There’s a reason the line “Let them eat cake” is so famous! It’s because cake is something that people around the world can agree is a delicious treat that comes in an enormous variety of flavor combinations! Wayfair asked some us Wayfair Homemakers to take on cake in the first ever #WayfairCakeOff and the only requirement for us was that we had to use fruit in it. With all of the warm weather fruit selections are at their peak right now in the grocery stores so this was definitely a fun and easy recipe to work on. For my cake I decided to create a Strawberry Cream Cheese Frosting topped Lemon Ricotta Cake .

With the flavors of this cake making me think of sunshine, summer days and picnics in Tuscan countryside, I decided to keep the decorating to a sweet and simple for a more rustic look and only frosted the tops of each layer.

Even though the cake may have been decorated simply there was definitely nothing simple about how delicious this cake is! This Strawberry Cream Cheese Frosting Topped Lemon Ricotta Cake will wow whoever you serve it this summer with its summer fruit flavors. While the stripe of sweetened ricotta cheese will leave the cake moist and with a uniquely, delicious flavor!

For the cake
  1. 1 15.25 oz. box yellow cake mix
  2. 1/2 c. butter, very soft
  3. 3 eggs
  4. 1 c. water
  5. 1 tbsp. lemon juice
  6. zest of one lemon
  7. 1 15 oz. container of ricotta cheese
  8. 1 tsp. vanilla extract
  9. 3/4 c. sugar
For the frosting
  1. 1/2 c. butter, softened
  2. 8 oz. cream cheese, softened
  3. 5 c. confectioner's sugar
  4. 3/4 c. finely diced strawberries
  5. 1-3 tbsp. heavy whipping cream
For the cake
  1. Preheat oven to 350° and spray two 9" round cake pans with baking spray.
  2. In a large mixing bowl mix the cake mix, butter, eggs, water, lemon juice and lemon zest on low speed until combined. Increase speed and blend on medium for 2 minutes.
  3. Divide the cake batter evenly between the two cake pans. Making sure to make the batter as level as possible.
  4. In another mixing bowl combine the ricotta cheese, vanilla and sugar and mix on low until well combined.
  5. Drop spoonfuls of the ricotta mixture on the cake batter in both pans. Then spread the ricotta mixture over the top in a circle leaving about 1/2" of space all the way around.
  6. Bake for 30-35 minutes or until done.
  7. Cool completely and the frost and serve.
For the frosting
  1. In the bowl of a stand mixer fitted with a paddle attachment cream together the butter and cream cheese on medium speed until light and fluffy.
  2. In four batches add some of the confectioner's sugar and strawberries each time. Mixing each time on low until all of the sugar has been combined.
  3. Add 1 tbsp. of the cream and mix on high for 3-5 minutes. Add more cream if it is to think. Once the desired consistency has been reached use it to frost the cakes.
  4. Store in the refrigerator.

It’s a big week in our house! We are very excitedly gearing up for the October 2nd Blu-Ray/DVD release of Avengers: Age of UltronThat’s right, we are a family that lets our Marvel comics geek flag fly, and fly high. Luckily, I was born to a father who knew how to raise a child right. He routinely took us to the comic book store and shared his collection with us. Now I get to share the same thing with my kids.

In honor of the upcoming October 2nd Blu-Ray/DVD release of Avengers: Age of Ultron I decided that we needed to get some movie snacks in place and costumes to wear that were worthy of the greatness of the movie. Enter my edible Thor hammers and the Vision’s Protein Power Smoothie. Good for you snacks that are better than candy any day. 

So to make all of this happen I headed to my local Walmart store and stocked up on MARVEL Avengers string cheese, MARVEL Avengers grapes and MARVEL chewy granola bars in the grocery section.

Then I took a walk to the other side of the store and snagged the kids some fun Halloween costumes to wear on family movie night this weekend.That’s right, be jealous because I will be watching my Blu-ray copy of Avengers: Age of Ultron with not only the Hulk but Thor  and Captain America too.

If any of you have seen the Avengers: Age of Ultron movie at the theaters then you know that Vision can do something that nobody but Thor can do. That’s why I decided to pair Thor’s hammer in snack form with a power packed protein smoothie that kids will love!

