Holidays with my family can be a little loud. Often times, a little crazy too with so many mouths to feed. Mostly though, they are filled with love, family, good times and great food! With meals needed for everything from breakfast, to lunch, dinner, hors d’oeuvres and dessert, food is a holiday memory maker throughout. This year I’m adding to my great food items with an appetizer that is perfect for everyone from the toddlers to grandma and grandpa. I’ve been working on holiday recipes with a family favorite, Wright® Brand Bacon. I can use it for multiple meals, multiple times to bring joy during the holidays. One way I’m doing that is with Wright® Brand Bacon Cheeseburger Totcho Skewers that I paired with Bacon Ketchup Dipping Sauce. These were selected by my kiddos and hubby as the musthave appetizer this year.

Every year I like adding some new foods to my holiday food/party repertoire. It can be a challenge at times. Coming up with foods that everyone will eat. I have six kids that range in age from 8-24 and two of them as you all know, are on the Autism Spectrum. That means sensory issues often play into food options when planning meals. Add in that my sister and brother-in-law have five too and kid friendly is a must when planning out foods for our holiday gatherings. Now, while I do want the kids to like the food I also want it to be something us adults will crave. As we all know, kids love bacon, cheese, burgers, potato tots and ketchup. Wright® Bacon Cheeseburger Totchos were a no brainer for everyone. Placing them on skewers to make them easier for little hands to manage? Brilliant!

Once I had the idea for this recipe I knew I had to run with it immediately! I headed out to my local Meijer Supermarket. We got a Meijer store by me (FINALLY!) almost two years ago. It has become my go to store for groceries. I’m a coupon fan so I love pairing sales, coupons and mPerk offers to save each time I go. Once in the store, I headed to the meat department and picked up Wright® Brand Bacon. It’s a favorite of mine because it is hand-trimmed, hand-selected, naturally smoked and tastes amazing!

One of the great things about this recipe is that most of the components can be prepped in advance. Which, is a must for big holiday gatherings or parties. The bacon can be cooked and chopped up a day or two early. The ground beef can easily be browned up earlier in the week. Onions will be just fine diced up and stored in a baggie in the refrigerator or freezer until the are ready to use. You can even go ahead and make the Bacon Ketchup Dipping Sauce the day before and just store it in an airtight container.

This recipe is a great way to keep little hands busy. This is definitely a kid-friendly appetizer not only to eat but also to make. During the holidays there is so much kitchen time that little ones often want to be included and feel like they are contributing too. For the Bacon Cheeseburger Totcho Skewers
  1. 1 32 oz. Package of Potato Tots, cooked per instructions
  2. 12 Slices of Wright Brand Bacon, cooked and chopped up
  3. 1/2 lb. Ground Beef, browned and drained
  4. 2 c. Cheddar Cheese, shredded
  5. 1/2 of a Red Onion, diced
  6. Mini wooden skewers or long wooden toothpicks
For the Bacon Ketchup Dipping Sauce
  1. 1 c. Tomato Ketchup
  2. 2 slices of Wright Brand Bacon, cooked and finely diced
  3. 1/2 tsp. Onion Powder
  4. 1/4 tsp. Garlic Powder
For the Bacon Cheeseburger Totcho Skewers
  1. Preheat broiler in oven or toaster oven.
  2. Place two potato tots onto each mini skewer or wooden toothpick.
  3. Place the skewers onto a foil lined baking sheet.
  4. Top the potato tots with 1/3 of the shredded cheddar cheese.
  5. Place the pan under the broiler for 2-3 minutes to get the cheese melting.
  6. Remove the pan from the broiler.
  7. Top the potato tots and melted cheese with the ground beef, bacon and the rest of the cheese.
  8. Place the pan back under the broiler for a few more minutes or until the cheese is melted.
For the Bacon Ketchup Dipping Sauce
  1. In a bowl stir together the ketchup, bacon, onion powder and garlic powder.
  2. Refrigerate until ready to use.
Notes
  1. Be sure to keep an eye while the pan is under the broiler. Broilers can differ greatly in how close the pan is to the heat. Things can go from good to bad quickly.

My paternal grandma was Mexican and I lived for holidays as a kid because that meant we got to eat tamales, chicken mole and whatever other food creations she made for the entire family. She didn’t do this all the time because you see my dad was one of twelve children. Now add-on grandchildren and great-grandchildren and the numbers were staggering. This truly is one of the memories I love most from each year growing up. The problem I had though happened when my grandma passed away and I realized I had never asked her to teach me how to make everything. It broke my heart thinking that I had missed that connection to her. Luckily for me though her sister, my great-aunt known to all of us as Auntie was willing to teach those of us that wanted to learn. She taught us how to cook meats, make tamales, how to make homemade tortillas and I can never thank her enough for it. These last few years though I have enjoyed experimenting with Mexican ingredients to incorporate them into more meals for my family. One such recipe is my Zesty Chicken and Refried Bean Tortas that I make with La Morena products.

