While I am a baker through and through I do love making candies too. It only happens on special occasions or for the holidays but it’s something I learned from my mom. Since we were kids she would spend hours making fudge and truffles. She’d find pretty tins each year and package them up beautifully for friends, family and coworkers as gifts. Since I know she will be making her recipes every year that means if I want to make candies I need to use different recipes than hers. Since, I also have a houseful of kids and time is short I need quick and easy recipes. Lucky for you! You can’t get any quicker or easier than my 5 Ingredient Mexican Chocolate Fudge.

While I learned my love of making sweet treats from my mom I get my Mexican flare from my dad. My grandma was Mexican and we spent many holidays at her house enjoying Mexican fare. Since Mexican chocolate is a staple in Mexican cuisine and different from American chocolate I like using it. If you aren’t familiar with Mexican chocolate it is less sweet than its American counterpart and it tend to have cinnamon and almond flavors in it. You can even find some with peppers added to it. That’s why it works well in both sweet and savory foods.

My secret weapon to make my fudge recipe quicker and easier than my mom’s traditional recipe? It’s my use of NESTLÉ® La Lechera Sweetened Condensed Milk. If you aren’t familiar with sweetened condensed milk you are missing out on a sweet lovers secret weapon.

You can use it in candy or baking recipes but you can also add it to the tops of cookies, add a bit to your coffee or quickly make yourself some caramel. It’s an inexpensive item that you’ll want to add to your grocery shopping list to amp up your holiday baking. Then you can grab it on your next trip to Walmart in the Mexican foods aisle.

My other cheat to making this recipe is that there is no big pot and constant stirring, watching, timing and temperature checking like you get in so many candy recipes. Nope, this one takes minutes in the microwave. Literally the most taxing thing about making this fudge is waiting for it to chill so you can cut it.

Ingredients
  1. 24 oz. Semi-Sweet Chocolate Chips
  2. 14 oz. Can of La Lechera® Sweetened Condensed Milk
  3. 4 tbsp. Butter
  4. 1 tsp. Cinnamon
  5. 1/2 tsp. Almond Extract or Emulsion
Instructions
  1. Add the chocolate, La Lechera® Sweetened Condensed Milk and butter into a large microwave safe bowl.
  2. Microwave for 90 seconds and then stir.
  3. Microwave for another 15 seconds and stir again.
  4. If the mixture is not completely melted and smooth then microwave for another 15 seconds and stir again.
  5. Stir in the cinnamon and almond extract.
  6. Line and 8"x8" pan with parchment paper.
  7. Spread the chocolate mixture in the pan evenly.
  8. Chill in the refrigerator until firm, about an hour.
  9. Cut into 1" squares and serve.
Notes
  1. This fudge can be stored in the refrigerator in an airtight container for up to two weeks.
  2. If you want to gift the fudge in tins or boxes mini cupcake liners are the perfect holders for each individual piece.

Ingredients
  1. 3 c. of long grain white rice
  2. 3 - 4 c. chicken stock or broth
  3. 1/2 tsp. pepper
  4. 1 tsp. salt
  5. 1 tbsp. garlic paste
  6. 3/4 c. red bell pepper. diced
  7. 3/4 c. green bell pepper, diced
  8. 1/2 c. celery, diced
  9. 1/2 c. carrot, diced
  10. 1/2 c. Spanish onion, diced
  11. 1 tbsp. finely chopped cilantro
Instructions
  1. Rinse and drain your measured rice in the rice strainer/steamer basket.
  2. Pour rice into the pot of the rice cooker.
  3. Pour in enough chicken broth/stock to reach the mark for 3 cups of liquid.
  4. Stir in the pepper, salt and garlic paste.
  5. In the steamer basket of your rice cooker place all of the veggies and place over the rice pot.
  6. Close the lid of the rice cooker and turn the rice cooker on and press the white rice button.
  7. Allow the rice to cook through the white rice cycle.
  8. Once done pour the veggies from the steam basket into the rice pot and stir together.
  9. transfer the Mexican rice to a serving bowl and sprinkle the cilantro on top and serve.
Notes
  1. If you can't find a Spanish onion use a yellow onion instead.
  2. If you do not have garlic paste on hand use minced or pressed garlic.
  3. If you would like to substitute brown rice you can. Just use the brown rice settings and adjust liquid if needed according to your manual.

