I like having meat recipes that I can make and use for multiple things. It makes weekday dinners so much easier. This Mexican pulled pork recipe is one of those. I can throw it all together in the slow cooker or dutch oven and let it slow cook and then shred it and divide it up. This recipe usually gives me 2 – 3 meals or one meal and lunch for my hubby for the week. You can also use whatever pork you choose. So this makes it budget friendly since you can then buy whatever is on sale that week. I have made this with pork chops, pork loins and pork roasts. All of them turn out great.

I usually use this meat for Mexican Pulled Pork sandwiches or tacos. In addition, I have used it in my tamales too. It does have some heat to it so it makes a great game day food for a crowd. I have frozen the leftovers and then I just add an additional can of Mexican hot style tomato sauce when re-heating. If you want to you could use a small can of regular tomato sauce in place of the Mexican hot style tomato sauce.

  1. 2 - 2.5 lbs. pork
  2. 1 7 3/4 oz. can Mexican hot style tomato sauce
  3. 1 3 oz. can diced green chiles
  4. 1 packet McCormick Tacos al Pastor Seasoning
  5. 1 1/2 c. water (Use 1 c. of water instead for slow cooker.)
Dutch Oven Instructions
  1. Preheat oven to 350° and place the pork in the dutch oven. Stir together the rest of the ingredients and pour over the pork. Cover and cook in the oven for 2 - 3 hours for pork chops or pork loin and 3 - 4 hours for a pork roast. It should be fork tender.
Slow Cooker Instructions
  1. Place pork in slow cooker. Stir together the remaining ingredients and pour over the the pork. Cook on low 5 - 6 hours for pork chops or pork loin or 6 - 8 hours for pork roast.
After Cooking
  1. Shred the meat and place back into the sauce and stir.
  1. I have had another recipe on here that called for Mexican hot style tomato sauce. When I list that it does not mean Rotel diced tomatoes. Mexican hot style tomato sauce is tomato sauce with jalapenos. It is a smooth, spicy sauce and you can make your own if you can't find it. I use the El Pato brand which I have found at numerous stores in my area and online. To make your own, remove the stem of a jalapeno and cut the jalapeno in half lengthwise. Place the jalapeno in some water in a saucepan and bring to a boil and let it boil for a few minutes until tender. Place the jalapeno (without the water) and an 8 oz. can of tomato sauce into the blender and puree until smooth.
  2. The easiest way to shred your meat quickly is to place it in your stand mixer, fitted with your paddle attachment and turn it on low. This will have the meat shredded in just a minute as opposed to doing it by hand with two forks.

    This looks delicious. We would have to substitute chicken or beef because we aren’t pork eaters, but I think it would still work great.

    This looks great. I usually do this with just a plain pork roast, that is one meal. Add taco seasoning for another meal and bbq sauce for sandwiches. But this if all ready for more than one meal without any additions. Love that.