What’s a torta you ask? The word torta is a Spanish, Italian and Portuguese word that has many culinary meanings. In Mexico, tortas are a type of sandwich that come in many forms. For my version I make a zesty paste marinade and coat chicken with it and then grill it up. I then garnish the torta with La Morena Refried Beans and other toppings. This is a particular favorite with my family and truly makes a great dinner or is perfect for watching your favorite sports team with some guests. You can set up a torta bar and let them all top their tortas any way they like.

To get all the supplies I needed to make this dish I headed to my local Pete’s Fresh Market and found everything I would need including my La Morena Refried Beans and Chipotle Peppers in Adobo Sauce.

Ingredients
  1. 7oz. can La Morena Chipotle Peppers in Adobo Sauce
  2. 1/2 of a 4oz. can fire roasted green chiles
  3. 1/4 of a large Spanish Onion, diced
  4. 4 cloves of garlic
  5. 2 tsp. cumin
  6. 1 tbsp. Mexican Oregano
  7. 1/2 tsp. pepper
  8. 1/4 tsp. salt
  9. 1/4 c. vegetable oil
Instructions
  1. Remove the chipotle peppers from the adobo sauceand place the peppers in a bowl. Press the peppers to remove as much of the sauce as possible. Discard or save the peppers for another recipe.
  2. In the bowl of a food processor or in a blender pulse together the adobo sauce, green chiles, onion, garlic and all of the dry seasonings. With the blender or food processor running slowly pour in the oil. Mix just until the oil is incorporated. This will be a thick marinade.
  3. Marinate 2-3 lbs. of chicken with 1/2 cup of the marinade. The remainder of the marinade can be stored in a baggie and frozen for later use.
Notes
  1. This is spicy and you are working with peppers. Be sure to wear gloves to protect your skin and avoid touching your face and eyes.

Ingredients
  1. 2-3 lbs. boneless, skinless chicken breast
  2. 1/2 c. Zesty, Mexican Chicken Marinade
  3. 4-6 Telera or Bolillo rolls
  4. La Morena Refried Beans
  5. Cilantro
  6. Spanish onion, diced
  7. Queso Fresco
Instructions
  1. In a large plastic baggie place the chicken and cover with the marinade. Seal the bag and be sure that all of the chicken is covered with the marinade. Place in the refrigerator for at least an hour.
  2. Preheat the grill or a grill pan. If using a grill pan spray with some olive oil. Cook the chicken until cooked completely through. Times will vary depending on the size of the pieces. While the chicken is cooking heat the refried beans. Dice the cooked chicken into cubes.
  3. Slice the rolls open and spread on some of the refried beans. Next add on your chicken and then top with cilantro, onion and queso fresco.

This Monday is Cinco de Mayo and I was thinking about it today when I realized that I have never, ever posted my go-to 5 minute salsa recipe on here before. I do not know how I have managed to overlook something like that but apparently my memory is not what it used to be because I know I meant to do this at least two other times now. Luckily though this is easily remedied.

This salsa recipe is so easy to do that anyone can make it. Literally, this could easily be the first recipe someone ever does on their own and it will give them such kitchen confidence and since it takes only five minutes you will want to make it all of the time. My favorite snack is this salsa with some really good and crunchy tortilla chips. It is my absolute weakness in the food world and my biggest comfort food. My oldest son and I have sat and had many a chat over a bowl of this salsa or munched on it while we are waiting for our tamales to steam because yeah, they go hand in hand for us.

Ingredients
  1. 1/3 c. Spanish onion, chopped
  2. 1 14.5 oz. can of diced tomatoes
  3. 1 4 oz. can of fire roasted jalapenos (I use La Victoria brand)
  4. 1/2 tsp. salt
  5. 1 tbsp. vinegar
  6. 1/4 tsp. cumin
Instructions
  1. Add all of the ingredients to the blender or food processor except for the jalapenos. For the jalapeno, using a measuring spoon measure 1 tbsp. for mild salsa, 2-3 for medium salsa or 3+ tbsp for hot salsa. These are level tablespoons, not rounded. If you are unsure start with one and add more until you reach the desired level of heat. Pulse all of the ingredients for 20-30 seconds or until mixed.
  2. Refrigerate until ready to use and be sure to refrigerate any leftovers.
Notes
  1. Spanish onions are a sweeter and lighter in flavor than a yellow onion. If you are unable to find a Spanish onion at your market then you can substitute yellow onion.

We have now kicked off Cinco de Mayo but you will definitely need more food than just some chips and salsa. Some meats, a side dish and desserts are definitely in order to celebrate Mexican heritage and pride! Pair all of this with some Mexican beer, tequila and/or margaritas and this is sure to be one fun-filled meal.