To make the hammers I simply paired Marvel Avengers chewy granola bars with MARVEL Avengers string cheese. Placing a toothpick through the middle, lengthwise of the string cheese and then through the narrow end of a granola bar half is all you need to make these everyday snacks into something fun.

The smoothies are packed with flavors kids love with an added bump of protein to keep their energy going so they can be superheroes too.

Ingredients
  1. 1/4 c. Marvel Avengers grapes
  2. 1 2.25 oz. strawberry yogurt tube
  3. 1 c. frozen organic strawberries, defrosted
  4. 1/2 c. fresh squeezed orange juice
  5. 1 tbsp. pea protein powder, tropical flavored
  6. 1 c. ice cubes
  7. 5 Marvel Avengers grapes, for garnish
Instructions
  1. In a blender or smoothie maker combine all of the ingredients but the grapes for garnish. Set those to the side. Blend drink until smooth. Pour into a glass.
  2. Using a skewer put a whole through the five grapes for garnish. Then remove the skewer and then place the grapes onto a straw. Insert into a drink and serve.

Strawberries have always been a summer staple in my house. The kids all love them and at the peak of strawberry season in the summer, you can find numerous containers in my refrigerator filled with them and kids snacking on them. I prefer my strawberries to be organic. Now, I’m not one of those people who has to have only organic but with strawberries the taste difference really does come through with the organic ones. I used some to make my favorite strawberry cupcakes and I like to think of them as a sweet farewell to summer or a reminder of summer in the cold months.

These cupcakes start off with a simple one bowl yellow cake but the addition of the strawberries really makes this cake recipe something spectacular.  I used my yellow cake mix recipe for the base and that can be found here

What makes these cupcakes out of this world is the light, fluffy, utterly decadent frosting that tops them. It is a Swiss Meringue frosting so the base of it is cooked sugar and egg whites that are whipped until they form, glossy, stiff peaks. Then the strawberries and butter give the cupcakes their flavor and richness.

For the Strawberry Cake
  1. 2 c. self-rising flour
  2. 1 1/4 c. sugar
  3. 1/2 c. butter, softened
  4. 1 c. milk
  5. 1 tsp. vanilla
  6. 2 lrg. eggs
  7. 1 1/2 c. strawberries, finely chopped
For the Strawberry Swiss Meringue Buttercream
  1. 1 c. strawberries, pureed (may add 1-2 tsp. water if needed to puree)
  2. 4 lg, egg whites
  3. 1 1/4 c. sugar
  4. 1 1/2 c. butter, room temperature and cut into 1 tbsp. pieces
For the Strawberry Cake
  1. Preheat oven to 350° and line cupcake pan with liners or grease and flour or spray with baking spray cake pan(s).
  2. In the bowl of a stand mixer fitted with the paddle attachment sift together the self-rising flour and sugar. Add the butter, milk and vanilla. Beat on medium-low speed for 2-3 minutes. Scrape down the bowl and add the eggs. Once incorporated, beat at medium speed for 2-3 minutes. Stir in the chopped strawberries.
  3. Bake for 20-25 minutes for cupcakes, 30-40 minutes 9" round cake pans. Cool for ten minutes in pan and then remove and cool on rack the rest of the way and frost.
For the Strawberry Swiss Meringue Buttercream
  1. Place your metal or glass mixing bowl into the freezer for it to get good and cold. Chill it for at least half an hour.
  2. Puree the strawberries and set aside. You do not need to strain the puree but you can press it through a fine sieve if you want to do so.
  3. Using a double boiler or a pot that can hold your bowl bring some water to a simmer. Combine the egg whites and sugar together using a whisk to combine in a heat safe bowl or top of double boiler. Then place the bowl or double boiler top with the egg mixture on top of the pot. Heat the mixture, whisking frequently. Place a thermometer in the mixture and continue to whisk and heat until the mixture reached a temperature of 160°-165° F.
  4. Remove the chilled mixing bowl from the freezer and transfer the egg mixture to the cold bowl. Fit your stand mixer with the whisk attachment and whisk at high speed until stiff peaks form. (It's usually about 8-12 minutes depending on how cold the bowl is when starting.) Lower the speed to medium an add 2 tbsp. of the butter at a time. Be sure to mix completely before adding the next batch of butter. The frosting may thin out. Do not worry about this. Just continue beating the mixture and increase the speed to medium-high. It will thicken up. Finally, you will blend in the strawberry puree once the frosting has thickened up. Be sure to scrape down the sides of the bowl and make sure that all of the butter and puree is fully incorporated.
  5. Place the frosting into a pastry bag fitted with your favorite tip and then pipe onto the cupcakes. Garnish with a strawberry.
Notes
  1. You will get better flavor using organic strawberries.

