I have had this idea for this cake rattling around in my head for almost a year now. For some reason though I kept either putting it off or something else would come up and it would get pushed to the back burner. A few days ago though I woke up and decided that I was going to make my final tweaks to the recipe and make it and by golly it was going to be abso-freaking-lutely ah-mazing! Do you want to know what? It was spectacular this Cookies N Creme Gooey Butter Cake!

I’m so glad that I didn’t put off making this cake again for two reasons. First of all this cake truly is unbelievably good! Second of all, later in the day after making this cake I came down with what seems like to me is the world’s worst case of strep throat ever. I’m talking I needed steroid shots just to get my tonsils off of each other so I could do that crazy little thing called breath. Then a visit to the ER when it did it again. That’s enough about that though.

This cake is so easy to put together but will have people who eat it wanting more. It’s the perfect addition to a get together, office party or celebration and with cookout season and Easter right around the corner you can’t go wrong bringing this to share with the other guests.

If you’ve never made a gooey butter cake before it consists of two layers. The base layer is the cake layer or in this case the cake and candy layer.

Ingredients
  1. 1 15.25 oz. box of devil's food cake mix
  2. 1/2 c. butter, melted
  3. 2 eggs
  4. 4 oz. bar of Hershey's Cookies N Creme Candy Bar, chopped
  5. 8 oz. cream cheese
  6. 2 eggs
  7. 6 Oreos or other chocolate sandwich cookies, crushed
  8. 2 c. powdered sugar
  9. 8 Oreos or other chocolate sandwich cookies, crushed
Instructions
  1. Preheat oven to 350 degrees and spray a 9 x 13 pan with baking spray.
  2. Mix cake mix, melted butter and 2 eggs on low speed until combined. Press into the prepared pan. Top with the chopped up candy bar.
  3. Mix cream cheese and eggs with an electric mixer. Slowly beat in 6 crushed Oreos or other chocolate sandwich cookies and confectioner's sugar mixing until combined. Pour and spread evenly over the cake layer. Top that with the other 8 crushed Oreos or other chocolate sandwich cookies.
  4. Bake for 40 to 45 minutes. Cool in pan and then cut and serve.

Soft Chocolate Chocolate Chip Cookies

Soft, chewy chocolate chocolate chip cookies.

Is anyone else tired of cookies yet this holiday season? Nah, I didn’t think so. Today I had the urge to make some cookies but I didn’t know quite what I wanted to try to bake. My youngest son being the ever helpful soul that he is decided that it should definitely be a really chocolatey cookie. I’m sure this had nothing to do with the fact that he is a bona fide chocoholic at the age of seven. Since we just got home from vacation (more coming on that soon) I had to go grocery shopping anyways this morning and decided that the boy was right and we did indeed need some chocolate in the house. So I decided to make my Chocolate Chocolate Chip Cookies.

These Chocolate Chocolate Chip Cookies will put a smile on any chocoholics face! They are a thick, soft and chewy cookie that be a hit anywhere that you bring them. These cookies get baked just until they are set. They have a lot of sugar in them and will continue to bake while cooling on the pan. Plus, with all of the cocoa powder and the two different types of chocolate chips in these cookies the centers while still warm will look like a brownie when you bite into them.

This recipe will definitely be a keeper for you. These cookies are perfect not just for the holidays while gathering with family and friends. It also works for any celebrations. Do you need a little cheering up? Bake a batch of these and enjoy! (Note: I cannot be held responsible for weight gain, thigh spread or needing new jeans.) No matter what you bake them for though these chocolate chocolate chip cookies will be gone in the blink of an eye. Which is good unless of course you ate them all yourself.

Ingredients
  1. 1 c. butter, softened
  2. 1 c. sugar
  3. 1 c. light brown sugar
  4. 2 eggs
  5. 1 1/2 tsp. vanilla extract
  6. 2 1/2 c. all-purpose flour
  7. 1/3 c. + 2 tbsp. Dutch process cocoa powder
  8. 1/2 tsp. baking soda
  9. 1/2 tsp. salt
  10. 1 1/2 c. white chocolate chips
  11. 1 1/2 c. milk chocolate chips
Instructions
  1. Preheat oven to 350° and line the baking sheets with parchment paper.
  2. In the bowl of a stand mixer fitted with a paddle attachment cream the butter and sugars on medium-high speed. Add the eggs and vanilla and mix until it’s completely incorporated and batter is smooth. Mix the flour, baking soda, cocoa powder and salt in a large bowl. Add the dry ingredients in four batches mixing just until incorporated each time on low speed. Stir in the chocolate chips.
  3. Scoop the dough out using a cookies scoop and place on the prepared baking sheets. Bake 9-11 minutes. Cool on the cookie sheet 5 minutes and then transfer to a wire rack to finish cooling.

