The holidays are right around the corner. That means my pocketbook is going to be stretched thin. I have a ton of immediate family to buy for and then there’s extended family, friends, co-workers, yada, yada, yada. You get the idea. Money gets tight quickly. I am all about classroom parties! I am that mom that totally gets into it and wants to be a part of all of them for each of her kids. For my 3rd grade son’s Valentine’s Day party I wanted to do something fun for him and that he would love. Him being a complete and total boy, I knew he would absolutely love, love, love a comic book theme and what goes awesome with a comic book theme? Why, finger lasers of course! That my friends is how I came up with this freaking cute Valentine’s Day finger laser cards printable!

The inspiration for these came while wandering around Target and stalking the clearance sections. I found these four packs of finger lasers on clearance and just knew these would make a great Valentine’s Day handout for one of my boys.

Then the fun began. I tried creating numerous cards to go with these but none of them really grabbed me as being the perfect fit for the finger lasers. That is until I made these comic book themed cards. I mean after all, don’t comic book villains and lasers often go hand in hand? Once i settled on the design I was then able to get the cards printed up, I cut them out, punched holes in them and took some twine and tide on the finger lasers. These cards would also work great with glow sticks or mini flashlights if you can’t find finger lasers.

I have used the MY M&M’S website and ordered before. My latest order was for my daughter’s birthday party this upcoming weekend. I haven’t shown them to her yet and I am keeping them as a surprise. I was able to pick her favorite colors, add a photo of her and customize the M&M’S to wish her a happy birthday. Then I went through all of the different packaging options and was able to pick single serve packaging in her favorite color, pink.

Our school district does not allow food treats during parties so it is always a challenge to find something to do that doe snot involve pencils, erasers or the like. Skip sipping the bubbly on your next romantic evening and reach for a sweet treat instead. These champagne cupcakes are a sweet treat that are a perfect dessert for any romantic evening, wedding shower or Valentine’s Day. The cupcakes look like an unassuming vanilla cupcake in bright white until you bite into them and taste the flavor of the champagne.

Two simple ingredients is all that is needed to make the cake portion of these cupcakes. It really does not get any easier than this. Seriously, I know I’m not the only one who likes to impress folks with food all while knowing that what they are oohing and aahing over was so easy to make.

When you mix the two ingredients together it reminds me of a science fair experiment with how it looks foamy.

The buttercream frosting for these cupcakes is also infused with champagne so the flavor carries throughout the entire dessert.

I just love how these cupcakes are such a bright white! It’s such a perfect treat for winter and the white and silver sugar I used to decorate them with just accentuates that.

For the cake
  1. 1 box of white cake mix
  2. 1 1/2 c. champagne (sparkling wine)
For the frosting
  1. 1 c. butter, softened
  2. 4 c. confectioner's sugar
  3. 2-3 tbsp. champagne (sparkling wine)
  4. 1-3 tbsp. heavy whipping cream
For the cake
  1. Preheat the oven to 350° and line cupcake pans with liners.
  2. In a large mixing bowl combine the cake mix and the champagne/sparkling wine. Mix on low for thirty seconds and then on medium for two minutes. Fill cupcake pan with the batter and bake for 18-23 minutes. Remove from oven and let cool.
For the frosting
  1. Cream the butter until light and fluffy. In small batches and on low stir in the confectioner's sugar. Stir in the champagne/sparkling wine. On low, stir in one tbsp. of the cream. Add more of the cream if the frosting is to thick. Mix on high for 5-10 minutes or until fluffy and creamy.
  2. Use to frost cupcakes or cake.

Do you have a young Jedi or Padawan in your house? (See how I went all Jedi Master there?) Then these are the Valentine’s Day cards for you! These Star Wars Valentine’s Day Printable Cards are a great option for your lightsaber wielding, one with the force child.

I have created these cards in three fun Star Wars themed designs. Each one with a classic Star Wars character and a fun Valentine’s Day themed line on them. Each card has a blank line for your child to write out their name and the recipient’s name as well. These can be printed out and cut out and left as is and used as a perfect sized bookmark. That really keeps the cost down! If you want to though you can punch wholes along the top or side and add a glow stick. I figured those were the one thing you could do inexpensively that actually kind of reminds me of a lightsaber. You can usually find packages of 7-10 at the dollar store so still a relatively inexpensive and food free option for class parties.

