Summer is a time for getting outside, enjoying beautiful weather and having fun! This weekend the first ever Chicago Open Air Festival will be taking place at Toyota Park. This is a music festival that sets itself apart from the rest by combining rocking music with craft beer and gourmet man food!

Chicago Open Air Festival Basics

Chicago Open Air will feature live music performances by more than 40 rock bands. The festival will also include Gourmet Man Food featuring local and regional cuisine, a craft beer village highlighting top brews from the region, other entertainment and fan experiences, and will be hosted by Jose Mangin from SiriusXM.

Who’s Going to be on Stage?

Chicago Open Air has a spectacular music lineup ready to go for the three-day music festival! The festival will take place July 15, 16 and 17 at Toyota Park in Bridgeview, IL, just outside Chicago. Rammstein will kick off the festival weekend with a headlining performance on Friday—the group’s only 2016 U.S. performance and first Chicago show since 2012. Saturday will be headlined by Chicago’s own Disturbed, who have recently returned from a 4-year hiatus. Global rock juggernauts Slipknot will close out Chicago Open Air on Sunday.

Disturbed says, “It is long overdue that one of the greatest rock cities in the world has a festival of its own. We are honored and excited to be one of the headliners at the inaugural Open Air festival in our hometown of Chicago.”

Chicago Open Air will feature performances by over 40 bands, including Rammstein, Disturbed, Slipknot, Chevelle, Korn, Five Finger Death Punch, Ministry, Breaking Benjamin, Marilyn Manson, Of Mice & Men, and many more.

    Take Me Home is a not for profit, volunteer based foundation that has been saving the lives of homeless animals since 2001. Many families living in low-income areas cannot afford medical care, basic vaccinations, or spay/neuter surgeries for their companion animals. The donations raised help us to fund mobile veterinary hospitals to travel into these under-served areas to provide free spay and neuter, vaccinations, microchipping and administer medical care for animals in desperate need. Rosemont| It’s All Here

I was part of a media event invited to experience all that Rosemont has to offer visitors. All thoughts and opinions are my own.

 

Just northwest of Chicago is the town of Rosemont and it just so happens to be neighbors with O’Hare International Airport, one of the largest airports in the world. Rosemont sees guests from all over the world and locals as well. As a result they have strived to turn Rosemont into a place with something to entertain and delight everyone and they have achieved it with great success because it’s all here in Rosemont. The town is now celebrating its 60th birthday and it is home to the MB Financial Park, which is home to 13 venues featuring international cuisine, nightlife, live music and comedy, state-of-the-art film and bowling venues and so much more. Across the street from that is Fashion Outlets of Chicago. This indoor outlet mall houses high-end stores and amenities along with a stunning contemporary art collection. Rosemont is also home to Loews Chicago O’Hare, a gorgeous, world-class hotel.

The Loews Chicago O’Hare is a decadent and contemporary hotel. What sets it apart from its competitors is the vast display of art throughout the first floor of the building. After speaking with the general manager, I learned that this specific Loews hotel has a n agreement with a local art studio. The hotel displays and advertises the art for sale from the art studio. This is a mutually beneficial arrangement since the artists get exposure to their work and the hotel improves its aesthetics.

One of the great restaurants in MB FInancial Park is Hofbräuhaus Chicago. This classic Bavarian bier hall brings more than 400 years of beer brewing and dining expertise to the Chicagoland area. The German themed restaurant is home to a German micro-brewery and beer hall. Guests are offered in-house brewed beers along with a huge selection of both domestic and imported beer options.

Blue Man Group is something I wanted to see and experience since I first heard about it a long time ago. Life was crazy as a single parent to my three older kids and I never got a chance to go. Once I got married, we added to our family right away with my three youngest. With two of them on the Autism Spectrum I thought going to see Blue Man Group would be a pipe dream. Recently though we were invited to a performance and I have to admit that I was leery about taking them but Blue Man Group turned out to be a sensory delight for my Autistic family.

I had no idea that Blue Man Group automatically offers noise reducing headphones to children under the age of six so that the noise is not a problem for them. Did you know though that anyone can request them? That’s right, no matter your age if noise is a sensory issue for you then you can just ask for a pair of the headphones. This will leave you to enjoy the show without the sensory overload. My children absolutely loved the show and surprisingly were not bothered by the noise but we were sitting near the back of the theater so that may have helped.

The sounds, lights, and silly and fun interactivity of the show had my kids (ages 6-11) laughing and smiling the entire time. I wish I could have taken pictures during the performance not of the show but of my children doubled over with laughter and smiling from ear to ear throughout the show. It was the most I have ever seen my 11-year-old laugh!

The kids have asked to go back again but they would like to sit in the front rows where you have to wear protective ponchos. Ever since I posted the Four Ingredient CPS Lunchroom Butter Cookies last year I have received comments and emails from readers asking if I could please post the CPS Lunchroom Peanut Butter Cookies recipe as well. I have been meaning to do this one for some time now but other things just kept coming up and pushing it further and further back on my to-do list. Yesterday though I was able to finally get them made and photographed so that I could get the recipe up here this weekend.

For those of you outside of the Chicago area you probably aren’t familiar with these. Back in the day though before school lunches were regulated to death and when children were still allowed to enjoy the occasional treat at school the Chicago Public School System offered up cookies for sale in the lunchrooms.

These were a yummy treat and wildly popular with students for decades. Both recipes are simple, basic recipes that come together fast because they were designed just for that to get them done in time to feed all of the kids.