Chocolate Candy Cane Blossoms

Peanut butter blossoms are a pretty common Christmas cookie and while I love them and think they are great I decided to change mine up a bit this year. Instead of peanut butter I opted to use the new chocolate spreads available and instead of plain Hershey Kisses I opted to go with the Candy Cane Kisses instead. This took them from the traditional to the Chocolate Candy Cane Blossoms that are a minty, chocolatey delight that are perfect for the holidays.

One of the things I love about these cookies is that they bake up quickly. They are also a perfect cookie for any mint fans out there as these will provide a healthy dose of mint but in a good way. These cookies do not puff up as much as their peanut butter brothers and the white chocolate kisses seem to melt more than the milk chocolate ones do too but that just makes them a lovely, gooey minty delight.

Ingredients
  1. 48 Hershey's Candy Cane Kisses unwrapped
  2. 1/2 c. butter, softened
  3. 3/4 c. Hershey's Spreads Chocolate
  4. 1/3 c. sugar
  5. 1/3 c. light brown sugar, firmly packed
  6. 1 egg
  7. 2 tbsp. milk
  8. 1 tsp. vanilla
  9. 1 1/4 c. all-purpose flour
  10. 1/4 c. cocoa powder
  11. 1 tsp. baking soda
  12. 1/2 tsp. salt
  13. 10 oz. pkg. Andes Peppermint Crunch Baking Chips
  14. Additional sugar to roll dough in
Instructions
  1. Preheat oven to 375° and line two baking sheets with parchment paper or silicone liners.
  2. Cream together the butter and chocolate spread. Add in the sugars and mix until fluffy. Add the milk, egg, vanilla and mix well. Stir in the flour, baking soda and salt and mix just until combined. Stir in the Andes Peppermint Crunch.
  3. Scoop out the dough and roll into 1" balls and roll in sugar. Place on the baking sheets and bake for 7-9 minutes. Remove the cookies from the oven and immediately press one of the Hershey's Candy Cane Kisses into the center of each cookie. Move the cookies to a wire rack to finish cooling.
Notes
  1. The dough can be scooped and rolled in0ot balls and then frozen. Do not roll it in the sugar though until ready to bake.

A classic fall favorite of mine is taffy or caramel apples. Over the years these sweet treats have gone through a makeover and come covered in all sorts of tasty bits these days. Something you see routinely now is chocolate covered apples and honestly it’s surprising to me how long it took to add this idea. I decided to take chocolate covered apples a step farther and turn them into a classic Halloween sight. These witch’s cauldron chocolate dipped apples are a silly and festive take on this and definitely something fun to do with the kids.

I’ve been making a few Halloween treats and I’ve been using Wilton Candy Melts in black and vibrant green. I also have a plethora of apples since we went to the apple orchard and I wanted to use some of them up but the kids wanted to be able to help me make something so this was how I came up with this idea. I figured I could use up the rest of my Halloween Wilton Candy Melts, clear out some of the apples and spend some time with the kids all in one fell swoop.

I have to say that I was ridiculously happy with how well these came out. Sometimes I get these ideas and they just don’t turn out like I wanted so it’s always pleasant when you get what you were shooting for.

Witch's Cauldron Chocolate Dipped Apples

Do not worry if some of the green chocolate candy melts dribbles a bit onto the black. It just makes it look like your cauldron is bubbling over. I opted to use bug sprinkles and I wanted eyeballs too but I did not have any sprinkles for that. Instead I used white pearl sprinkles and colored the pupil onto them with food markers.

Ingredients
  1. 3-4 apples depending on size
  2. 12 oz. Wilton Candy Melts in Black
  3. 6 oz. Wilton Candy Melts in Vibrant Green
  4. Sprinkles and candy to decorate
  5. 3-4 Sticks
Instructions
  1. Wash and dry the apples. Put the sticks into the apples being careful not to push the stick all the way through. Heat the black chocolate candy melts in a bowl according to the package directions. Dip the apples in the the black chocolate leaving the very top uncovered. Let the apples sit so that the chocolate can set. When the apples are almost set heat the green chocolate candy melts in a pastry bag according to the package directions. Do not let the green chocolate get to thin. Pipe the chocolate onto the tops of the apples in a thick, bubbling pattern. Add sprinkles to decorate.