Ingredients
  1. Vegetable or canola oil for cooking
  2. 3 c. rotisserie chicken, shredded
  3. 1 tsp. onion powder
  4. 1 tsp. garlic powder
  5. 1/2 tsp. cumin
  6. 2 tbsp. cilantro, chopped
  7. 1/4 tsp. pepper
  8. 1/4 tsp. salt
  9. 1/2 c. HERDEZ® Brand Salsa Verde
  10. 12-16 corn tortillas
Instructions
  1. In a large bowl combine the chicken, seasonings, spices and salsa verde. Place a heaping spoonful of meat onto a tortilla. Roll the tortilla and use a toothpick to hold it closed.
  2. Fill a large pot with enough oil so that it's 2" deep. Heat the oil to 375°.
  3. Using tongs, carefully place one of the rolled flautas into the oil. Continue to hold the flauta with the tongs for a minute. Finish frying and then move the flautas to a paper towel lined plate.

The best part of football season is in full swing now! The post season, especially the big game always make for a great time to spend with family and friends. Everyone hangs out, watches a game and of course they all eat! No football party would be complete without fabulous food that’s easy to hold in one hand while rooting for your favorite team. While I was out shopping at Pete’s Fresh Market one day I spotted La Morena Chipotle Sauce on the shelf. I then had the sudden idea to take that chipotle sauce and use it to make some Slow Cooker Pulled Chipotle Chicken Sliders for our Sunday afternoon football watching.

My Hispanic heritage comes from my dad. My mom is Italian so I didn’t learn to cook Mexican dishes until I got older and finally asked my family members to teach me different things. I’ve taken what I’ve learned from them and branched out with Mexican flavors and combined them to create different types of food. To get this meal underway I first had to make the sauce. The sauce is packed full of so much flavor!

Once I got the sauce made I placed the chicken breast and sauce in the slow cooker. Turned it on and let it do its thing.

Once the meat was fork tender I took it out and shredded it. I then added it back into the sauce and served on slider rolls.

Since this was football party food I made sure to have a lot of topping options for my family and some sides to enjoy with the sliders.

Ingredients
  1. 7 oz. can La Morena Chipotle Sauce
  2. 7 oz. can tomato sauce (Spanish style)
  3. 2 tbsp. green chiles
  4. 1/4. c. onion, diced
  5. 3 cloves garlic, minced
  6. 2 tsp. cumin
  7. 2 tbsp. Mexican oregano
  8. 1/2 tsp. pepper
  9. 1/2 tsp. salt
  10. 1 c. water
  11. 3 lbs. boneless, skinless chicken breast
  12. dinner rolls or slider buns
Instructions
  1. In a blender or food processor combine the first ten ingredients and blend.
  2. In a slow cooker add the chicken breast. Pour the sauce over the chicken and cook on low for 3-4 hours or until fork tender. Shred the chicken and then add back into the sauce. Serve on rolls with toppings of choice.

Keto-Friendly Salsa Verde Avocado Chicken Salad

Celebrate Las Posadas this year with this Keto-Friendly Salsa Verde Avocado Chicken Salad.

 

Many nations, races and religions have different ways to celebrate the holiday season. A lesser known holiday in parts of the U.S. is Las Posadas. This is a nine day celebration that is celebrated in Mexico and in parts of Southwestern United States. Las Posadas originated in Spain and the word Posada translates to English to mean hotel or inn. It is a holiday that lasts nine days, from December 16th – 24th and is celebrated by Hispanics of the Catholic and Protestant religions. Family members are chosen to dress up as Joseph and Mary each night. The procession is lead by someone carrying a candle and a house is visited by the procession. Someone answers at the house and they sing a song and let the procession enter. The group then gathers around the nativity to pray. It is done for nine nights to represent the nine months of pregnancy. 

Las Posadas is a lovely holiday that brings religion back to focus into the Christmas season. With so many people only thinking of Santa and gifts it’s so easy to lose sight of what’s important and what the true reason for the season is for Christians. Spending time with family and friends and sharing food is a wonderful way to enjoy the holiday season for nine days. 

Celebrate Las Posadas this year with this Keto-Friendly Salsa Verde Avocado Chicken Salad.

This year to celebrate Las Posadas I wanted to create a meal that I could eat. I have been following a Keto diet since the beginning of November. For those of you that don’t know what a Keto diet is, it’s a low-carb high-fat diet. It’s been shown to drastically help with a number of health issues and has the added benefit of helping people lose weight. 

Celebrate Las Posadas this year with this Keto-Friendly Salsa Verde Avocado Chicken Salad.