I bet some of you didn’t know that Keurigs aren’t just for a nice hot cup of coffee in the morning anymore did you? I for one love my Keurig but use it for all sorts of different drinks than what you would normally think to use your Keurig and favorite K-Cups to make. So let me share with you what the best K-Cup flavors for making iced tea and juice slushies are and why these were perfect for me and my family this weekend.

A couple of weeks ago while out shopping I came across a metal swing set that had been marked down to only $60 which was a steal! As soon as I saw it I knew I needed to buy it for my 5, 7 and 10 year olds. They love going to the park and I take them a lot but there are some days where I just can’t take them because I need to get stuff done at the house or I need to work. I figured this would be a great way that they could still play and get some fresh air but I could stick close to home and do things here. Now, as I said this was a couple of weeks ago. The big, giant box was still sitting under my balcony just waiting to be opened up. I came home on Saturday from picking up a piece of furniture I bought and spotted the box and in that moment I knew I was not going to wait for any of the men folk here to get around to putting it together and I was not going to listen the little ones nag about when the assembly was going to happen. Nope, I was going to do this! I was all I am woman hear me roar in that moment!

The swing set that started it all.

So I quietly snuck out of the house while the hubs and the kids were preoccupied and toolbox in hand set about putting it together. It started out well enough, that is until I realized that I was going to need another set of hands to help me get the side legs attached but I was being bull-headed and decided to ask one of the kids to help. Needless to say that was the trigger that started what would become one of the longest most headache inducing days of my life!

All of the kids that were home came outside to see what was happening and all promptly decided they wanted to “help”. I should have stopped at that moment but I didn’t. Instead I forged on only to have my daughter come running through and knock down what we were trying to assemble and guess who stood under everything? Yup, that’s right. It was me. After some poor language choices, some ice and bandages the hubs came out and helped me get the legs on. I sent him back in though because I wanted to finish this alone. That didn’t happen though. The kids came out more and lost several screws and bolts necessitating a run to the hardware store. I did manage to get it done though.

When I was finished I was dirty, sweaty, more than likely smelly and I was hot and thirsty with a headache to boot. I decided I needed a cold drink and the kids wanted one too. I decided to make some Lemonberry Slushies for the kids and a Snapple Lemon Tea Slushie for me. They were perfect! Nice, cold and refreshing and so needed after all those hours of hard work.

I love my Keurig! I have what I refer to as the baby model but it serves its purpose and sadly I don’t have the room for a big one. With all of those options your Keurig will become a very handy beverage tool to have in your arsenal.

If you have never used a Keurig for the Brew Over Ice K-Cups then I would recommend watching this “how-to” video to make the best possible drink you can. For best brewing though all Brew Over Ice products should be brewed at the 6 oz. (small) or 8 oz. (medium) settings.

  4. Lemon slices
Instructions
  1. Brew the Snapple Lemon Iced Tea per the instructions on the package using 6 oz. of water. Pour the brewed tea into a blender and add 1 c. of ice. Blend until all ice is crushed. It will be light in color at first since it will be very foamy and slushie. Pour into a glass and serve with lemon slices ot make it even more lemon flavored. Enjoy nice and cold.

Ingredients
  1. 6 oz. water
  2. 1 Green Mountain Naturals Lemonade K-Cup
  3. 1/3 c. frozen strawberries
  4. ice
  5. lemon slices
Instructions
  1. Brew the Green Mountain Naturals Lemonade K-Cup according to directions using the 6 oz. of water and some ice. Pour 1/3 c. of lemonade into a blender with the strawberries and blend until smooth. Transfer to a glass. Rinse out the blender and then blend the rest of the lemonade and 3/4 c. of ice in the blender until smooth. Pour the frozen lemonade on top of the frozen strawberry lemonade and the two will swirl together. Garnish with a a lemon slice and serve chilled.

