Being able to have a night off while others do all the prep work, cooking, serving and clean up is a nice, little treat. What I don’t like though is when they set the check down after the meal. Super Simple Apple Cinnamon Roll Cake

by Jennifer Wieland
Super Simple Apple Cinnamon Roll Cake

I always have these ambitious ideas for the weekends. I’ll wake up early, clean house before everyone wakes up, make a grand breakfast and follow all of that up with some fun family time. The reality is though I wake up thanks to my internal alarm clock and I may or may not clean house a bit. Breakfast falls short and is usually just a quick trip to the donut shop for some sugar laden treats and usually after that I decide after spending all week with the kids that I need at least one afternoon for a break and stretch out errands to an ungodly amount of time. Don’t judge me! You know you have roamed the grocery or discount store for hours just to enjoy the alone time. This past Sunday though I did wake up early, clean some house, make a yummy breakfast and spend the afternoon with the family. My yummy breakfast ended up being much easier than I thought with this super simple apple cinnamon roll cake.

Super Simple Apple Cinnamon Roll Cake

While I do love elaborate baking I’m just like anyone else and I sometimes like to take shortcuts to create recipes. This Apple Cinnamon Roll Cake was so easy to make! All I needed was one tube of cinnamon rolls with icing and a can of apple pie filling.

Super Simple Apple Cinnamon Roll Cake

This is one of those awesome things to make that tastes great and is ready to pop in the oven in just minutes.

Super Simple Apple Cinnamon Roll Cake

Once it’s out of the oven and cools for a minute or two you can ice it and enjoy it warm. I bet this would even make a great dessert if you topped it with some ice cream.

Super Simple Apple Cinnamon Roll Cake

This is the perfect breakfast for someone with a sweet tooth! It’s like cinnamon rolls meets apple pie meets a cake. Just what you need for those times you want something sweet but can’t decide between a few different things.

Super Simple Apple Cinnamon Roll Cake

This was a big hit in my house!

Strawberry Cream Cheese Frosting Topped Lemon Ricotta Cake

by Jennifer Wieland
Lemon Ricotta Cake with Strawberry Cream Cheese Frosting #WayfairCakeOff

Lemon Ricotta Cake with Strawberry Cream Cheese Frosting #WayfairCakeOff

There’s a reason the line “Let them eat cake” is so famous! It’s because cake is something that people around the world can agree is a delicious treat that comes in an enormous variety of flavor combinations! Wayfair asked some us Wayfair Homemakers to take on cake in the first ever #WayfairCakeOff and the only requirement for us was that we had to use fruit in it. With all of the warm weather fruit selections are at their peak right now in the grocery stores so this was definitely a fun and easy recipe to work on. For my cake I decided to create a Strawberry Cream Cheese Frosting topped Lemon Ricotta Cake .

Lemon Ricotta Cake with Strawberry Cream Cheese Frosting #WayfairCakeOff

I love to pair citrus and berries. They always compliment each other beautifully and always make me think of warm, sunny days.

Lemon Ricotta Cake with Strawberry Cream Cheese Frosting #WayfairCakeOff

If you have never had a ricotta cake you are missing out! The sweetened ricotta sinks to almost the bottom of the cake and creates a pretty white stripe throughout the bottom. It also makes the cake unbelievably moist and delicious!

Lemon Ricotta Cake with Strawberry Cream Cheese Frosting #WayfairCakeOff

With the flavors of this cake making me think of sunshine, summer days and picnics in Tuscan countryside, I decided to keep the decorating to a sweet and simple for a more rustic look and only frosted the tops of each layer.

Lemon Ricotta Cake with Strawberry Cream Cheese Frosting #WayfairCakeOff

Even though the cake may have been decorated simply there was definitely nothing simple about how delicious this cake is! This Strawberry Cream Cheese Frosting Topped Lemon Ricotta Cake will wow whoever you serve it this summer with its summer fruit flavors. While the stripe of sweetened ricotta cheese will leave the cake moist and with a uniquely, delicious flavor!

Meyer Lemon Cupcakes a Perfect Spring Treat

by Jennifer Wieland
Meyer Lemon Cupcakes

Chicago springs can go from frigid temps and snow to sunny and summery with in a day or two. It’s something you never really get used to no matter how long you live here. That’s what makes these Meyer Lemon Cupcakes such a perfect spring treat! If it’s a nice sunny and warm or hot day you want a treat that reminds you of why the hot approaching months are so great! If it’s cold and snowy you want a treat that is bright and refreshing in flavor to make you realize the grey and cold will soon be a thing of the past.