I used HERDEZ® Salsa Verde for my inspiration for an easy Las Posadas recipe. I then bought the rest of my ingredients and made this Keto-Friendly Salsa Verde Avocado Chicken Salad. I used the HERDEZ® Salsa Verde to create both a marinade for the chicken and a dressing for the salad.

For the salsa verde marinade
  1. 1/2 c. HERDEZ Salsa Verde
  2. 2 tbsp. olive oil
  3. 1/2 tsp. pepper
For the chicken
  1. 1 c. salsa verde marinade
  2. 4 boneless, skinless chicken breasts
For the salsa verde avocado dressing
  1. 1 1/2 c. HERDEZ Salsa Verde
  2. 2 tbsp. olive oil
  3. 1 avocado, peeled and cubed
  4. 1/2 tsp. pepper
For each salad
  1. 1 1/2 c. spring mix lettuce
  2. 1 c. baby leaf spinach
  3. 6 grape tomatoes
  4. 1/4 c. shredded Mexican cheese
  5. 1 boneless, skinless salsa verde chicken breast, grilled and sliced
  6. 1/4 - 1/2 c. salsa verde avocado dressing
Instructions
  1. In a gallon sized zip top baggie add all of the marinade ingredients. Seal the bag and mix together. Add the chicken to the marinade in the zip top baggie. Seal the baggie and shake to coat. Place in the refrigerator and let chill for at least 30 minutes.
  2. Grill the chicken on a grill or grill pan until cooked through completely. Remove the chicken and place on a plate and cover with foil. Let sit 5-10 minutes. Slice the chicken into strips.
  3. In a blender or food processor combine all of the ingredients for the dressing. Pulse a few times until the avocado is no longer in large pieces. Do not over blend or it will become to liquidy.
  4. Add the salad ingredients (vegetables and cheese) to a bowl or plate. Top with a sliced chicken breast and then drizzle the salsa verde avocado dressing over it.

Holiday season is finally upon us and that means it’s time to figure out everyone you need gifts and hope that your list won’t break the bank. One way to do that is to make some of the gifts you give. It not only saves money but also lends a personal touch and thoughtfulness to the gift  itself. I personally love to make food gift baskets for friends and family. It’s a great way to share my favorite foods like Don Victor Honey and a new recipe that they may never have tried before. This year I am on a bit of a honey kick. I have always shied away from it before but I’m finally embracing it and all the amazing things you can do with it. Not only is it tasty it’s also a hidden gem in your beauty routine too. My favorite brand that I found at Walmart in the Hispanic food aisle is Don Victor Honey. I love that it’s a raw, filtered honey that is not heated or processed in any other way. I’m also fascinated by the fact that Don Victor Honey contains part of the honeycomb in every jar.

Mexican Honey Puffs (Sopapillas) Gift Basket

1 jar of Sopapilla mix

1 jar of Don Victor Honey

1 container of cinnamon sugar

Sopapillas (Mexican Honey Puffs) recipe card printed out on colorful card stock paper

Large mixing bowl

Napkin or dish towel

Shredded tissue paper

Kitchen tools

Cellophane or shrink-wrap

Ribbon or bow

Instructions

  1. Inside the large mixing bowl place the opened towel or napkin and arrange it to your liking so it hangs over the sides of the bowl.
  2. On top of the cloth place the shredded tissue paper. 
  3. Arrange the kitchen tools to your liking along the back and sides of the bowl.
  4. Add the containers of mix, cinnamon sugar and Don Victor Honey and arrange until positioned nicely.
  5. Add the recipe card to the front so it is clearly visible.
  6. wrap the “basket” in cellophane or shrink-wrap and decorate with a ribbon or bow.

I love celebrating Mother’s Day! As a child I used to go to the florist a block down and buy my mom some flowers I picked out and bought with my money. My paternal grandma was Mexican, my paternal great-grandma was Creole and my maternal grandma was Irish who married a Sicilian man and learned to cook Italian for him. We would spend holidays when I was growing up loading up in the car and driving into the city to see my paternal grandma and great-grandma. They would always have food ready and we’d eat tamales or molé and then head upstairs and have some Creole food. We’d follow that up with a drive back towards our house and to my maternal grandma’s house. She’d make the best lasagna with homemade gravy and sfinghis with us kids for dessert. Ingredients:

1 Pkg, Barilla Spaghetti

1 Tbsp, Extra virgin olive oil

1 Lb. Ground Beef

½ Can, Chili Chipotle

1 Can (28oz) Crushed Tomatoes

Salt and pepper to taste

½ Cup, diced Poblano (optional)

½ Cup, cotija cheese

Directions:

Bring a large pot of water to a boil, meanwhile sauté beef in olive oil for 4-5 minutes or until browned and crumbled.