Monster Munch Popcorn for Halloween Movie Night

It’s Friday night and on the weekends we like to do family movie nights like I am sure many of you do too. We curl up on the couches, pop in a family friendly movie and eat and snack the night away. With this being Halloween season right now we have a ton of scheduled movie nights filled with family friendly spooky themes. To complement our Halloween movie selections I decided to create Monster Munch popcorn as a silly, ghoulish treat.

Monster Munch popcorn takes just plain old butter popcorn and gives it an EWWW factor. The ghoulish slime on the popcorn is sweet, vibrant green colored white chocolate. The added gross factor of children worms and eyes are all completed with gummy candies. What makes this fun is that you can completely change this up to suit your family. You could stick with the green chocolate melts and use gummy witch fingers and pretzel cats. You could use red chocolate melts for a blood effect and some gummy fangs. Another option is to use black chocolate melts and add candy spiders and bugs. The possibilities go on and on and are only limited by your imagination.

I love pairing chocolate with popcorn. The salty, buttery popcorn and the sweet chocolate work so well together. The Wilton vibrant green melts give the perfect effect for slime.

Ingredients
  1. 1/2 c. popcorn kernels
  2. 3-6 tbsp.butter, melted
  3. popcorn salt
  4. 5 oz. colored chocolate melts (I used Wilton in vibrant green.)
  5. Candy, pretzels, marshmallows, etc.
Instructions
  1. Pop the popcorn kernels in a hot air popper or on the stove top. Top with butter and salt to flavor. Cover a baking sheet with wax paper and once the popcorn has cooled pour onto the prepared sheet. Melt the chocolate in a disposable pastry bag according to the package directions and then snip the tip and drizzle over the popcorn. Stir the popcorn up a bit and then let the chocolate set. Pour the popcorn in a bowl and mix in your candy, pretzels, marshmallows, etc. and serve.

Fun Frankenstein Rice Krispies Treats For Halloween

Most of the time baking is my form of relaxation and decompressing from the stresses of life but, sometimes the kids like to help me bake or they like to have project time to make a kid’s creation. I decided that a simple and fun idea for Halloween would be to make some festive, seasonal Rice Krispies Treats. So one day while strolling around the craft store I spotted some black and vibrant green colored Wilton Candy Melts and I thought they would be perfect for making the Rice Krispies Treats into some fun Frankenstein Rice Krispies Treats for Halloween.

The chocolates were the key to this idea bet then I realized I would need a few other items so I began searching the Wilton Halloween section. There I located some green and yellow candy eyes and some jumbo bug sprinkles. The bug sprinkles came in black and green too and since the actually looked like centipedes I decided that if only part of it was visible that it would work as Frankenstein’s bolts nicely.

These were so much fun to make and the kids had a blast creating their own versions of Frankenstein and then of course gobbling them up. This is definitely a kid friendly project and it would also make a great activity at a child’s Halloween party. You could setup already sliced Rice Krispies Treats either homemade or packaged with bowls of melted chocolate for dipping. Finish the activity table off with pastry bags of melted chocolate for more decorating and candies, sprinkles and other fun items to help create your own Frankensteins with.

Ingredients
  1. 9 Rice Krispies Treats, either homemade or packaged (if homemade use a 9"x9" pan)
  2. 2 12 oz. bags Wilton Candy Melts, one in Vibrant Green and one in Black
  3. 18 Candy Eyes
  4. 18 Jumbo Bug Sprinkles
Instructions
  1. Cut or shape your Rice Krispies Treats into squares or rectangles.
  2. Melt your green Wilton Candy Melts according to the package instruction in a bowl and your black ones in two separate pastry bags. Using an offset spatula cover the tops of the Rice Krispies Treats with the melted vibrant green candy melts. Place the candy eyes. Then snip the ends of the pastry bags. One should be a small opening and the other larger. Use the large opening pastry bag to pipe the hair on and use the small opening pastry bag to pipe a mouth. Dip the ends of the sprinkles in the vibrant green chocolate and press into the sides of the Rice Krispies Treats to look like bolts.

Chocolate is a favorite flavor to many, many people. It has seen many a people through a broken heart, a mid-afternoon bought of sleepiness and a lot of women through PMS. It is just food that seems to make people happy and to feel a lot better so who am I to argue with that. But, just hear me out here. What if chocolate isn’t enough one day? What if you need a little extra something to go with your chocolate? Well then have I got the perfect thing for you… Chocolate Marshmallow Buttercream! Don’t deny it you just drooled a little at the thought of that didn’t you?

