick’s Day fun with your little ones make them some leprechaun chocolate marshmallow popcorn and maybe you too can have a leprechaun come visit.

Ingredients
  1. 1/3 c. popcorn kernels popped
  2. 2 tbsp. salted butter
  3. 1/2 c. marshmallow creme
  4. 6 oz. green Wilton Melts
  5. 6 oz. marshmallow Wilton Melts
  6. green, gold and white sprinkles
Instructions
  1. Remove all kernels that did not pop from the popcorn. Place the popcorn onto a baking sheet that is lined with wax paper. Place the butter and marshmallow creme into a microwave safe bowl and microwave for 30-40 seconds. Stir the butter and marshmallow creme until combined and smooth. Pour it over the popcorn and then use your hands to lightly toss the popcorn together so that it all has a little bit of the marshmallow mixture. Following the package instructions, microwave your candy melts and then drizzle the melted chocolate over the popcorn. I melted mine in pastry bags and then snipped the ends to make cleanup and drizzling easier. Sprinkle with the sprinkles and then let the popcorn sit so that the chocolate can setup.

With Valentine’s Day behind us it is now time to move on to the next big festive holiday. Next month will be St. Patrick’s Day and it’s a huge event here in Chicago. There are pub crawls, numerous parades and the Chicago River is dyed green. With our large Irish population we like to do it right. Celebrations go on for weeks. So in honor of this fun day I decided to make a sweet treat that kids and adults will enjoy.

My kids had once again wanted to cook with me so I came up with these little gems on Monday since they were off school for President’s Day and we had too much snow to go out and do anything. This helped to keep them occupied and they were so excited about how fun looking they were when we finished making them. Luckily, I had everything on hand already so these were really a quick and easy thing to make. If you are planning on throwing or attending any St. Patrick’s Day celebrations then these would be sure to be a hit.

Note to self: Do not feed these to your children when you are stuck at home with them and will have to deal with the sugar overload on your own.

Ingredients
  1. 1 box of frosted brownie mix (Mix prepared according to package instructions.)
  2. M&M's Minis in yellow and brown
  3. 1 pkg. of Airheads Xtremes Rainbow Candy
Instructions
  1. Preheat oven to 350° and spray a mini cupcake pan with baking spray.
  2. Mix the cupcake mix according to the back of the package. Scoop mix into the mini cupcake pan and bake for 18 - 20 minutes. Let the brownie bites cool in the pan for 5-10 minutes and then move to a wire rack to finish cooling.
  3. Once cooled completely, open the frosting packet and lightly frost the bottom of the brownies. Place four brown mini M&Ms on the bottom as the feet of the pot. Now frost the top of the brownie bites and place yellow mini M&Ms in the center. Cut the Airheads Xtremes in half and take one half and lightly press the ends into the frosting to create an arched rainbow.