Add the chipotle and poblano sauté for 1 minute. (I puree them in the food processor.)

Add the crushed tomatoes, 1 cup of water and season with salt and pepper; simmer for 3-4 minutes.

Cook the pasta according to the package directions, drain and toss with the hot sauce, top with the cheese before serving.

My family always does a big party for the big game and this year one of the foods i ma bringing is going to be this slow cooker barbacoa. Ingredients
  1. 3 lbs. chuck roast or beef roast of choice trimmed of fat, cut into 5-6 pieces
  2. 4 cloves garlic, minced
  3. 1/2 c. Spanish onion, diced
  4. 4 tsp. cumin
  5. 2 tsp. Mexican oregano
  6. 1 tsp. salt
  7. 1 tsp. black pepper
  8. 1/4 tsp. ground cloves
  9. 1 tbsp. vegetable, canola or olive oil
  10. 3 tbsp. apple cider vinegar
  11. 3 tbsp. lime juice
  12. 1 7oz. can of chipotle chiles in adobo sauce
  13. 1 c. chicken broth
  14. 3 bay leaves
Instructions
  1. Place the trimmed and cut up beef into your slow cooker.
  2. In a blender or food processor pulse the garlic, onion, cumin, oregano, salt, pepper, cloves, oil, apple cider vinegar, lime juice and chipotle chiles in adobo sauce until fairly smooth. Pour the pureed mixture over the beef in the slow cooker. Pour in the broth and add the bay leaves. Stir to combine everything and to make sure all of the beef is coated. Cook on low for 6-8 hours or on high for 3-4 hours.
  3. Once the ,eat is done cooking shred it with two forks or using your stand mixer. Return the meat to the sauce in the slow cooker and turn the slow cooker to the keep warm or warm setting. Serve over rice or as tacos.

Growing up in Chicago and being part of a Mexican family meant that I spent time in the Pilsen neighborhood, which is a predominantly Hispanic part of the city. Usually we were there to visit my great-aunt who would always have the best tamales ready to feed us with. While there my parents would hit the Mexican bakery across the street to buy a bunch of Conchas (Mexican sweet bread) for us to take home with us. Us kids, we would beg and plead for my parents to let us stop at one of the little bicycle carts that roamed the neighborhood selling everything from tamales, to paletas (Mexican popsicles), to elotes (Mexican corn on the cob). Since my auntie would fill us up with tamales we would usually end up with paletas if I got to pick or elotes if my sister did. My brother being younger just had no say.

Now though, I am older and I can make my own tamales and my auntie has moved to a different neighborhood so I rarely head into the Pilsen neighborhood anymore but when I do I still see the carts there and it reminds me of my childhood. Same thing happens for my sister but with her it’s funny because she loves Elotes so much that I have seen her head there while pregnant just to find a cart and buy some because a craving struck her. It has happened with every pregnancy I think and since she is pregnant right now I decided to make her some Mexican corn but with a twist. I made it into a Mexican corn salad and let me tell you it was so ridiculously good and one of the favorite foods served at our family Memorial Day BBQ. Now, if you have never had elotes then good God, it is a must try!

Ingredients
  1. 1 tbsp. + 7 tbsp. salted butter, melted
  2. 24 oz. frozen sweet corn
  3. 1/2 red bell pepper, diced
  4. 1 carrot, diced
  5. 1/3 c. mayonnaise
  6. 1 tbsp. chopped cilantro
  7. 1/4 c. Cotija cheese
  8. juice of half a lime
  9. 1 tsp. paprika
Instructions
  1. In a large frying pan melt 1 tbsp. of butter over medium-high heat and then toss in the corn, bell pepper and carrots. Make sure to get it into an even layer. Let it cook until the corn is cooked through and the other veggies are softened a bit. Then give it a stir and flatten again. Now cook until it some of it starts to brown a bit. Remove pan from heat then and pour the veggies into a serving bowl. Pour the 7 tbsp. of melted butter over the veggies and stir. Add the mayonnaise and stir until all of the veggies are evenly coated. Stir in half the cheese, the cilantro and the lime juice. Top with the remaining cheese and sprinkle with the paprika.