So this delightful little idea has been running around in my head for some time now. Since way back earlier this year when I did Marshmallow Buttercream. I thought if this is good I bet it’d be even better in chocolate! I don’t know why it’s taken me this long to get a round to making it but it has and today was a rough day with the kids (Dear God, do I really have to wait more than a month before they go back to school?) and the weather here was awful. It was cloudy and 62° out. (Seriously, 62° for a high in mid-July is just wrong!) I just needed a little pick me up and a distraction for the kids so we did a group baking project and made some chocolate cupcakes and then that’s when the idea hit me that I was making this frosting today! I needed it and I had earned it dammit! So make it we did and I am so, so very glad we did. It’s good! Like kids keep stealing the cupcakes good and Luke my pickiest eater said it’s the best chocolate frosting ever. Coming from him that’s no small praise!

Ingredients
  1. 1 c. butter, softened
  2. 2 1/2 c. confectioner's sugar, sifted
  3. 1/2 c. good quality, dutch-processed cocoa powder, sifted
  4. 1 7oz. jar of marshmallow creme
  5. 2-3 tbsp. heavy whipping cream
Instructions
  1. In the bowl of a stand mixer fitted with a paddle attachment cream the butter. In batches add the sugar and cocoa powder and mix until combined. Scrape down the sides of the bowl and stir in the marshmallow creme until completely incorporated. Scrape down the sides again and add 2 tbsp. of the cream. Mix in on low and check consistency. Add the last tbsp. of cream if needed. Once the cream is finished being added turn the mixer up to medium-high speed and blend for 3-5 minutes. It will be lighter in color and fluffy. Use to frost cake, cupcakes or cookies.

Chocolate Marshmallow Buttercream

Instead of sprinkles I used the tiny Mallow Bits to decorate the tops of the frosted cupcakes.

Dear God, I hope you are stronger than I was and can manage to not eat this straight from the bowl. If you’re as weak as I am though don’t worry I won’t tell a soul.

The other day a fellow blogger was looking for s’mores recipes for a recipe roundup that she was planning on doing. I thought, hmmm, I think I may have a couple and so I looked. You know what? I had more than a couple, I had several and I only shared like three of them with her because I didn’t want to look like I had some sort of crazy fixation with s’mores but you know what? I think I do have some crazy ass fixation with s’mores because since then all I have been able to think about is s’mores recipes. I currently have about five ideas running through my head all about s’more-y goodness. One of those recipes that popped into my head was for S’mores Muffins because you know what’s better than a s’more? A s’more muffins first thing in the morning warm and yummy fresh out of the oven.

Once I had the idea of a s’mores mufiin in my head I decided I wanted to go with a brown sugar and cinnamon based muffin batter to provide the warmth and flavor of what would have been the graham cracker in a normal s’more. Then of course I needed to add the marshmallow but the thing with regular mini marshmallows is that they would just melt and dissolve into the batter if you cooked them. That’s where Jet-Puffed Mallow Bits come in. I have used these before in my S’mores Cookies and they are perfect. Since they are really tiny and the dried marshmallows, like the ones in the little hot chocolate packets or cereal they hold up to baking. They do not dissolve into nothingness and they maintain there shape while providing the necessary marshmallow flavor. Finally, I used mini chocolate chips as the chocolate to get the most chocolate I could throughout the muffins.

Ingredients
  1. 2 c. all-purpose flour
  2. 1/4 c. sugar
  3. 1/2 c. dark brown sugar
  4. 2 1/2 tsp. baking powder
  5. 1/4 tsp. baking soda
  6. 1/4 tsp. salt
  7. 1 tsp. cinnamon
  8. 1 tsp. vanilla
  9. 1 c. milk
  10. 1/2 c. oil
  11. 2 eggs
  12. 3/4 c. mini chocolate chips
  13. 3/4 c. Jet-Puffed Mallow Bits
  14. Cinnamon-Sugar
Instructions
  1. Preheat oven to 400° and line muffin pan with liners.
  2. In a large bowl add the first seven dry ingredients and stir together with a fork making sure to break up the brown sugar completely. Form a well in the center of the dry ingredients and add all of the wet ingredients. Stir together until completely combined and minimal lumps remain. Stir in the chocolate and marshmallows. You can reserve some of the marshmallows and chocolate and sprinkle them on the tops of the muffins before baking as I did. Sprinkle the tops of the muffins with some cinnamon-sugar.
  3. Place the pans in the oven and bake for 16-18 minutes or until a tester comes out clean. Cool the muffins in the pan for 5 minutes and then transfer to a wire rack to finish cooling or enjoy still warm.

