  1. Keep Bananas Yellow Longer – Sometimes we go through bananas in our house in what seems like the blink of an eye. Other times, not so much. After to many bunches of bananas that went black before we got to eat them I learned the simple trick of wrapping the stems in plastic wrap. The plastic wrap helps contain ethylene gas, which bananas produce naturally while they ripen. There is nothing like going to an ice cream shop and getting a float. There are tons of different kinds but the most common is of course the root beer float. If you are at a really good place they make their own root beer and ice cream in-house and you get that lovely foam on top when the two are combined. Mmmmm… now that is some heavenly stuff right there. So what could make the almighty root beer float even better? How about turning it into a root beer float cupcake?

I first made these cupcakes and posted about them a few years ago for my dad’s birthday. He is a huge root beer float fan and I figured he would really get a kick out of these cupcakes. These Root Beer Float Cupcakes are some surprisingly, simple yet delicious treats. Every single time I make these they end up gobbled up by kids and adults alike. They are absolutely a perfect treat for a summer, backyard barbecue or to serve at any of the summer holidays.

I know the idea of a filled cupcake may seem daunting but they really are much easier than you’d think. Plus, I know my kids are always happy to come grab the bits of cored out cupcake to munch on as a snack.

For the cupcakes
  1. 1 box of White Cake Mix
  2. 1/2 c. butter, melted
  3. 2 eggs
  4. 1 1/4 c. root beer
For the filling
  1. 1 pint vanilla ice cream, softened slightly.
For the frosting
  1. 1 16 oz. container of whipped topping
  2. 1 tsp. root beer extract
For the cupcakes
  1. Preheat oven to 350° and line cupcake pans with liners.
  2. In a large bowl combine all of the ingredients and mix with a hand mixer for 30 seconds on low-speed until combined. Increase speed to medium and continue to mix for 2 more minutes.
  3. Fill liners 2/3 of the way full and bake for 18-20 minutes. Let cool in pan for a few minutes and then remove to a wire rack and continue to cool there.
  4. Core the center of the cupcake out. Do not go all the way through the bottom. You can use a cupcake corer, paring knife or the large end of a pastry tip.
  5. Place softened ice cream in the cored cupcake.
For the frosting
  1. Mix the whipped topping and root beer flavor and stir until combined well.  Fill a pastry bag fitted with a tip and pipe the frosting on.
  2. Place the cupcakes in the freezer until ready to serve them.
Notes
  1. If you don't have or can't find root beer extract don't worry. Simply take 1/4 c. of root beer and place it in a saucepan. Heat over medium-low heat until reduced to a teaspoon or two. Let it cool and then add to the whipped topping.

Summer is here! School is out and I am already wondering how much longer until school is back in session. I love my babies, don’t get me wrong but trying to work from home while entertaining the troops can try even the most patient of souls. That’s why getting together at night or on the weekends with friends for a mommy break is so important. I’m going to share with you my five favorite mommy break activities and how to make NESCAFE Clasico Affogato, the perfect summer pick me up.

Stepping away from work, family, home and everyday stresses is important for moms. You need that balance so that you feel more than just a wife, mom, employee, volunteer, housekeeper or whatever else takes up your days.

Top 5 Mommy Break Activities

Spa Time

You take care of everyone all week-long. Taking time to pamper yourself with your girlfriends is a great way to indulge while unwinding with your besties. Whether it’s a full on spa day or a simple mani/pedi it will go a long way to restoring you.

Shopping

This one is tricky. As a mom it’s so hard to shop for just you. To walk into a mall and say, ‘This is just me today and not the house, the kids or the hubby.” Take the time to focus on you and enjoy shopping with your girls who will be honest about how you look in the clothing you try on. Plus, get yourself a cute outfit, some sexy new shoes or some lingerie and your spouse will definitely be willing to let you to slip out with treats like that to show off.

Lunch or Dinner

I know this one seems a little odd. I mean you can just go out to eat with your family any old day of the week. What makes it different with your buddies is that they are in the same boat as you most likely. They want a break, the kids are driving them nuts, they want to rant about whatever annoying thing their husband is doing… You get the idea. You get to be you and just you, not mommy or wifey all while enjoying some good food. Added bonus, you get to head to that fancy little bistro or dessert bar that your hubby has no interest in going to dine at.