Peanut Butter M&M Blondies

I love baking! It is a form of relaxation and enjoyment for me. Even with that though sometimes I just want baking to be done fast. I don’t want to wait for pan after pan of cookies or bake, cool and frost a cake or cupcakes. No, sometimes what you really need is a dessert that you whip up the dough for fast and toss it all in a pan and bake in a relatively short time. Something that you don’t even need to wait for it to completely cool but can enjoy your first heavenly bite while it’s still warm. This was what happened to me the other day. I had the urge to bake but since I have been dieting I didn’t want to be overly tempted and opted to make Peanut Butter M&M Blondies.

I love baking with peanut butter. It always adds such great flavor and being a house full of peanut butter lovers means whatever I make with it is guaranteed to be a hit. I decided to make them seasonally appropriate by using the Valentine’s Day Peanut Butter M&Ms that come in red, pink and white. I also chose the Peanut Butter M&Ms over Reese’s Pieces because they have chocolate and peanut butter inside of them. This gives a nice subtle hint of chocolate when eating the blondies. I also used a smaller amount of peanut butter to give a lighter peanut butter flavor than you get in some peanut butter cookies. These Peanut Butter M&M Blondies have a great peanut butter flavor and are a great dessert to serve to a crowd.

  8. 1/2 tsp. salt
  9. 1 tsp. baking powder
  10. 11 oz. pkg. Peanut Butter M&Ms, divided
Instructions
  1. Preheat oven to 350° and spray a 9"x13" pan with baking spray.
  2. In the bowl of a stand mixer fitted with the paddle attachment cream together the butter, peanut butter, sugars, eggs and vanilla on medium-high until light and fluffy. Scrape down the sides of the bowl. Stir in the flour, salt and baking powder just until combined. Lastly, stir in the 1/2 of the Peanut Butter M&Ms.
  3. Press the dough into the prepared pan and press the remaining Peanut Butter M&Ms into the top of the dough. Bake for 20-25 minutes. Remove form the oven and let them cool. Cut into 2"-3" squares and serve.

Ah, February is here and you can almost feel the love in the air. Oh wait, maybe it’s not love. Maybe it’s just another blizzard for us cold states. This past weekend while Chicago was coated in a very thick blanket of snow it was my daughter’s birthday. Poor kid has had blizzards or mass snow fall on half of her birthdays. Since we were housebound and I hadn’t done any Valentine’s Day recipes yet I decided to make her a cake perfect for February. I also decided after shoveling that I wanted it to be easy to make so I used a box mix to make a Sprinkled With Love Valentine’s Day cake. My daughter loved her cake and it came out perfect for a Valentine’s cake to make for or with your little loveys this Valentine’s Day.

This cake comes together easily with the help of a box white cake mix. I did a three layer cake and one layer was white, one pink and the last one was red. The colors for the cake came out really bright and vibrant and to help make the white really pop I used some white food coloring (Americolor makes a great bright white gel color). For the frosting I used my marshmallow buttercream (which I love!!!) but you can use any frosting even canned. I finished off the cake with some Wilton heart sprinkles that I found that came in the white, red and pink colors to perfectly compliment the inside of the cake. You could even do these as cupcakes and just layer the batter into the cupcake liner and then cover the frosted tops with loads of sprinkles.

Ingredients
  1. 1 15.25 oz. box of white cake mix
  2. 3 egg whites
  3. 1/3 c. melted butter, cooled
  4. 1 1/4 c. water
  5. pink, red & white food coloring
  6. 3-4 c. buttercream frosting or canned frosting
  7. Wilton micro heart sprinkles
Instructions
  1. Preheat oven to 350° and spray three 9" round cake pans with baking spray. Then line each pan with a circle of parchment paper and spray that as well.
  2. In a bowl combine the cake mix, egg whites, melted butter & water. Mix according to package instructions, usually 2-2.5 minutes with a hand mixer. Divide the batter evenly into three bowls. Use red food coloring to color one bowl of batter, pink food coloring to color the second bowl and you can optionally add white food color to the final bowl. Pour one of the colors into one of the prepared pans and then add the other two colors to the other two pans. Bake the cakes for 20-25 minutes. Let the cakes cool and then invert them onto a cake circle, plate or wire rack.
  3. While the cakes are cooling make your frosting or get the canned opened and stirred. When the cakes are cool make sure to level the cakes using a cake leveler or a serrated knife. Place the red layer of cake onto a cake circle or a cake plate and frost the top. Next, ad the pink cake and frost the top of that one. Finally, add the white cake layer on top of that one. Apply a crumb coat (a thin layer of frosting to the top and sides to seal in crumbs) and then refrigerate at least 15 minutes to firm up the frosting. Frost the top and sides of the cake with the final frosting layer. Carefully press handfuls of sprinkles into the sides and top of the cake until it is completely covered.