Ingredients
  1. 1/2 c. salted butter, softened
  2. 1/2 c. creamy peanut butter
  3. 1/2 c. sugar
  4. 1/2 c. light brown sugar
  5. 1/2 tsp. vanilla
  6. 1 egg
  7. 1 1/2 c. all purpose flour
  8. 1 tsp. baking soda
Instructions
  1. Preheat oven to 375° and line two baking sheets with parchment paper.
  2. Cream together the the butter and peanut butter on medium-high speed. Add in the sugars and vanilla and continue to mix together until light and fluffy. Mix in the egg. In a bowl combine the flour and baking soda and whisk together. Then stir into the wet ingredients until just combined.
  3. Scoop out 1 tbsp. of mix and roll into a ball if necessary. Place on the prepared pans and with a fork press down top to bottom and then again from left to right. Make sure you are only pressing enough to make marks and thin the dough out some. The cookies should be about 1/4" thick. Bake for 10-12 minutes and then cool.

Stanley Cup Ice Cream Cones

Monday was my son’s birthday he turned 11 and brought some awesome luck to the Chicago Blackhawks that night because they won the Stanley Cup for the third time in six years and won it at home for the first time since 1938. (It’s perfectly okay for me to believe he gave the his birthday luck for the win!) Today is the parade and the city is a madhouse! Hordes of people are lining the parade route and my 22-year-old is one of them. I would be too but with crowds that size I can’t bring my three youngest. I fear someone would get lost. SO since they were sad about missing the parade (My daughter wanted to yell “Oh captain, my captain!” to Jonathan Toews.) I made them some celebratory Stanley Cup Ice Cream Cones to eat while watching the parade on TV.

These are super easy to make but you will need some time for them to dry so make sure you have plenty of time.

To make your own Stanley Cup Ice Cream Cones complete with fondant pucks you will need:

Cake cones

Pairing Knife

Wilton Color Mist in silver

Chocolate Melts or Cubes

Disposable Pastry Bag

Small Package of Black Fondant (Walmart carries small Wilton packages in their craft aisle.)

Ice Cream, Yogurt or Custard of your choice

To start making your cone you will need two cake cones. Cut the top large section and part of the bottom off of one of the cones using a sharp pairing knife. The easiest way to do this is not just to cut straight through but cut and rotate the cone so that it only cuts the current section as you turn it. It comes out more even that way.

Next, you will spray the pieces with the Wilton Color Mist in silver. You can do each piece alone or fit them together and then spray them to use less spray. Let the pieces dry completely before handling.

Melt a small amount of white chocolate in the microwave according to package instructions in the disposable pastry bag. Once melted snip the tip off of the pastry bag and squeeze some of it into the smaller end on the halved cone.

While the chocolate is still melted fit it onto the upside down full cone. This will be the “”glue” that holds the pieces together and prevents ice cream melting everywhere.

While the chocolate is setting you will need to work the black fondant to soften it up. Once you have it to a workable state roll and flatten it with your hand. Then using a small fondant cutter, or the large end of a pastry tip cut out your “pucks”.

Now you can scoop up your favorite frozen treat into the Stanley Cup Cones and top with the fondant pucks and they are ready to be enjoyed. While not quite the real thing it does taste much better!

If you grew up in Chicago and attended a CPS school then you are more than likely familiar with the classic CPS lunchroom butter cookies that you used to be able to buy at lunch. These cookies were a favorite of students for years and years. If you didn’t attend a CPS school then maybe you were lucky enough to find a store that sold knockoff versions of the cookies. Either way, these cookies are near and dear to many a people who remember them from their youth.You’ll know the ones I’m talking about because of the distinctive ridges in the cookies.

So if you have had these cookies or you’re just a fan of a good, simple butter cookie then this is the recipe for you! These cookies are such a buttery treat and what makes them even better is that they only require four, yes I said four ingredients to make them. In the world of baking there are few things that are easy to make than these cookies.

Once you mix the four ingredients you will see that you will end up with a drier dough that is almost crumbly.

I used a 1 oz. scoop for my dough balls which is larger than your average cookie scoop. You can use a tablespoon to scoop the dough and then roll it into a ball. You follow that up with the classic finger press to flatten that gives this cookie its distinctive ridges.

Don’t press down too hard or too far otherwise you will end up with edges that are overdone. You want their to be about 1/4″ thickness on the edges. That way the edges are just turning a light, golden brown when the cookies are done.

Ingredients
  1. 1 c. salted butter, softened
  2. 1/2 c. sugar
  3. 1 tbsp. vanilla extract
  4. 2 c. all-purpose flour
Instructions
  1. Preheat oven to 375° and line two baking sheets with parchment paper or silicone liners.
  2. Add the butter and sugar to a bowl and cream together on medium-high speed with a mixer until it is light and fluffy. Scrape down the sides of the bowl and stir in the vanilla. In three batches stir in the flour and mix just until combined. Scoop out the dough with a 1 oz. scoop or use a tablespoon to scoop the dough. Roll into balls quickly as the more you handle the dough the more the butter melts. Place on the prepared baking sheets and using your three middle fingers press the dough down so that the edges are about 1/4" thick. Bake for 15-18 minutes or until the edges of the cookies begin to turn golden brown. Let the cookies cool on the pans for 5minutes and then move to a wire rack to finish cooling.
Notes
  1. There is a lot of butter in these cookies the more you handle the dough the more it melts. That is why I prefer to use a scoop over rolling. If that's not an option for you just do a very quick roll of the dough in your hands.