Tootsie Roll Frosting - My Sweet Sanity

Sometimes I set out to make a new recipe and in my head I have a vision of what it will look like, how good it will taste and how it will appear visually to the eater. I will have some paper with measurements and ingredients listed and some scribbled out and adjusted or changed . Trying to get it to be just perfect in my mind and on paper before I ever even attempt to make it. That is my neurosis when working on recipes. For a few months now I have been working on and envisioning a chocolate marshmallow buttercream frosting. I thought it would be phenomenal. It would be chocolate-y and marshmallow-y and the perfect complement to a chocolate cupcake. Sometimes though reality is not what you envisioned and what you had pictured in your mind is not at all what you get. This was one of those times but what I ended up with was something even better than what I had originally thought to make. You see, when all was said and done I come up with a very thick but light frosting that tasted nothing like marshmallow and everything like a Tootsie Roll if it were somehow made into frosting and OH… MY… GOD!… is it good! Like I was just sitting with the kids eating it out of the bowl good. (Shhh… don’t tell anyone what an awful mom I am for that one.) Every single one of my friends and family that had these cupcakes loved them and all thought they tasted like Tootsie Rolls too so that is why I call this Tootsie Roll Frosting.

This frosting is perfect for cupcakes but due to how thick it is it has to be piped so would not work well to frost a cake. When I say it’s thick though it is but yet it’s still very light when you eat it. It’s not heavy in that sense. It is pliable though so you may even be able to use it to mold decorations if you decreased some of the cream.

Ingredients
  1. 3/4 c. butter, softened
  2. 3 tbsp. hot fudge (do not warm)
  3. 3 1/2 c. confectioner's sugar
  4. 1/2 c. cocoa powder
  5. 8 oz. bag Kraft jet-Puffed Mallow Bites Chocolate Brownie Marshmallows, melted and slightly cooled
  6. 2-4 tbsp. heavy whipping cream
Instructions
  1. In the bowl of a stand mixer fitted with the paddle attachment cream the butter and hot fudge together on medium-high. Sift together the confectioner's sugar and the cocoa powder and then stir into the creamed mixture in two batches on low speed. Stir in the melted marshmallow until combined. It will be very thick. Stir in two tablespoons of the heavy whipping cream and mix on medium-high speed for a minute. Scrape down the sides of the bowl and then add more cream if needed. Turn the mixer back on to medium-high speed and beat for 3 minutes.
Notes
  1. This is a thick frosting that will need to be piped and will not spread well. Don't worry though this is not a heavy frosting when eaten. When trying to gauge if it needs more cream you should know the ideal consistency will be a soft Play-Doh.

It’s National Chocolate Chip Day: Chocolate Chip Overdose Cookies

Did you know that today is National Chocolate Chip Day? I didn’t either until yesterday and normally I don’t follow silly days like this but as luck would have it I was already covered with a brand spanking new chocolate chip cookie recipe that I whipped up last week when I was working on another project. So lucky for you I am going to gift you all with a recipe for Chocolate Chip Overdose Cookies! A cookie that has so much chocolate that one of my kids didn’t want to eat it because he wanted more cookie in his chocolate chip cookie. Don’t let that worry you though, the other kids eat them without any hesitation.

I know, I know, believe you me I know… there are thousands and thousands of variations of chocolate chip cookies out there to be had. So what makes these chocolate chip cookies so special or any different from the thousands of other ones? Well, the best way I can answer that is to tell you that to me these cookies are more like a cross between a scone and a cookie in my opinion. They are a big, thick cookie that is not overly sweet just like scones but it has so much and so many types of chocolate that it will cure any chocolate hankering you may have run into. They are soft and chewy and since I blessed them with three different types of chocolate chips they will be the answer to any woman’s monthly chocolate need. Your hormones will thank you for eating one or ten.

Ingredients
  1. 2 eggs
  2. 1 c. brown sugar, firmly packed
  3. 1/2 c. butter, softened
  4. 1 tsp. vanilla
  5. 2 c. all-purpose flour
  6. 1 1/2 tsp. baking powder
  7. 1/2 tsp. baking soda
  8. 1/4 tsp. salt
  9. 2/3 c. dark chocolate chips
  10. 2/3 c. semi-sweet chocolate chips
  11. 2/3 c. milk chocolate chips
Instructions
  1. Preheat oven to 375° and line baking sheets with parchment paper or silicone liner.
  2. Cream together the eggs, brown sugar and butter on medium-high speed until the large lumps are broken up. Stir int he vanilla. Stir in the flour, baking powder, baking soda and salt until combined. Stir in all of the chocolate.
  3. Using a large 1.5 oz. scoop drop them onto the prepared pans and bake for ten minutes. Let them cool on the pan for five minutes and then move to a wire rack to finish cooling or eat while still warm.