Movies

Sometimes you don’t need to talk to have a good time with your friends or to unwind. Sometimes you just want to sit in the dark, eat junk food, and watch a sappy. chick flick with someone who will totally appreciate it as much as you do. 

Hit the Gym

The gym? Say what? I know that’s what you were thinking. The gym is a great way to unwind. Working up a sweat while exercising is not only great for your body but also your mental well-being. Add in talking to your bestie (a.k.a. your personal psychiatrist) and you will definitely be felling like yourself again when it’s over.

The important thing in all of this is finding what works for you and your friends to help restore a bit of the sanity that the summer, schools out insanity creates.

Ingredients

The ice cream was really good and the menu was nice and big! I loved the huge selection on the menu for kids. My daughter got the Jack-in-the-Box this time but has a list from that of items she wants to try the next few times we go there.

Stanley Cup Ice Cream Cones

Monday was my son’s birthday he turned 11 and brought some awesome luck to the Chicago Blackhawks that night because they won the Stanley Cup for the third time in six years and won it at home for the first time since 1938. (It’s perfectly okay for me to believe he gave the his birthday luck for the win!) Today is the parade and the city is a madhouse! Hordes of people are lining the parade route and my 22-year-old is one of them. I would be too but with crowds that size I can’t bring my three youngest. I fear someone would get lost. SO since they were sad about missing the parade (My daughter wanted to yell “Oh captain, my captain!” to Jonathan Toews.) I made them some celebratory Stanley Cup Ice Cream Cones to eat while watching the parade on TV.

These are super easy to make but you will need some time for them to dry so make sure you have plenty of time.

To make your own Stanley Cup Ice Cream Cones complete with fondant pucks you will need:

Cake cones

Pairing Knife

Wilton Color Mist in silver

Chocolate Melts or Cubes

Disposable Pastry Bag

Small Package of Black Fondant (Walmart carries small Wilton packages in their craft aisle.)

Ice Cream, Yogurt or Custard of your choice

To start making your cone you will need two cake cones. Cut the top large section and part of the bottom off of one of the cones using a sharp pairing knife. The easiest way to do this is not just to cut straight through but cut and rotate the cone so that it only cuts the current section as you turn it. It comes out more even that way.

Next, you will spray the pieces with the Wilton Color Mist in silver. You can do each piece alone or fit them together and then spray them to use less spray. Let the pieces dry completely before handling.

Melt a small amount of white chocolate in the microwave according to package instructions in the disposable pastry bag. Once melted snip the tip off of the pastry bag and squeeze some of it into the smaller end on the halved cone.

While the chocolate is still melted fit it onto the upside down full cone. This will be the “”glue” that holds the pieces together and prevents ice cream melting everywhere.

While the chocolate is setting you will need to work the black fondant to soften it up. Once you have it to a workable state roll and flatten it with your hand. Then using a small fondant cutter, or the large end of a pastry tip cut out your “pucks”.

Now you can scoop up your favorite frozen treat into the Stanley Cup Cones and top with the fondant pucks and they are ready to be enjoyed. While not quite the real thing it does taste much better!

Restaurant.com Review Crew: Mindy’s Ribs Review

For this month’s Restaurant.com Review Crew review I headed out to lunch with the kids on a day that they had a half day at school earlier this month. We went out to a favorite local place called Mindy’s Ribs in Mokena, IL (a Chicago suburb) as a nice treat for the kids. They absolutely love going here to eat! They have a huge menu with a large kid’s menu so each of them can always find something that they want to eat. I always like places like that because it makes it easier on me. Most of the time when we dine out there is at least one person whining about where we are going because they want something else. That never happens here and I mean how could it with standard kids foods like hamburgers, hot dogs, grilled cheese, chicken tenders and corn dog nuggets and  different items like a sub, Italian beef, BBQ chicken and ribs as other choices for the kids to eat. I also like that I can get amazing soups and wraps there along with the 1950’s retro decor. The other thing the kids and I like is that they also have an ice cream counter where you can get cones, shakes, malts, sodas and sundaes. Even better though they sell kiddie cones for 25¢. These are a perfect incentive to get the kids to sit, eat and behave. (Note* I am totally okay with bribing my children at times.) When they are done they each get a quarter and dash up to the ice cream case to decide on the flavor they want and then get to be big kids and pay for their own ice cream. The cones are small enough that they can finish them but big enough that they think they’ve had a really good treat.