Meyer Lemon Cupcakes

This past weekend we went to my parent’s house to celebrate my dad’s 64th birthday. It just so happened to be one of the bright, warm and sunny spring days that make spring awesome. I decided that I wanted to do a citrus cupcake for him. I had both lemons and Meyer lemons on hand. I opted for the Meyer lemons though because I love the unique flavor they have.

Meyer Lemon Cupcakes

If you’ve never had a Meyer lemon then you should try to find some. They are shaped like a lemon but the peel can be yellow or orange. Meyer lemons you see are unique combination of lemon and orange. It helps cut the sourness of a regular lemon down and adds a bit of sweetness.

Champagne Cupcakes a Tasty Romantic Dessert

by Jennifer Wieland
Champagne Cupcakes a Tasty Romantic Dessert

Skip sipping the bubbly on your next romantic evening and reach for a sweet treat instead. These champagne cupcakes are a sweet treat that are a perfect dessert for any romantic evening, wedding shower or Valentine’s Day. The cupcakes look like an unassuming vanilla cupcake in bright white until you bite into them and taste the flavor of the champagne.

Champagne Cupcakes a Tasty Romantic Dessert

Two simple ingredients is all that is needed to make the cake portion of these cupcakes. It really does not get any easier than this. Seriously, I know I’m not the only one who likes to impress folks with food all while knowing that what they are oohing and aahing over was so easy to make.

Champagne Cupcakes a Tasty Romantic Dessert

When you mix the two ingredients together it reminds me of a science fair experiment with how it looks foamy.

Champagne Cupcakes a Tasty Romantic Dessert

The buttercream frosting for these cupcakes is also infused with champagne so the flavor carries throughout the entire dessert.

Champagne Cupcakes a Tasty Romantic Dessert

I just love how these cupcakes are such a bright white! It’s such a perfect treat for winter and the white and silver sugar I used to decorate them with just accentuates that.

  2. 1/3 c. brown sugar, firmly packed
  3. 6 tbsp. butter, melted
  4. 1/2 tsp. cinnamon (optional)
For the truffle filling
  1. 12 oz. pkg. semi-sweet chocolate chips
  2. 3/4 c. sweetened condensed milk
  3. 1/2 tsp. vanilla
For the topping
  1. 2 c. mini marshmallows
Instructions
  1. Preheat oven to 375° and line an 8" x 8" or 9" x 9" pan with parchment paper so that you have an overhang of a few inches on two sides. This will help with removing the dessert from the pan later. Spray the sides of the pan and the parchment paper with baking spray.

  4. In a microwave safe bowl combine the chocolate chips, sweetened condensed milk and vanilla. Microwave on 50% power for 45 seconds. Stir the mixture. If not completely melted microwave again on 50% for another 30 seconds. Do this until you can stir it and everything is melted and smooth.
  5. Pour the chocolate mixture over the graham cracker crust and spread evenly. Top with the marshmallows.
  6. Place under the broiler until the marshmallows are browned and toasted. Watch this carefully so they do not burn.
  7. Let the dessert set for a few hours so that the chocolate layer can firm up. Cut into 16 2" squares and serve.

Pot of Gold Brownie Bites

by Jennifer Wieland
Pot of Gold Brownie Bites

With Valentine’s Day behind us it is now time to move on to the next big festive holiday. Next month will be St. Patrick’s Day and it’s a huge event here in Chicago. There are pub crawls, numerous parades and the Chicago River is dyed green. With our large Irish population we like to do it right. Celebrations go on for weeks. So in honor of this fun day I decided to make a sweet treat that kids and adults will enjoy.

My kids had once again wanted to cook with me so I came up with these little gems on Monday since they were off school for President’s Day and we had too much snow to go out and do anything. This helped to keep them occupied and they were so excited about how fun looking they were when we finished making them. Luckily, I had everything on hand already so these were really a quick and easy thing to make. If you are planning on throwing or attending any St. Patrick’s Day celebrations then these would be sure to be a hit.

Pot of Gold Brownie Bites

Note to self: Do not feed these to your children when you are stuck at home with them and will have to deal with the sugar overload on your own.