Some how June has gotten away from and I can’t believe that next week is already going to be the 4th of July! I mean seriously, where does the time go? It’s like each year of my life flies by faster and faster than the last. Summer school is already ending for my 10-year-old and vacation bible school ended today for my 5 and 7 year olds and I feel like I have done nothing this summer. I really need to get on that because before I know it school will be starting again in August and I’ll have missed the whole thing. Luckily though 4th of July is here and hopefully it will get my butt in gear for a fun, unforgettable summer. We have lots of family activities planned and the hubby is off work almost the whole week since his brother is coming in from Maryland with his fiance and we are of course going to hit the local parade like we do every year. So I have tons of cooking and baking planned for this upcoming week. One of the things I am planning on making is my Red, White & Blue Fruit Dip.

My Red, White & Blue Fruit Dip is a new spin on a classic and it adds additional flavors. This awesome Dip can be paired with fresh fruit, graham crackers or vanilla wafers and will be absolutely perfect for a cookout! Everyone is going to love this stuff so you may want to double the recipe because it makes fruit even better and with the fun, festive colors you can’t go wrong. Although honestly, you can eat this at any old-time of the year not just patriotic holidays and you’ll want to too.

Ingredients
  1. 1 7oz. jar of marshmallow creme, divided into three equal parts
  2. 1 c. whipped topping divided into 3 1/3 c. portions
  3. 3oz. cream cheese
  4. 3oz. strawberry cream cheese
  5. 3oz. blueberry cream cheese
  6. red & blue food coloring
Instructions
  1. In three separate bowls measure out the marshmallow creme and whipped topping. Add one of the flavors of cream cheese to each bowl. Add 2-3 drops of red food coloring to the strawberry cream cheese bowl and 2-3 drops of blue food coloring to the blueberry cream cheese bowl. Mix each bowl with an electric hand mixer until smooth. Spoon into bowl carefully to keep colors separated and refrigerate until ready to use. Serve with fresh fruit, graham crackers or vanilla wafers.

ABC Family's Young & Hungry Food Blogger Challenge

On Sunday, Father’s Day, we received our second challenge in the Young & Hungry Food Bloggers Challenge. We needed to make a video for a recipe inspired by a dad in our lives. I was a little late in getting mine up and entered for voting but that’s because I was on vacation with the two most important dads in my life, my father and my husband. We did a huge family vacation at my parent’s vacation house in Wisconsin Dells with my parents, siblings and our kids. It was nice having everyone together. My dad took all the guys out for drinks to celebrate Father’s Day and that is what gave me the idea for Challenge #2 and I am so happy with the inspiration because it lead me to create this Southern Comfort Cocktail.

On our way home from Wisconsin we stopped at a large strawberry farm and took the kids strawberry picking so I had a huge heap of fresh, sweet and tasty strawberries. I knew these would be perfect to add into my cocktail. I also wanted to make it a bit citrusy so that it gave you the feel of a nice cool refreshing drink on a hot day but with a kick to it. I decided to go with Southern Comfort as the alcohol to the cocktail because my husband is a whiskey fan but my dad drinks only when we all get together so he can be a bit of a light weight. Southern Comfort is perfect since it is a whiskey based liqueur. All in all I love the way it came out. The fruit and juices help to cut the whiskey flavor some but there is enough whiskey for the drink to pack a punch. I also like that you can make this drink by the pitcher to share with your family and friends at your next get together.