This weekend was full of celebrations at our house. Saturday was my wedding anniversary and Sunday was my son Jackson’s 7th birthday. We always joke about this because on our anniversary the year he was born we went out to celebrate at a local Japanese steakhouse named Hamada for a late dinner and I of course being pregnant and in front of heaps of amazing food ate waaaaaay too much. By the time we got home it was late and the other kids were already getting ready for bed or asleep. My husband who was in a food coma was laying in bed flipping through TV channels while I was about to get on my pajamas. I just didn’t feel right though and I knew my labor was starting. I told my husband this and he said, “Do you think I have time for a nap?” I replied promptly with a no and glared at him. We headed to the hospital and sure enough I was in labor. Luckily though he held on and didn’t come for a few hours and his birthday is on a separate day from our anniversary. It’s funny though, because my little Jackson is my foodie through and through. He will always try things I make that the other kids turn their noses up at and  he loves to help me cook and bake more than the rest of them. I always joke that he was a Hamada induced delivery and that is why he loves food so much. He thinks it’s funny and I think it’s true.

For Jackson’s birthday I knew I wanted to do something totally different for his cake. Something unique and completely over the top and something chock full of chocolate because he has a chocolate love that would make any woman in the throes of PMS proud. He has also been on an ice cream kick lately with the weather getting warm so I decided that had to be a part of it too. I ended up settling on making a cake that actually contains no cake but a ton of favorites for any chocolate lover and that is how Chocolate Lovers Ice Cream Cake was born. A dessert with a brownie base, fudge frosting, chocolate chip cookie, hot fudge, chocolate chip ice cream and Reese’s Peanut Butter Cups. Oh yeah, it was chocolate heaven and the birthday boy totally loved it!

Ingredients
  1. 1 quart of ice cream, softened (I used chocolate chip but you can use your favorite.)
  2. 1 box of 8"x8" or 9"x9" fudge frosted brownie mix, mixed as directed on package
  3. 1 package of refrigerated chocolate chip cookie dough (I used Pillsbury's Simply brand)
  4. 1 jar of hot fudge
  5. 14 Reese's Peanut Butter Cups, chopped up into eighths (You can also change out the candy too.)
To Prepare
  1. You will need two - three 8" cake pans for this dessert. Line the first cake pan with plastic wrap that covers the entire bottom and sides and hangs over the sides with several more inches. Press the softened ice cream into the cake pan evenly and then fold the plastic wrap up to cover the top completely. Place in the freezer for 8 hours.
  2. When the 8 hours is almost up preheat the oven to 350° and spray an 8" cake pan with baking spray and line the bottom with a circle of parchment paper and then spray that. Mix up the brownie mix following package instructions and then pour into the prepared pan. Bake according to the package instructions for an 8" pan. Remove from oven and let cool for about 25 minutes and then remove from pan and continue cooling on a wire rack.
  3. Prepare another 8" cake pan like you did for the brownies but this time press the cookie dough into the pan leaving about 3/4" between the cookie dough and the side of the pan. The cookie dough will spread and if you press it all the way to the edge of the pan it will puff up along the edge and you want a flat cookie. Place the cookie pan in the preheated 350° oven and bake for 16-18 minutes. The edge will be brown but the center will be just cooked through. Cool the cookie in the pan for about 15 minutes and then remove form the pan and continue to cool on a wire rack.
To Assemble
  1. Place the brownie on a cake board or cake plate/stand and frost with the pouch of included fudge icing. Place the cookie on top of that and then frost that with 1/3 cup of slightly warmed hot fudge so it is spreadable. Let it cool and setup and then top with the ice cream. Cover the top with the candy and place back in the freezer until ready to serve. Then top with additional hot fudge when serving.
