I always think that during the summer I’m going to have so much more time to make spectacular dinners. It always fails to happen though. I sometimes think that it’s actually worse than during the school year. Since I work from home you think it’d be a snap but we are always doing something during the day. Whether it’s hanging at the pool, beach, park, or some other fun place with the kids trying to burn off some of their energy I’m always worn out when we’re done. That means dinner is the last thing I want to have to face. Luckily for me, I can hit one of the two Jewel-Osco stores in town and grab a chicken signature meal deal with a Coca-Cola™ product from the deli. Even better, you can currently complete the meal with a 64 oz. Gold Peak® Tea. Ingredients
  1. 12 ct. package of dinner rolls
  2. 2 c. chicken, shredded
  3. 1 c. mozzarella, shredded
  4. 1 c. marinara sauce
  5. 1 tsp. fresh parsley, chopped
  6. 1 1/2 tsp. garlic powder
  7. 1/2 tbsp. olive oil
  8. 1/4 c. butter, melted
Instructions
  1. Preheat oven or toaster oven to 350°.
  2. Slice the dinner rolls in half and place into a 9"x13" pan.
  3. Top the bottom the rolls with the shredded chicken, marinara sauce and shredded mozzarella cheese.
  4. Place the top of the rolls back on.
  5. Whisk together the olive oil, melted butter, parsley and garlic powder.
  6. Pour or brush the butter mixture over the top of the rolls in the pan.
  7. Cover the pan with foil and let sit for ten minutes.
  8. Place the pan in the preheated oven and bake for ten minutes or until the cheese is melted.

The teams are getting widdled down and the big game is fast approaching. It’s time to think about what you’ll be serving to wow your favorite football fans during halftime. For me, I am a fan of dips, finger foods and small plate options. It makes it so much easier to work with that while yelling at the TV. (Sorry, crazy, hardcore fan here.) One of my favorite go to dips is Chili Cheese Dip. It’s easy to put together and make but it’s filling enough to feel like you are eating more than just a dip.

In the past I have used <shudder> canned chili to make this dip but now that Progresso has a a great line of chili products available I have switched. I love that the chili is chunky with quality meats, beans and vegetables.

Ingredients
  1. 1 8 oz. pkg. cream cheese, softened
  2. 1/2 c. salsa, thick and chunky
  3. 1 1/2 c. Progresso Chili
  4. 1 c. cheddar cheese, shredded
  5. 2 green onions, diced
  6. 1 Roma tomato, diced
  7. 1/4 c. cilantro, chopped
Instructions
  1. Preheat oven to 325°.
  2. In a pie tin or cake pan spread the softened cream cheese to cover the bottom. Then spread the salsa over the cream cheese and follow that with the chili. Next, add the cheddar cheese over the top. Bake in the oven for 20 minutes. Top the cooked dip with the green onion, tomato and cilantro and then serve with tortilla chips.

I love a good dip! My husband would say he does too and that’s why he married me… lol. I however mean the edible kind and not the personality. A good dip can bring in the crowds at the start of the party and get them talking. Well, at can at my parties because the people I tend to hangout with are food junkies like me. There are all kinds of dips; fruit dips, chip dips, savory and sweet. This morning I woke up on a mission to make a sweet dip that would be a party starter. I wanted a peanut butter cup dip!

What’s peanut butter cup dip you ask? Why it’s a sweet, tangy take on a classic candy that’s been made dipable! What’s better is that it takes only a few minutes to throw together but will leave your guests asking for the recipe. Yup, it’s that good!

Ingredients
  1. 1 8 oz. package of Neufchatel cheese
  2. 1 7 oz. jar of marshmallow creme
  3. 1 8 oz. container whipped topping
  4. 1 13 oz. jar of Reese's Spreads Peanut Butter Chocolate
  5. 1 1.5 oz. package Reese's Peanut Butter Cups, chopped
Instructions
  1. In a large bowl mix together the Neufchatel cheese, marshmallow creme, whipped topping and peanut butter chocolate spread until combined. Place in serving dish and top with chopped up peanut butter cups.
  2. Chill until ready to serve.

During the cold months of winter it is always nice to have some slow cooker staples but when those recipes can easily be turned into a meal for a crowd you can’t go wrong. With the Superbowl right around the corner this Slow Cooker Barbacoa recipe is perfectly easy on you to make but perfect for feeding a hungry crowd. With just the right amount of heat it will definitely fire up your guests to root for their favorite team. Slow Cooker Barbacoa turns any party into a fiesta!

My family always does a big party for the big game and this year one of the foods i ma bringing is going to be this slow cooker barbacoa. I plan on doing a taco bar and using a couple of my other favorite Mexican meat recipes too. This is a great idea for a party. It will give your guests variety and take your food from the ho-hum of burgers, hot dogs and pizza to the fab fiesta that you want your party to be.

Ingredients
  1. 3 lbs. chuck roast or beef roast of choice trimmed of fat, cut into 5-6 pieces
  2. 4 cloves garlic, minced
  3. 1/2 c. Spanish onion, diced
  4. 4 tsp. cumin
  5. 2 tsp. Mexican oregano
  6. 1 tsp. salt
  7. 1 tsp. black pepper
  8. 1/4 tsp. ground cloves
  9. 1 tbsp. vegetable, canola or olive oil
  10. 3 tbsp. apple cider vinegar
  11. 3 tbsp. lime juice
  12. 1 7oz. can of chipotle chiles in adobo sauce
  13. 1 c. chicken broth
  14. 3 bay leaves
Instructions
  1. Place the trimmed and cut up beef into your slow cooker.
  2. In a blender or food processor pulse the garlic, onion, cumin, oregano, salt, pepper, cloves, oil, apple cider vinegar, lime juice and chipotle chiles in adobo sauce until fairly smooth. Pour the pureed mixture over the beef in the slow cooker. Pour in the broth and add the bay leaves. Stir to combine everything and to make sure all of the beef is coated. Cook on low for 6-8 hours or on high for 3-4 hours.
  3. Once the ,eat is done cooking shred it with two forks or using your stand mixer. Return the meat to the sauce in the slow cooker and turn the slow cooker to the keep warm or warm setting. Serve over rice or as tacos.