  1. Pour all of the ingredients into a pitcher and stir.
  2. Serve in a glass, over ice and garnish with fruit.

In “Young & Hungry,” two worlds collide when Josh (Jonathan Sadowski Sadowski), a wealthy young tech entrepreneur, meets Gabi (Emily Osment), a feisty young food blogger, looking to be his personal chef. Young & Hungry stars Emily Osment (Hannah Montana), Jonathan Sadowski ($#*! My Dad Says), Rex Lee (“Entourage”), Aimee Carrero (“Blue Lagoon: The Awakening”) and Kym Whitley (“Animal Practice”) with Annie Potts (“GCB,” “Designing Women”) as a recurring guest star. The series is executive produced by Eric Tannenbaum and Kim Tannenbaum (“Two and a Half Men”), CBS Television Studios, Relativity Television, Jessica Rhoades (“Sharpay’s Fabulous Adventure”) and Ashley Tisdale (“High School Musical”). Strawberry Creme Pie - Five Ingredients to a Summer Delight - My Sweet Sanity

Strawberry season is now upon us and I couldn’t be happier! It is probably the most favorite fruit in our house and luckily can be frozen for year round consumption. This means you can easily enjoy this tasty little fruit all year round and easily make this Strawberry Creme Pie recipe any time you have a hankering for some summery good sweets but don’t want to spend a ton of time in the kitchen.

Light, creamy and oh so perfect for a warm summer night, this Strawberry Creme Pie is sure to hit the spot and be an absolute crowd pleaser. With only five ingredients and no baking necessary it makes it even better. That’s right, no hot kitchen for you but all the tasty goodness of a dessert that was much harder to make. The other great thing is that this pie can be made well in advance and frozen. Then when you are ready to eat it all you need to do is pop it out of the freezer and let it defrost some and then it’s ready to eat.

Before we get to the recipe I thought I would share some fun strawberry facts with you…

  • Strawberries are the only fruit with their sides on the outside and the seeds themselves are also considered a fruit too.
  • Strawberries are not actually berries but bananas are and strawberries are actually members of the rose family.
  • You should never wash fresh strawberries until ready to use. Washing them actually promotes spoiling.
  • If you aren’t a fan of carrots don’t worry, because strawberries do help your eyes by preventing cataracts and eye degeneration.
  • A handy tip for warm weather: strawberry juice combined with honey rubbed onto the skin can help relieve inflammation and sunburn. After you have rubbed it into the skin thoroughly just rinse it off with warm water and some lemon juice.

Ingredients
  1. 1 Graham Cracker Pie Crust
  2. 1 3.4 oz. Box of Jell-O Strawberry Creme Instant Pudding
  3. 1 3/4 c. Milk
  4. Whipped Topping (regular sized tub)
  5. 1/2 c. Strawberries, chopped and more for garnish
Instructions
  1. Unwrap the pie crust and set it aside.
  2. In a large bowl whisk together the pudding mix and the milk for two minutes. It should be somewhat thick. Place in the refrigerator for five minutes. Fold in shopped strawberries and 1 c. of whipped topping. Spread evenly into the pie crust and freeze for 15-20 minutes. Top with the remaining whipped topping and spread evenly. Add strawberries for garnish.
  3. Refrigerate or freeze until ready to serve.
Notes
  1. I have the most luck finding the Jell-O Strawberry Creme Pudding at Walmart Superstores.

For me, my mommy time-out doesn’t come at night, no sir-e. It would be nice if it did but my kids range in age and some may be up late and my husband is a night owl. Now, I could maybe squeeze in me time while my youngest is at school for two hours but errands sans children usually wins out. No, for me my mommy time-out comes on Saturday or Sunday morning.. The kids and the husband sleep in but I am still up at my regular time so I grab my reading device, my phone for music, make myself breakfast and serve myself a Bigelow Tea Peach Teallini. I get to enjoy my breakfast while sipping my Peach Teallini in peace and quiet, listening to music I like and reading a good book without being interrupted every 5 seconds or eating long after everyone else. Ingredients
  1. Filtered water
  2. Bigelow Tea Perfect Peach Herbal Tea Bags
  3. Organic Peaches
  4. Organic Strawberries
  5. Bottle of Prosecco
Instructions
  1. Bring filtered water to a boil. Pour the water over the tea bag(s) in a large mug, bowl or teapot to steep for several minutes. Remove the tea bag(s) and place the tea in the refrigerator to cool.
  2. Finely chop the peaches and strawberries. Place 1 tbsp. of the fruit into a champagne flute. Pour 1/4 c, of the cooled peach tea over the fruit and then top off with 1/2 c. of Prosecco.
Notes
  1. I used frozen fruit. It works perfectly for cocktails. If you leave it partially frozen it will also keep the drink chilled longer.
